SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES

Southern-Style Green Beans with Bacon and New Potatoes image

Provided by Food Network

Categories     side-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 5

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

GREEN BEANS WITH NEW POTATOES

Green Beans with New Potatoes image

This easy green bean with potatoes recipe from Paula Deen is a classic side dish perfect for entertaining. Ingredients include fresh green beans, onion, bacon grease and salt pork. Prep time is about 10 minutes and cooking time is 10 minutes on the stovetop.

Provided by Paula Deen

Time 10m

Yield 10

Number Of Ingredients 9

1/2 stick sliced butter
1 cut into slivers onion
12 small red potatoes
2 to 3 teaspoons Paula Deen's House Seasoning
2 cups plus more if needed chicken broth
1/4 cup bacon grease
1/4 lb sliced salt pork
3 lbs fresh green beans
to taste pepper

Steps:

  • Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
  • Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
  • While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.

KENTUCKY POLE BEANS AND POTATOES

Kentucky Pole Beans and Potatoes image

From the cookbook, "The Glory of Southern Cooking" by James Villas. This is pretty much exactly how my grandma made beans straight from the garden.

Categories     Vegetable

Time 2h

Yield 6 serving(s)

Number Of Ingredients 5

2 lbs fresh green beans (do not use haricot vert)
1 ham hock (see note below)
1/2 teaspoon salt
fresh ground black pepper
12 small red potatoes

Steps:

  • Note: The recipe called for a 1-inch chunk of streak-o-lean (lean salt pork), but the website doesn't recognize. You can use streak-o-lean if you can find it, ham hock, pork belly, or bacon.
  • Pinch off the ends of the beans, and if necessary, remove any strings. Snap the beans into 1-1/2 inch pieces, rinse well in a colander and transfer to a large pot.
  • Add the cooking meat, salt and pepper and enough water to cover by 1 inch. Bring to a boil, reduce heat to low, cover, and simmer the beans slowly until tender but still slightly firm, about 1 hour.
  • Meanwhile, rinse the potatoes to remove any grit, cut away a strip of peel around the center of each with a vegetable peeler.
  • Add the potatoes to the beans, stir and continue to simmer until tender, about 30 minutes, adding more water if needed.
  • Drain and serve hot in a large bowl.

Calabrese Broad Beans and Roasted Potatoes image

Provided by Michael Chiarello : Food Network

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 9

1 pound Yukon gold potatoes, cut in half length wise and sliced 1/3-inch thick
1 1/2 pounds broad beans, stem removed and each cut into 3 pieces (may substitute green beans if broad beans not available)
1/2 cup extra-virgin olive oil, divided
2 cloves garlic, peeled and sliced thin
Salt and freshly ground black pepper
1 teaspoon red chili flakes
1 tablespoon chopped fresh oregano leaves
1 cup canned whole plum tomatoes
1 cup cold water

Steps:

  • Place potatoes in cold salted water and bring up to a boil, simmer 1 minute. Remove with a slotted spoon. Add beans to water and simmer for 3 minutes. Remove with slotted spoon.
  • In a saute pan over medium-high heat, heat 1/3-cup extra-virgin olive oil. When oil is hot add potatoes and cook for 8 minutes until light brown. Add garlic and season with salt and pepper. When garlic is light brown, add the chili flakes and saute for 10 seconds, then add oregano. Continue to saute for 4 minutes. Using your hands, squeeze the tomatoes between your fingers right into the pan. Add 1 cup cold water. Add broad beans. When it comes to a simmer, reduce heat to low and simmer for 10 minutes. Turn off and let sit 5 minutes, then stir in remaining olive oil. Taste and adjust seasoning, if needed, and serve immediately.

POLE BEANS AND NEW POTATOES

Pole Beans and New Potatoes image

Simple yummy southern tasting side dish. Pole beans are larger than everyday green beans (Kentucky wonder is a favorite variety). Try to find tender beans that do not have a heavy "string"; they will cook in the same amount of time as the potatoes.
