- Preheat broiler. In a small bowl, mix cornstarch, broth and apple juice. In a nonstick skillet, heat butter over medium-high heat. Add apples, green onions and garlic; cook and stir 2-3 minutes or until apples are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Keep warm., Mix thyme, paprika, salt and pepper. Pound pork slices with a meat mallet to 1/2-in. thickness; sprinkle both sides with seasonings., Place pork on a broiler pan. Broil 3 in. from heat 3-4 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with apples.

- In a large nonstick skillet, brown pork in oil for 3-4 minutes on each side. Remove and set aside. , In the same skillet, saute the onion, garlic and sugar until onion is caramelized and tender. Steps:
- Combine first 7 ingredients in a small bowl and stir well.
- Cut pork crosswise into 8 pieces.
- Flatten each piece to 3/4-inch thick using a meat mallet or rolling pin.
- Coat each piece with flour, shaking off excess.
- Heat 3 teaspoons olive oil in a large non-stick skillet coated with cooking spray over medium-high heat.
- Add pork and saute 2 1/2 minutes on each side or until browned.
- Remove from pan.
- Add 1 teaspoon oil to pan.
- Add onion, cover, reduce heat, and cook 5 minutes or until golden brown, stirring frequently.
- Return pork to pan; add juice mixture, apple and cranberries.
- Bring to a simmer, cover and cook 3 minutes or until cranberries pop and pork is cooked through, stirring occasionally.
- Garnich with sage sprigs.

Steps:
- In a large skillet, heat butter over medium heat.
- Add onions and sauté for 4 to 6 minutes, until lightly browned.
- Remove onions to a plate and set aside.
- Add vegetable oil to the skillet.
- Sprinkle pork chops with salt and pepper then dredge in flour.
- Brown the pork chops for about 2 minutes on each side.
- Return the onions to the skillet making a layer over the chops.
- Meanwhile, combine chopped apples with lemon juice, apple cider, brown sugar, and cinnamon.
- Pour the apple mixture over the pork chops and onions and bring to a simmer.
- Reduce heat to medium-low and simmer, uncovered, for 5 minutes.
- Cover and simmer for 20 minutes.
- Stir in cranberries and continue cooking for 2 minutes longer.

Pork Tenderloin is a favorite of ours-this is an excellent fall dinner when apples are crisp and juicy. They really play off the sweetness of the pork and the creamy cheese.

Steps:
- Cut tenderloins into 12 equal pieces and pound between plastic or waxed paper until 1/4 inch thick.
- Melt 1&1/2 T.
- butter in a large skillet over medium high heat.
- Cook pork for 2 minutes per side.
- Remove from pan.
- Reserve juices.
- Top each piece of pork with a slice of cheese and place in a warm oven to JUST melt the cheese.
- Melt the remaining butter and add the apple slices and sugar to the pan.
- Cook and stir for 3 minutes.
- Remove from pan.
- Add cider, poultry seasoning and any juices from the pork to the skillet.
- Cook and stir over high heat until the liquid is reduced to half.
- Pour in cream.
- Stir to thicken slightly.
- Add salt and pepper to taste.
- Place apples on a serving plate-top with cheese covered pork and pour the cream mixture on top.
- Serve.

- Heat the oil in a large non-stick frying pan and fry the pork on each side for 2-3 mins until golden brown. Set aside on a plate.
- Melt the butter in the pan and, when foaming, fry the shallots and mushrooms over a medium heat for 10 mins. Add the garlic and cook for another 1 min. Stir through the flour and cook for another 2 mins. Whisk through the madeira and boil for 2 mins. Gradually stir through the stock until the sauce is lump free. Add the thyme and mustard and season to taste.
- Return the pork to the pan and simmer uncovered for 5-7 mins or until the pork is cooked through. Stir through the cream and heat again until simmering. Serve with creamy mashed potatoes and wilted greens.
