Pork, fennel and chilli meatballs

Number Of Ingredients 9

2 Tbsp Olive oil
1 Onion, finely chopped
2 cloves Garlic, finely chopped
2 tsp Fennel seeds
½ Fennel bulbs, finely chopped
1 tsp Chilli flakes
1 Tbsp Fresh thyme, chopped
1 Tbsp Fresh coriander, chopped (Main)
500 g Pork mince (Main)

Steps:

  • Heat 1 tbsp olive oil in a large saucepan, add onion, garlic and fennel.
  • Sauté for 5 minutes. Add seeds, chilli flakes, thyme and coriander. Cook 3 minutes. Set aside.
  • Once cooked spices are cooled, add to mince and combine well.
  • Roll into walnut-sized balls. Chill for 15 minutes.
  • Heat remaining oil in saucepan. Add meatballs, cook for 10 to 15 minutes until golden and cooked through.
  • Serve with cocktail sticks.

Number Of Ingredients 6

2 tbsp olive oil
1 onion , chopped
½ bulb fennel , chopped
1 tsp chilli flakes
2 tsp fennel seed
500g pack pork mince

Steps:

  • Heat 1 tbsp olive oil in a large frying pan, add onion and fennel and cook for 8 mins until soft. Add chilli flakes and fennel seeds and cook for a further 2 mins. Remove from the heat and allow to cool, then mix in pork mince with some seasoning. Form into bite-sized balls.
  • Heat 1 tbsp olive oil in a large frying pan. Add the meatballs and cook for 10-15 mins until golden and cooked through. Serve at room temperature with cocktail sticks.
