Potato and Corn Soup - Instant Pot Recipe - (4.5/5) image

Number Of Ingredients 10

2 T butter
5 potatoes roughly chopped
1 onion, chopped
2 celery stalks, chopped
2-3 cloves of roasted garlic, chopped
1/4 tsp red pepper flakes
4 cups of chicken broth
salt and cracked pepper to taste
1 cup cream or half and half
1 can cream style corn

Steps:

  • Set the pot to Saute' medium and melt butter. Add the onion and celery stalks and stir until onion begins to soften. Add the stock to deglaze; add garlic, pepper flakes, salt, pepper, and potatoes. Switch on the soup setting for the instant pot and set the time to 15 minutes. Quick release. Remove lid and stir in cream and corn. Heat through on medium saute, stirring so the bottom doesn't burn. Serve.

I made up this recipe when I had none of the ingredients I needed! Your family will love this one, and you'll be able to make something else while this is cooking. Great with breadsticks! Serve alone, with a dollop of sour cream, or some grated cheese and pepper.

6 medium potatoes, peeled and cubed
6 stalks celery, chopped, leaves reserved
1 medium onion, chopped
2 cubes chicken bouillon
2 (15.25 ounce) cans whole kernel corn, drained
¼ cup chopped fresh chives

Steps:

  • In a large pot, place the potatoes, celery and leaves, and onion. Pour in enough water to cover. Bring to a boil. Remove the celery leaves, and stir in the bouillon cubes until dissolved. Mix in the corn. Reduce heat to medium-low, and cook 20 minutes, or until the potatoes are tender.
  • Mix the chives into the pot, and continue cooking 5 minutes before serving.

I just made this up on the fly. It has just a bit of a zing but is not anywhere near painful. Measurements are approximated since I was just making it up as I went. Please feel free to leave feedback. Hope you enjoy!

2 teaspoons olive oil
1 pound bulk hot Italian pork sausage
½ medium onion, diced
1 tablespoon minced garlic
salt and ground black pepper to taste
2 large potatoes, chopped
4 medium sweet peppers, chopped
½ cup finely chopped pepperoncini
2 (10.5 ounce) cans condensed cream of chicken soup
1 (15 ounce) can whole kernel corn, drained
1 (14.5 ounce) can green beans, drained
1 (8 ounce) package chopped kale
2 cups milk
1 pinch chili-lime seasoning (such as Tajin®)
1 cup shredded Mexican cheese blend

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), add oil, and select Saute function. Add sausage to the hot pot; cook and stir until browned and crumbly, 5 to 7 minutes. Add onion, garlic, salt, and pepper and cook until fragrant, about 30 seconds. Cancel Saute function and drain grease.
  • Add potatoes, sweet peppers, onion, and pepperoncini to the pot. Add condensed soup, corn, green beans, and kale, then pour in milk. Season with chili-lime seasoning, salt, and pepper and stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Serve with Mexican cheese sprinkled over top.
