PESTO PORK WITH POLENTA



Pesto Pork With Polenta image

2 cups fresh parsley leaves (about 1 bunch)
2 cups fresh basil leaves (about 1 bunch)
2 1/2 cups coarsely chopped scallions (about 2 bunches)
4 cloves garlic (2 whole, 2 thinly sliced)
2 teaspoons Worcestershire sauce
Finely grated zest of 1 lemon, plus juice of 2 lemons
1/4 cup plus 1 1/2 tablespoons extra-virgin olive oil
1 1/2 pounds pork tenderloin
Kosher salt and freshly ground pepper
1 14-ounce tube prepared polenta, sliced
1 pound baby spinach

Steps:

  • Place a rimmed baking sheet in the lower third of the oven; preheat to 450 degrees F. Make the pesto: Pulse the parsley, basil, scallions, whole garlic, Worcestershire sauce, lemon zest and the juice of 1 lemon in a food processor. With the motor running, add 1/4 cup olive oil. Refrigerate 3/4 cup of the pesto for Risotto with Pesto and Peas. Coat the pork with 1/4 cup of the remaining pesto. Mix the remaining 1/2 cup pesto in a small bowl with 1 tablespoon hot water and the remaining lemon juice; season with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the pork and brown all over, about 4 minutes. Transfer to the hot baking sheet and roast until a thermometer registers 145 degrees F, about 15 minutes. Meanwhile, cook the polenta as the label directs. Heat the remaining 1/2 tablespoon olive oil in the skillet over medium heat. Add the sliced garlic and cook 1 minute. Add the spinach, 3 tablespoons of the pesto mixture and 1/4 cup water; cook, stirring, until wilted, 3 minutes. Slice the pork; serve with the polenta, spinach and remaining pesto mixture. Season with salt and pepper.

1 tablespoon dijon mustard
2 teaspoons balsamic vinegar
1 teaspoon chopped fresh rosemary, plus 1 small sprig
Kosher salt and freshly ground pepper
1 large pork tenderloin (about 11/4 pounds)
2 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/4 teaspoon red pepper flakes
1 bunch broccoli, cut into florets
11/2 cups skim milk
3/4 cup quick-cooking polenta

Steps:

  • Preheat the oven to 375 degrees F. Combine the mustard, vinegar, chopped rosemary and 1/2 teaspoon each salt and pepper in a bowl; brush all over the pork. Heat 1 tablespoon olive oil in a large nonstick ovenproof skillet over medium-high heat. Add the pork and cook until browned on all sides, about 5 minutes. Transfer the skillet to the oven and roast until a thermometer registers 145 degrees F, about 15 minutes. Transfer the pork to a cutting board and let rest.
  • Wipe out the skillet. Add the remaining 1 tablespoon olive oil, the garlic and red pepper flakes; cook over medium heat, 2 minutes. Add the broccoli, 1/4 cup water and 1/4 teaspoon salt. Cover; cook 5 minutes.
  • Bring 3 cups water, the milk, rosemary sprig and 1/4 teaspoon salt to a boil in a saucepan over medium heat; discard the rosemary. Whisk in the polenta and cook, whisking, until thickened, 3 to 5 minutes. Remove from the heat and stir in the parmesan. Slice the pork and serve with the broccoli and polenta.

1/4 pound (1 stick) unsalted butter
1/4 cup olive oil
1 tablespoon minced garlic (3 cloves)
1 teaspoon crushed red pepper flakes
1 teaspoon minced fresh rosemary leaves
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 cups chicken stock, preferably homemade
2 cups half-and-half
2 cups milk
2 cups cornmeal
1/2 cup good grated Parmesan
Flour, olive oil, and butter, for frying

Steps:

  • Heat the butter and olive oil in a large saucepan. Add the garlic, red pepper flakes, rosemary, salt, and pepper and saute for 1 minute. Add the chicken stock, half-and-half, and milk and bring to a boil. Remove from the heat and slowly sprinkle the cornmeal into the hot milk while stirring constantly with a whisk. Cook over low heat, stirring constantly, for a few minutes, until thickened and bubbly. Off the heat, stir in the Parmesan. Pour into a 9 by 13 by 2-inch pan, smooth the top, and refrigerate until firm and cold.
  • Cut the chilled polenta into 12 squares, as you would with brownies. Lift each one out with a spatula and cut diagonally into triangles. Dust each triangle lightly in flour. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large saute pan and cook the triangles in batches over medium heat for 3 to 5 minutes, turning once, until browned on the outside and heated inside. Add more butter and oil, as needed. Serve immediately.

4 tablespoons kosher salt
2 tablespoons brown sugar
3 cloves garlic
1 handful fresh thyme
1 bay leaf
4 chamomile tea bags
One 2-inch bone-in pork chop
2 tablespoons unsalted butter
2 sprigs thyme
Splash lemon juice
Olive oil, for drizzling
Freshly ground black pepper
3 ears corn, kernels cut off
2 cups chicken stock
2 tablespoons polenta
2 tablespoons unsalted butter
4 fat pinches grated Parmesan
1 tablespoon olive oil
2 peaches, unpeeled, cut into large chunks
1 cup chicken stock
2 sprigs fresh rosemary
Juice of 1/2 lemon
Kosher salt
2 tablespoons unsalted butter
6 slices speck
Micro herbs, for garnish (optional)

Steps:

