Categories     Chili

Time 3h15m

Number Of Ingredients 21

28 oz tomatoes, crushed
1 small ca tomato paste
28 oz tomato sauce
2 large red peppers
3 Tbsp garlic
2 shallots or onion
2 LBS ground beef,lean
1 pack mccormick chili season,hot
3 celery stalks
2 Tbsp chili powder
2 medium jalapeno peppers
1 can red kidney beans
1 large yellow bell pepper
1 tsp onion powder
1 tsp garlic powder
1/4 cup olive oil, extra virgin
1 Tbsp oregano, dried
1 Tbsp italian seasoning
1 lb chuck roast (optional)
1/4 c chipotle hot sauce(optional)
1 can fire roasted stewed tomato

Steps:

  • 1. Slice peppers, jalapeño, shallots and celery add garlic and oil and sauté until peppers are soft then put aside.
  • 2. Brown meat and drain then add all the vegetables and tomato paste and Sauté for 2 minutes. If you love meat add 1 pound of chuck roast cut it into cubes and add to mixture when you sauté tomato paste.
  • 3. Add all dry ingredients, crushed Tomato's, tomato sauce, stewed tomato's Stir well, cover and simmer on low heat for 1 hour. Check and stir often. Do not put on high heat because it will burn. I recommend using Cast Iron pot with lid. Everything tastes better in Cast Iron Serve over elbow noodles. Add 1/2 hour simmer time if chuck roast is used.
  • 4. About halfway thru cook time drain beans and add to pot. For more taste and kick add 1/4 cup of chipotle hot sauce defiantly makes the sauce taste better but is optional.

INSTANT POT® CHILI

Instant Pot® Chili image

The basis for this recipe came from another site. I modified it a bit so, rather than put my changes as comments for his recipe (I hate when people do that), I am posting it as a separate recipe. I have some hints at the bottom for night-before preparations.

Time 1h

Yield 8

Number Of Ingredients 12

1 tablespoon vegetable oil
1 pound lean ground beef
1 large onion, diced
4 cloves garlic, crushed
½ teaspoon salt
¼ cup chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 ½ cups water
4 (15 ounce) cans kidney beans, drained
1 (28 ounce) can crushed tomatoes
2 tablespoons tomato paste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer cooked beef to a separate container.
  • Pour oil into the Instant Pot® and select Saute function. Add onion, garlic, and salt. Cook until softened, 5 to 7 minutes. Make a hole in the center of the mixture and add chili powder, cumin, and oregano. Let spices sit for 30 seconds, then stir into the onion. Return cooked beef to the pot and add water. Stir, being sure to scrape any browned bits from the bottom.
  • Stir beans, crushed tomatoes, and tomato paste into the beef mixture. Close and lock the lid. Select Chili function and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

POPS' CHILI

Pops' Chili image

this was my grandpa's recipe and it's my favorite. it's not super thick but can be if you just add less liquid. he always served it over just a tiny bit of spaghetti or with crackers. it's also good with fritos or cornbread. i never have measured any spices so these are guesstimates.

WATERMELON, CHILI AND BASIL ICE POPS

Watermelon, Chili and Basil Ice Pops image

These fruity ice pops give you an array of tastes: sweet, tangy, salty and spicy. If you cannot find Thai basil, which is milder than regular basil with a slight licorice flavor, regular basil will be fine in this recipe. Sprinkle any leftover chili salt on sweet summer fruits like mangos, pineapples or peaches for a spicy-sweet treat.

Provided by Food Network Kitchen

Time 8h40m

Yield 4 to 6 servings

Number Of Ingredients 6

2 tablespoons fresh lime juice
1/3 cup sugar
1 large bunch Thai basil, stems and leaves roughly chopped (about 1 cup)
1 red Thai bird chile
2 tablespoons kosher salt
3 cups 1-inch cubes watermelon

Steps:

  • Bring the sugar and 1/4 cup water to a simmer in a small saucepan. Cook over medium heat, stirring occasionally, until the sugar is completely melted, about 5 minutes. Turn off the heat, add the basil and stir until completely wilted. Let cool completely at room temperature, at least 30 minutes.
  • Meanwhile, finely mince the chile (seeded for less heat, if desired). Add the salt to the minced chile, and run your knife through the mixture several times until the salt starts to turn light pink; set aside.
  • Put the watermelon and lime juice in a blender. Strain the basil syrup into the blender, pressing the basil in the strainer with the back of a spoon to extract as much flavor as possible; discard the basil. Puree the watermelon mixture until completely smooth, scraping down the sides of the blender partway through if needed. Transfer the mixture to a large liquid measuring cup with a pouring spout.
  • Pour the mixture into the ice-pop molds, leaving 1/4 inch of space at the top (the mixture will expand). Insert the sticks. Freeze until solid, 5 hours to overnight. Unmold, and sprinkle 1 or both sides of the pops with the chili salt, depending on how spicy you want your pops. Serve immediately with any remaining chili salt on the side.

Categories     Beans

Time 8h15m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 onion, minced
1 garlic clove, minced
1 lb beef stew meat (can also use buffalo stew meat or omit for vegetarian option )
30 ounces canned red kidney beans (2 15 oz. cans drained of liquid and rinsed. I use BPA-free cans & Organic)
28 ounces diced tomatoes (also use BPA-free cans & organic if you can find them)
16 ounces tomato sauce (also use BPA-free cans & organic if you can find them)
1 teaspoon chili powder
1/8-1/2 teaspoon cayenne pepper (or more per taste. This depends on the heat strength of your cayenne)
1 pinch creole seasoning (Tony Chachere's Original Creole Seasoning if avaliable)
1 bay leaf

Steps:

  • Brown ground beef with onion and garlic. (if using stew meat or buffalo meat only brown the meat, do not fully cook!).
  • Drain meat if necessary.
  • Combine meat/onion/garlic mixture with the remainder of the ingredients and put in slow cooker.
  • Cook on low for 8 to 10 hours.
  • Remove bay leaf prior to serving.
  • I use Frontier Co-op spices that I purchase at my local health food co-op. I find their spices are extremely fresh and their 90,000 hu cayeene is great for slow-cooking recipes!
  • If making this as a vegetarian chili, simply skip the meat and add more beans. I love to add black beans. Yum!
  • Serve over rice or eat as is.

HOMEMADE CHILI SEASONING POPCORN

Homemade Chili Seasoning Popcorn image

Popcorn as good as the theater's, with a kick! Salty, spicy and a little smoky. All you need is a large pot or metal bowl. I use a large 2 gallon metal bowl. Omit the chili powders if you don't like it spicy.
