Cooling off on a hot summer day is easy with this refreshing and bubbly sparkling pomegranate lemonade. A chilled glassful is a treat everyone will enjoy.

Ingredients

2 Tbsp granulated sugar
1/3 cup freshly squeezed lemon juice
2/3 cup pomegranate juice
2 1/2 cups club soda
Ice
Fresh mint

Steps:

In a pitcher, stir together sugar and lemon juice until the sugar is completely dissolved.
Add pomegranate juice and stir to combine. Add club soda and stir to combine.
Divide between 4 glasses filled with ice. Garnish with mint, and serve immediately.

Ingredients

1/2 cup citron vodka
4 tablespoons pink lemonade mix, (Recommended: Country Time)
1 1/2 cups pineapple juice
1 (12-ounce) can lemon-lime flavored carbonated beverage
Garnish: pink sanding sugar

Steps:

In a large pitcher, combine vodka and lemonade mix, stirring well. Add pineapple juice, stirring well. Add lemon and lime beverage, stirring well.
In a shallow dish, add a small amount of water or lemonade spritzer. In another small shallow dish, add desired amount of sanding sugar.
Dip rims of glasses into liquid mixture and then into sanding sugar to garnish, if desired.
Divide ice between 6 glasses. Pour lemonade over top. Serve immediately.

4 cups water
6 tablespoons sugar
1/3 cup mint leaves, plus whole sprigs for garnish
1/3 cup lemon juice
2 cups chilled pomegranate juice
Ice

Steps:

Heat the water in a saucepan over medium heat with the sugar and mint leaves, stirring, just until the sugar dissolves. Remove from the heat and stir in the lemon juice and pomegranate juice. Pour into a pitcher and refrigerate until cold. Serve in glasses filled with ice and garnished with a sprig of mint.

1 cup pomegranate juice
3 tablespoons sugar
½ tablespoon lemon juice
sugar, for coating rim
½ tablespoon lemon juice
1 ½ tablespoons pomegranate juice
4 oz sparkling wine, or as needed
1 tablespoon pomegranate seeds
1 sprig fresh rosemary

Steps:

Make the pomegranate molasses: In a small saucepan, stir together the pomegranate juice, sugar, and lemon juice. Bring to a simmer over medium heat, then reduce the heat to low and cook for 20-30 minutes, stirring occasionally, until syrupy. Be careful not to burn the syrup. Remove the pot from the heat and let the pomegranate molasses cool completely before using. Any leftovers will keep in an airtight container in the refrigerator for up to 2 weeks.
Make the cocktail: Add a few tablespoons of sugar to a small plate. Dip the rim of a champagne glass in the pomegranate molasses, then in the sugar to coat.
Add ½ tablespoon of the pomegranate molasses to the bottom of the glass, then pour in the lemon juice and pomegranate juice. Fill the rest of the way with sparkling wine.
Float the pomegranate seeds on the top of the cocktail and garnish with the rosemary sprig.
Serve immediately.

3 cups cold club soda

Steps:

Add water and juice to drink mix in 2-qt. plastic or glass pitcher; stir until mix is dissolved.
Refrigerate 1 hour.
Stir in club soda just before serving.
