COOK-AHEAD PORK CHOPS
"I found the recipe for these moist make-ahead pork chops in a magazine years ago and adapted a couple of our favorite recipes to work with them," writes Marge Anderson of Fergus Falls, Minnesota. It's handy to have them in the freezer for the quick dinners she shares here.

- Place pork chops in an ungreased 9-in. square baking pan. Pour chicken broth over chops. Cover and bake at 350° for 45-55 minutes or until a thermometer reaches 160°. Cool. , Wrap in heavy-duty foil or place in freezer bags; freeze for up to 4 months.

- In a medium bowl add 3 tbsp olive oil, 4 tbsp fresh lemon juice, 4 cloves garlic minced, 1 cup of fresh basil finely chopped, 2 tsp sea salt and 1 1/2 tsp black pepper. Mix well.
- Pour into freezer bag or container with pork chops and seal well. Gently massage the marinade into meat to ensure evenly coated.
- Write on date and title of the recipe on freezer container and freeze for up to 3 months. Before using let thaw overnight in the refrigerator. If eating the same day, let marinate for 20 minutes.
