5 (1/4 ounce) packages active dry yeast
2 cups lukewarm water, divided
1 quart whole milk, scalded
1 cup butter, cut into pieces
7 teaspoons salt
10 whole eggs, room temperature
5 lbs bread flour
1 1/2 cups superfine sugar

Steps:

  • Dissolve yeast packages in 1 cup of warm water. Rinse and dry a small saucepan to prevent milk from scorching and sticking when scalded. Bring milk to a boil, reduce heat, and simmer for 2 minutes. Remove from heat, and add remaining 1 cup warm water, butter, and salt; stir to blend. Once cooled to lukewarm, stir in dissolved yeast.
  • In a separate bowl, beat eggs until light and fluffy. Gradually stir eggs into milk mixture. Once blended, add flour gradually until few or no lumps remain. Divide dough in half, and let rise in a warm place for 1 1/2 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Once risen, turn dough out onto a well-floured surface and divide into 6 equal portions. (Dough will be very sticky and soft at this point.) Divide each portion into 3 pieces; braid together, and place on a baking sheet.
  • Bake in the preheated oven for 35 to 40 minutes, or until hollow-sounding when tapped on top. Let cool, and enjoy!

This beautiful and decorative Easter bread adds such a festive look to the buffet table! No need to boil the eggs ahead of time, as they bake right into, and along with, the bread! Dyeing the (raw) eggs before setting them into the bread makes this an absolute stunner! Prep time includes "rise" time.

2 1/2 cups all-purpose flour, divided
1/4 cup white sugar
1 teaspoon salt
1 (1/4 ounce) package active dry yeast
2/3 cup milk
2 tablespoons butter
2 eggs
5 whole eggs, dyed if desired
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine 1 cup flour, sugar, salt and yeast; stir well. Combine milk and butter in a small saucepan; heat until milk is warm and butter is softened but not melted.
  • Gradually add the milk and butter to the flour mixture; stirring constantly. Add two eggs and 1/2 cup flour; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. 1 cup whole milk
1/2 cup butter or 1/2 cup margarine, melted
1 cup sugar (or less, to taste)
1/2 teaspoon salt
2 (1/4 ounce) packages active dry yeast
1/4 cup warm water
2 eggs, plus
1 egg, beaten for glazing (room temperature works best)
5 1/2 cups all-purpose flour
1 cup golden raisin (optional)

Steps:

  • Heat the milk to lukewarm; add melted butter, sugar and salt.
  • Stir to combine and let cool to about 110°F
  • Add yeast and warm water in mixing bowl and stir until dissolved.
  • Add lukewarm milk mixture and 2 eggs and stir to combine.
  • Add 3 cups flour and beat until smooth.
  • Add the raisins and remaining flour and mix, 3 to 5 minutes until smooth. (Dough will be sticky)
  • Place dough in greased bowl.
  • Turn over and cover with plastic wrap and let rise until double, about 1 hour.
  • Punch down dough and turn out onto lightly floured board.
  • If making 1 large loaf, divide dough into 3 equal pieces.
  • Roll each piece into a strip about 14 inches long, and braid together the 3 strips on a parchment-lined baking pan. (Note: If making 2 loaves, divide dough into 2 equal pieces and then divide each half into 3 equal pieces, for a total of 6 pieces.)
  • Loosely cover bread and let rise again until double, about 30 minutes.
  • While bread is rising, preheat oven to 350°F.
  • Brush remaining beaten egg lightly on bread.
  • Bake 30 minutes or until golden brown.
  • Let cool completely before serving.
  • Store, covered, at room temperature or slice and freeze.

5 packages active dry yeast
2 cups lukewarm water, divided
1 quart whole milk
1 cup butter, cut into pieces

  • Once risen, turn dough out onto a well-floured surface and divide into 6 equal portions. Shape the dough into balls. (Dough will be very sticky and soft at this point.) Keep the dough covered with greased plastic wrap while you divide one dough ball into 3 pieces. Shape the dough into three ropes, braid together, and place on a lightly greased baking sheet or parchment-lined baking sheet. Repeat with the remaining loaves. You should be able to fit two loaves per baking sheet.

