BRAISED PORK OSSO BUCCO

When it comes to comfort food Pork Osso Bucco is at the top of my list. This easy to make delicious pork dish warms the body and the soul.

4 pork shanks (approx 5 pounds total weight)
1 cup all-purpose flour seasoned with sea salt and blacck pepper (to dredge pork shanks)
coarse sea salt (to taste)
black pepper (to taste)
3 tablespoons extra-virgin olive oil
1 large onion (chopped)
2 large carrots (chopped)
4 ribs celery (chopped)
3 cloves garlic (minced)
½ teaspoon crushed red pepper
1 cup red wine
28 ounce crushed tomatoes
2 tbsp tomato paste
1 ½ cup chicken stock
4 sprigs thyme
4 sprigs rosemary

Steps:

  • Dredge the pork shanks in flour seasoned with sea salt and black pepper.
  • Add vegetable oil to a large dutch oven (6-7 quarts or a large skillet) over medium-high heat. Sear the pork shanks for about 2 minutes on each side.
  • Once seared on all sides, remove the pork shanks from the pan and set aside until needed.**Discard the oil if it's burnt and start with fresh oil, but don't clean out the pan. We want all those tasty bits stuck to the pan for the sauce.
  • Add the celery, carrots, onions, to the pot. Let the vegetables cook over medium heat for 5-7 minutes or until they have all been lightly cooked
  • After lightly cooking the vegetables, add the red wine to the dutch oven. Turn the heat down and scrape all the bits off the bottom of the pan.**This process is called deglazing.
  • After deglazing the pan, add the stock, tomatoes, tomato paste and herbs to the pot.Allow the mixture to simmer over medium heat for 5 minutes
  • Add the pork shanks back into the pot of tomato sauce. Cover and place into a preheated 325-degree oven and let the pork shanks braise in the sauce for 3 hours.
  • After three hours, the pork shanks will be fork tender and incredibly delicious. As you can see there is a good amount of fat that has been cooked off.Gently remove the pork shanks from the pan and skim off most of the fat. Mix the remaining fat into the sauce. This fat will add an incredible amount of flavor so don't take it all out.
  • Spoon the finished tomato sauce onto a serving dish or casserole and place the pork shanks on the sauce. Garnish with chopped parsley.
  • Serve with potatoes, polenta, or your favorite pasta or grain and enjoy!

2 Tbsp. (30 mL) extra virgin olive oil
1 Tbsp. (15 mL) butter
8 Québec pork shank, 1 in. (2.5 cm) thick
2 onion, chopped
1/2 Tbsp. (22 mL) sugar
2 garlic cloves, chopped
1 cup (250 mL) chicken broth
2 cups (500 mL) crushed Tomato
1 cup (250 mL) orange juice
1 bay leaf
1 Tbsp. (15 mL) chopped fresh oregano or 1 teaspoon (5 ml) dried oregano
Salt and freshly ground pepper to taste

Steps:

  • In a Dutch oven or large pan, heat oil on high heat and melt butter. Brown meat. Remove and set aside.In the same pan, cook onions over low heat until they brown (caramelize), about 10 minutes. Add sugar after about 5 minutes.Return the meat to the pan and add remaining ingredients, except for the gremolata.Simmer over low heat until the meat is tender, about 2 h15. Season to taste.Mix gremolata ingredients together, sprinkle over osso buco and serve.

1 cup chicken broth
2 cups crushed tomatoes
1 cup orange juice
1 bay leaf
1 tablespoon fresh oregano (1 tsp dry)
1 teaspoon salt and pepper (to taste)
2 tablespoons orange zest
1/4 cup parsley
1 tablespoon fresh oregano

Steps:

  • 1. In a pot, heat oil on high and melt butter. Brown the pork slices. Set aside.
  • 2. In the same pot, slowly cook onions until caramelized. Add sugar after 5 minutes.
  • 3. Add the pork slices and rest of ingredients (except gremolata), and simmer on low heat until meat is tender (approximately 1-1/4 to 1-1/2 hour). Season to taste.
  • 4, Before serving, prepare gremolata.

