HONEY GLAZED PORK TENDERLOIN

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- In a bowl, mix the honey, soy sauce, brown sugar, sesame oil, and balsamic vinegar.
- Place the pork tenderloins in a roasting pan, and roast 15 minutes in the preheated oven.
- Remove pork from oven, and baste with the honey sauce. Reduce oven temperature to 350 degrees F (175 degrees C), and continue roasting pork 45 minutes, basting occasionally with the honey sauce, to an internal temperature of 145 degrees F (63 degrees C).

MAPLE AND PECAN GLAZED PORK TENDERLOIN

- 1. Preheat the oven to 350 degrees. Get out all the ingredients needed.
- 2. Sprinkle the pork loin with salt. Heat the butter and oil in a large ovenproof skillet over medium heat. Add the tenderloin and cook for 3 minutes per side or until brown.
- 3. Place the pork loin in the oven Bake for about 30 minutes. While Pork in baking Bring the pecans, maple syrup and coarse mustard to a boil in a saucepan, stirring frequently. Reduce heat and simmer for about 3 minutes or until thickened. Remove from the heat and stir in the vanilla. Carefully remove the meat from the oven and spread the maple, nut mixture on top of the the loin.
- 4. Return the pan to the oven and cook for an additional 20-30 minutes or until 160 degrees is reached on the thermometer.
- 5. Remove the tenderloin to a serving platter and cover loosely with foil. Let stand for 10 minutes to let all the juice reach all the portions of the meat. Slice the pork and serve with sauce remaining in the skillet and juices on the serving platter.

- In a bowl or shallow dish, add the pork, apple cider and 1 teaspoon salt. Turn to coat. Cover and refrigerate 4 hours or overnight., Preheat oven to 425°. Spread pecans on a plate. Drain pork, discarding marinade. In a small bowl, mix honey and mustard; rub over pork. Roll pork in pecans, patting to help nuts adhere., Transfer to a greased 13x9-in. baking dish. - Rub meat with 1 crushed garlic clove, which has been sauteed in olive oil until golden brown, and fresh basil. Salt, pepper meat, then saute garlic in olive oil and butter mixture until golden brown, then add meat and saute until it is good and brown all over. (About ten minutes) Remove meat from pan, save juices. Let meat cool. Take mixture of syrup, sugar and pecans and rub entire roast. Then use the rest of pecans to the meat. Place in oven at 350 for two hours, basting occasionally. Reserve juices for gravy. Serve with mashed potatoes and fresh green beans with hot rolls. Yummm Add some canned milk and a little Wondra to juices to get a wonderful gravy. Serve with Mashed Potatoes and a Fresh Veggie, such as asparagus. Add hot rolls. Yum!

- Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until well browned on both sides. Remove the pork from the skillet.
- Add the garlic and onions to the skillet and cook and stir for 1 minute. Stir the soup, peach juice, soy sauce and honey in the skillet and heat to a boil. Cook for 5 minutes or until the soup mixture is slightly reduced.
- Return the pork to the skillet. Stir in the peaches. Reduce the heat to low. Cook until the pork is cooked through. Stir in the pecans. Serve the pork and sauce with the rice. Sprinkle with additional sliced green onion, if desired.

- Heat oven to 400 degrees.
- Line a cookie sheet with foil and spray with non stick cooking spray.
- Place pork tenderloin on foil and season with salt and pepper on both sides of meat. Set aside.
- In a medium sized bowl combine the brown sugar, maple syrup, mustard, and pecans.
- Stir until well combined.
- Spoon the maple syrup and pecan mixture over the top of the pork tenderloin.
- Cook uncovered for about an hour, or until the internal temperature of the pork reaches 145 degrees. If the glaze starts to get well done, place tented foil loosely over the pork during the cooking time.
- After it's done cooking, let the meat rest for about 5-10 minutes. Slice and serve.

- Heat a heavy bottomed pan (I use my French oven), over medium high heat. When the pan is very hot, add olive oil, and sear pork tenderloin on all sides for 2-3 minutes each, or until the sides are golden brown. Remove the pork tenderloin from the pan, and quickly add the chicken broth, scraping the browned bits from the bottom of the pan. Stir in both boxes of rice, and add one of the seasoning packets, stiring to combine. Allow the mixture to come to a boil, and then add the pork tenderloin back into the pan, cover and bake for about 25 minutes, or until the internal temperature is 160 degrees.
- In the meantime, add the butter, brown sugar, honey, chicken broth, and chipotle chili powder to a small saucepan. Stir together over medium heat, until it starts to simmer and is thick enough to coat the back of a spoon. Add the pecans and remove from heat.
- When the pork tenderloin is cooked through, remove it from the pan to a cutting board and cover with foil to allow it to rest for 5 minutes before slicing into 1/2 inch medallions. Serve with rice and spoon glaze on top.