2 packages (1/4 ounce each) active dry yeast
1 to 2 teaspoons ground cardamom
1 teaspoon salt
6 to 6-1/2 cups all-purpose flour

4 large eggs, room temperature, divided use
3 to 6 hard-boiled large eggs, unpeeled
Assorted food coloring
Canola oil

4 cups flour
1 (1/4 ounce) package yeast
1/2 cup sugar
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup butter
1 1/4 cups milk, lukewarm
5 egg yolks, keep one separate
1 cup golden raisin
1 fresh lemon rind
1/4 cup almonds, sliced and blanched

Steps:

  • Measure 2 cups flour onto piece of waxed paper.
  • Combine other 2 cups flour, yeast, sugar, salt and cinnamon in mixing bowl and mix well.
  • Melt butter and add lukewarm milk.
  • Gradually add dry ingredients and beat at low speed, scraping sides of bowl, 2 minutes.
  • Add 4 egg yolks and 1 more cup of flour.
  • Beat at medium speed 2 minutes or until think and elastic.
  • Gradually stir in last cup of flour with wooden spoon, making a soft dough.
  • Cover and let rise until double.
  • Stir in raisins and lemon rind.
  • Put in a well greased 3 quart fluted tube pan or heavy Bundt pan.
  • Beat 5th egg yolk with 2 tablespoons water and brush top of dough with this mix.
  • Sprinkle almonds over the top and let rise for one hour uncovered.
  • Preheat oven to 350 degrees and bake for 30-40 minutes. Turn out of pan and cool on rack.

1 tablespoon sugar
1 package (1/4 ounce) active dry yeast

TOPPING:
1 large egg
1 teaspoon water
1/2 teaspoon poppy seeds

Steps:

  • In a large bowl, combine 2-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat water and oil to 120°-130°. Add to dry ingredients along with eggs. Beat on medium speed for 3 minutes. 1 teaspoon lemon peel, grated

A very special bread baked with a colored Easter Egg in the center; very attractive. This recipe calls for a flavoring called fior di Sicilia, which is orange flower water. I have not seen this in stores, but am assured it makes everything from cakes to frostings and cookies taste like a Creamsicle. Sounds yummy! I substitute vanilla and orange extract to equal about 1/4 teaspoon. Adapted from a recipe by Mary Ann Esposito (Ciao Italia).

1/4 ounce active dry yeast (1 packet)
1/4 cup warm water (110 to 115 F)
1/2 cup warm buttermilk (110 to 115 F)
4 large eggs, at room temperature
4 colored hard-boiled eggs
1 large orange, juiced
2 tablespoons orange zest
1 teaspoon fior di sicilia orange flower water (or better a combination of vanilla and orange extract) or 1/4 teaspoon vanilla extract (or better a combination of vanilla and orange extract)
4 1/2-5 cups unbleached all-purpose flour
1/2 cup sugar
1 1/2 teaspoons salt
8 tablespoons unsalted butter, softened (1 stick)
colored crystal sugar, for sprinkling

  • Preheat oven to 375 degrees F.
  • Dissolve yeast in warm water in a medium bowl. Allow to proof for about 5 minutes until bubbles appear on the surface of the water. Stir in the buttermilk, then beat in 3 of the eggs, one at a time. Add orange juice, zest, and fior di Sicilia (if available) or flavor extract(s). Set aside. The fourth egg is reserved for an egg wash on the finished braids.
  • In a bowl combine 4 1/2 cup flour, sugar, and salt. Break up the butter and add to dry ingredients. Work it in with your hands until mixture is crumbly. Add in the yeast mixture and continue mixing with your hands and form a ball of dough. Add additional flour, if needed, to obtain a dough that is soft but not too tacky. Dough could also be made in a stand mixer.
  • Turn dough out on floured work surface and knead for 3-4 minutes until smooth. Let dough rest for 10 minutes; cover with a clean kitchen towel or an inverted bowl. Knead again for about 5 minutes and no longer tacky.
  • Oil a large bowl lightly and place dough inside and turn to coat with oil. Cover bowl with plastic wrap and let rise until doubled in size, 2 to 2 1/2 hours.
  • Once it has risen to double, punch it down and transfer to a lightly floured work surface. Knead until it is smooth and not tacky.
  • Divide dough into 8 pieces. Roll each piece into a 16 inch rope. Form a braid by using 2 ropes, then bring the ends together to form a circle. Place braided ring on a parchment lined baking sheet allowing room for them to rise again (two per baking sheet).
  • Place an Easter Egg in the center of each braid and brush dough with the reserved beaten egg. Sprinkle dough with colored sugar. Cover and let rise 20 minutes.
  • Bake until golden brown, about 30-40 minutes. Cool on wire racks.