  • For the brine: Add salt, brown sugar, garlic, thyme, bay leaf, tea bags and 2 quarts water to a large saucepot. Bring to a boil, then remove from heat and let cool completely.
  • For the pork: Add pork chop to the brine. Let sit at room temperature for 1 hour or refrigerated for up to 1 day. Pat pork chop completely dry and bring to room temperature.
  • Preheat oven to 400 degrees F.
  • Heat a large cast-iron pan over high heat. Add butter and thyme. Sear pork chop until golden brown, basting with butter, about 7 minutes. Flip over and sear other side, continuing to baste, an additional 5 minutes.
  • Transfer pan to oven and cook until internal temperature reaches 140 degrees F.
  • Remove pork from pan. Allow to rest for at least 5 minutes. Garnish with lemon juice, a drizzle of good olive oil and freshly ground black pepper.
  • For the polenta: Add corn, chicken stock and polenta to a medium saucepan. Bring to a boil, then reduce to a simmer and cook, stirring often, until polenta is no longer mealy, about 10 minutes. Remove from heat and add butter and Parmesan. Stir to combine.
  • For the rosemary peaches: Add olive oil to a medium saucepan over medium heat. Add peaches, chicken stock, rosemary, lemon juice and a good pinch of salt. Saute until softened and liquid has reduced by half, about 15 minutes. Remove from heat and stir in butter.
  • For the speck: Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Spread speck out on the parchment and bake until crispy, about 10 minutes. Allow to cool slightly.
  • Plate pork on top of polenta and spoon some of the peaches on top. Garnish with crispy speck in large shards and micro herbs, if using.

PORK TENDERLOIN WITH POLENTA CAKES

2 pounds button mushrooms
6 cups beef broth (not bouillon) You may use canned consomme or beef broth
2 cups French onion soup (may use canned French Onion or homemade)
1 stick unsalted butter
2 cups red wine
1 tablespoon fresh rosemary (optional)
1 1/2 pounds pork tenderloin
Flour
Salt and pepper to taste
1 tablespoon oil or butter
2 to 3 tablespoons red wine
Pat butter
Fresh Rosemary sprigs (one per guest)
1 package polenta
1 egg beaten
1/2 cup flour
1 tablespoon Parmesan cheese
Salt and pepper to taste
Oil

Steps:

  • Mushrooms: Pick mushrooms that are small and the gills on the underneath side are closed. Gently wash mushrooms and drain. Put all the mushrooms in large Dutch oven and begin cooking on medium heat. Water will be rendered from the mushrooms. If no liquid is rendered from the mushrooms, add 1 cup of broth to begin cooking. When the mushrooms have shriveled, add the broth and the onion soup. Cook slowly for about 2 hours until the mushrooms are darker in color and tender. If more liquid is needed, add water. After 2 hours add the wine and cook 1 hour more. The liquid should be reduced by 2/3 by now. Add the rosemary and butter and keep warm.
  • Pork Tenderloin: Preheat oven to 450 degrees. Flour the tenderloin and shake off excess. Add salt and pepper. In a skillet over medium high heat, heat about 1 tablespoon of oil or a mixture of oil and butter. Saute the tenderloin until seared on all sides. Put in oven in skillet and roast for about 8 to 12 minutes until internal temperature is 170. Remove loin and keep warm. Deglaze the pan with wine, reduce by half and add a pat of butter. Add tenderloin back to pan and keep warm.
  • Polenta Cakes: Wrap polenta in cling wrap and refrigerate until firm. Cut polenta into rounds and dip in egg that has been beaten and dredge in flour mixed with Parmesan cheese, salt and pepper. Fry in oil until golden brown. Drain on paper towels. Make 2 per person.
  • To serve: Place 2 polenta cakes on the plate 1 slightly overlapping the other. Slice tenderloin and allow 5 to 6 slices per person. Add drippings from pork loin to mushrooms. Spoon mushrooms with gravy over meat and polenta. Stand a spring of rosemary in center spearing the meat. If you want a fragrant presentation, you can light the rosemary after if has been slightly dried in the microwave.
  • Green Bean Bundles: Fresh long green beans about a dozen per person 1 red bell pepper, cut into thin strips same shape as green beans Strips bacon flattened and cut in half
  • Make bundle with green beans and bell pepper and wrap with bacon. You can either tie bacon or use a toothpick. Place bundles in glass pie plate with another pie plate on top and microwave on high until beans are crisp tender and bacon done. Remove toothpicks and serve.

12 ounces whole onion or 11 ounces chopped, ready-cut onion (2 1/4 cups)
2 teaspoons olive oil
2 large cloves garlic
4 ounces peeled carrots or 4 ounces sliced, ready-cut carrots (1 cup)
4 ounces assorted wild or plain white mushrooms
8 ounces pork tenderloin
Enough fresh rosemary to yield 1 tablespoon rosemary leaves or 1 teaspoon dried
1 cup dry red wine
2 1/4 cups no-salt-added chicken stock
1/2 cup fine-grain polenta or instant polenta
1 ounce Parmigiano-Reggiano ( 1/3 cup coarsely grated), optional
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Chop whole onion.
  • Heat large nonstick pan until it is very hot; reduce heat to medium-high, and add oil. Saute onion in the oil until it begins to soften.
  • Meanwhile, mince garlic, and add to onion as it cooks.
  • Slice carrots in food processor, and add to onion as it cooks. Wash, dry and slice mushrooms in food processor, and add to vegetables.
  • Wash, dry and cut tenderloin into bite-size chunks. When vegetables have softened, push to the side, and brown meat quickly all over.
  • Strip rosemary branches of leaves to make 1 tablespoon; bring wine, stock and rosemary to boil in covered pot for polenta.
  • Mix the browned meat in with the vegetables, and continue cooking over low heat.
  • Slowly stir polenta into boiling stock to prevent lumping; reduce heat to medium-high, and continue stirring polenta until it thickens.
  • Grate cheese, if using, and stir into polenta.
  • Season pork mixture with salt and pepper, and serve over polenta.