8 to 10 large 2 1/2-inch-thick veal shanks, each patted dry and tied securely with kitchen string to keep the meat attached to the bone
all-purpose flour for dredging the veal shanks
7 tablespoons unsalted butter plus additional if necessary
3 tablespoons olive oil plus additional if necessary
1 1/2 cups dry white wine
1 1/2 cups finely chopped onion
3/4 cup finely chopped carrots
3/4 cup finely chopped celery
1 teaspoon minced garlic
3 to 4 cups chicken broth or beef broth
1 1/2 cups peeled, seeded, and chopped tomato or 1 1/2 cups drained canned plum tomatoes, chopped
a cheesecloth bag containing 6 fresh parsley sprigs, 4 fresh thyme sprigs, and 1 bay leaf
1/2 teaspoon salt
For the gremolata
1/2 cup minced fresh parsley leaves (preferably flat-leafed)
2 tablespoons freshly grated lemon zest
1 tablespoon minced garlic

Steps:

  • Season the veal shanks with salt and pepper and dredge them in the flour, shaking off the excess. In a heavy skillet heat 3 tablespoons of the butter and 3 tablespoons of the oil over moderately high heat until the foam subsides, in the fat brown the veal shanks in batches, adding some of the additional butter and oil as necessary and transferring the shanks as they are browned to a platter. Add the wine to the skillet, boil the mixture, scraping up the brown bits clinging to the bottom and sides of the skillet, until the liquid is reduced to about 1/2 cup, and reserve the wine mixture in a small bowl.
  • In a flameproof casserole just large enough to hold the veal shanks in one layer cook the onion, the carrots, the celery, and the garlic in the remaining 4 tablespoons butter over moderately low heat, stirring occasionally, until the vegetables are softened and add the shanks with any juices that have accumulated on the platter, the reserved wine mixture, and enough of the broth to almost cover the shanks. Spread the tomatoes over the shanks, add the cheesecloth bag, the salt, and pepper to taste, and bring the liquid to a simmer over moderately high heat. Braise the mixture, covered, in the middle of a preheated 325°F. oven for 2 hours, or until the veal is tender. Transfer the shanks with a slotted spoon to an ovenproof serving dish, discard the strings, and keep the shanks warm. Strain the pan juices into a saucepan, pressing hard on the solids, and skim the fat. Boil the juices for 15 minutes, or until they are reduced to about 3 cups, baste the shanks with some of the reduced juices, and bake them, basting them 3 or 4 times with some of the remaining juices, for 10 minutes more, or until they are glazed.
  • Make the gremolata while the veal is baking:
  • In a bowl stir together the parsley, the zest, and the garlic.
  • Sprinkle the veal shanks with the gremolata, pour some of the juices around them, and serve the remaining juices separately.

Pork shank isn't as rich as veal, but I like it better in osso buco. Still, if you want veal you can use it here too.

6 thick-cut pork shank sections, 2 to 3 inches thick
1 tablespoon olive oil
1 tablespoon butter
1 large yellow onion, diced
1 large carrot, diced
2 ribs celery, diced
1 teaspoon kosher salt
¼ cup tomato paste
2 tablespoons all-purpose flour
1 cup white wine
2 cups chicken broth
1 bay leaf
½ teaspoon dried thyme
½ teaspoon dried rosemary
⅛ teaspoon ground cloves
Chopped Italian parsley
Freshly grated lemon zest

Steps:

  • Salt and pepper both sides of pork shank sections.
  • Heat oil and butter in a heavy pot over high heat. Brown pork until it gets a nice sear, 3 or 4 minutes per side. Transfer pork to a plate; reduce heat to medium. Add onions, carrots, and celery to pot. Sprinkle with salt. Cook and stir until onions start to turn translucent. Add tomato paste; cook and stir until tomato paste starts to caramelize, about 2 minutes. Sprinkle in flour; stir for 2 minutes. Add white wine and raise heat to medium high.
  • When sauce comes to a simmer, cook until sauce reduces slightly. Add bay leaf, thyme, rosemary, and ground cloves. Add chicken stock and return to a simmer. Transfer pork back to pot along with any accumulated juices. Bring mixture to a very slow simmer. Cover and cook until fork tender, 3 to 3 1/2 hours.
  • Serve shanks with plenty of sauce, topped with freshly chopped parsley and a sprinkle of lemon zest.
