Balsamic Glazed Salmon is easy and impressive! Spread a sweet, tangy honey balsamic glaze over salmon fillets, then bake.

2 salmon fillets ((5 ounces each))
2 teaspoons olive oil
2 cloves garlic (minced)
3 tablespoons balsamic vinegar
2 teaspoons honey
2 teaspoons Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Chopped fresh parsley (for garnish)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil (avoid parchment paper), then coat with non-stick cooking spray.
  • In a small skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant and beginning to brown, about 2 minutes, watching carefully so that it does not burn.
  • Add the balsamic vinegar, honey, mustard, salt, and pepper. Whisk and simmer until the mixture thickens; about 4 minutes.
  • Place salmon skin-side down on the prepared baking sheet. Brush liberally with the glaze.
  • Bake for 5 minutes and then remove from the oven.
  • Baste with the glaze, then bake 5 to 10 additional minutes, until the fish flakes easily with a fork and is cooked through.
  • Sprinkle with chopped parsley and serve.

6 cups water
1 medium onion, chopped
2 celery ribs, chopped
4 sprigs fresh parsley
1/2 cup dry white wine
1 tablespoon soy sauce
8 whole peppercorns
1 bay leaf
1 salmon fillet (3 pounds)
Lemon slices and fresh dill

Steps:

  • In a large saucepan, combine the first 8 ingredients. Bring to a boil; reduce heat. Simmer, covered, 30 minutes. Strain, discarding vegetables and spices., Cut three 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 7-qt. oval slow cooker. Pour poaching liquid into slow cooker. Carefully add salmon., Cook, covered, on high 60-70 minutes or just until fish flakes easily with a fork (a thermometer inserted in fish should read at least 145°). Using foil strips as handles, remove salmon from cooking liquid. Serve warm or cold, with lemon and dill.

Recently had this salad at a great Portland, OR restaurant. After finding a wonderful sweet balsamic vinaigrette recipe, by Zaar's Chef Fordido,#229445 I proceeded to prepare this salad twice this week.

1 cup sweet balsamic vinaigrette (Sweet Balsamic Vinaigrette)
2 medium salmon fillets
2/3 cup white wine
2 teaspoons Old Bay Seasoning
4 cups mixed baby greens
1 cup hazelnuts, chopped
1 cup dried cherries
1/2 cup red onion, sliced thin
1/2 cup feta cheese, cubed

Steps:

  • Prepare the vinaigrette according to recipe #229445 by Chef Fordido.
  • Pour wine into medium sized frying pan, add the Old Bay seasoning, then gently place the salmon into the pan. Turning burner to high, poach the salmon for about 4 minutes, turning the heat to medium, as the cooking action becomes vigorous. Gently turn salmon over to poach for another 4 minutes. Do not over cook, lest the salmon becomes dry in flavor, rather then moist.
  • Meanwhile put all the salad ingredients in a large bowl. Add the vinaigrette, mix throughly and allow flavors to mingle before plating the salad.
  • Place the salad on a plate, top with the poached salmon fillet. The salmon may be served warm, room temperature or cold. Enjoy!

Poached salmon is delicate, moist, and cooks in minutes. Perfect for dinner parties and fast weeknight dinners.

2 tablespoons white vinegar
1 tablespoon honey
2 teaspoons kosher salt
4 (6-ounce) center cut salmon fillets (skin on)
water
12 sprigs fresh dill (plus additional chopped dill for serving)
6 whole peppercorns
1 bay leaf
Cracked black pepper (lemon wedges (for serving))

Steps:

  • Fill a saute pan wide enough to hold the salmon in a single layer without overlapping the fillets and tall enough to cover the salmon with water about 1/4 of the way to the top. Add the vinegar, honey, and salt. Whisk to combine.
  • Carefully lower the salmon fillets into the pan in a single layer. Add more water so that they are just barely covered.
  • Scatter the dill, peppercorns, and bay leaf over the top.
  • Bring the water to a gentle boil over medium-high heat. Simmer the salmon, adjusting the heat as needed so that you maintain a steady simmer but not a rapid boil. Let cook 2 minutes.
  • Check the temperature of the salmon using an instant read thermometer. It should be around 135 to 140 degrees F, no more (fish is considered cooked at 145 degrees F, but the temperature will continue to rise as it rests). If needed, cook it 1 to 2 minutes more. DO NOT overcook or your salmon will be dry.
  • With a wide spatula, gently lift the poached salmon out of the water and place it on a plate (discard the poaching liquid). Cover and let rest 4 minutes. Enjoy hot, sprinkled with additional chopped dill, cracked black pepper, and a squeeze of lemon as desired.

1 cup dry white wine
1 1/2 cups water
2 lemon slices
1 small onion, peeled and quartered
5 sprigs parsley
1 bay leaf
6 peppercorns
1 (3 pound) salmon fillet, skin on, scaled and pin bones removed
Salt and freshly ground pepper
6 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons orange juice
2 tablespoons lime juice
1 tablespoon finely chopped dill
Salt and freshly ground black pepper
6 cups watercress
Fresh dill

Steps:

  • To make the salmon: Combine all ingredients except the salmon in a medium skillet or saucepan. Bring to a boil then reduce to a simmer. Season the salmon with salt and pepper on both sides, add to simmering liquid, and cover. Cook for 5 to 8 minutes or until just done.
  • To make the vinaigrette: Whisk together the olive oil and citrus juices, add the dill, and season with salt and pepper, to taste.
  • Toss the watercress with 3 tablespoons of the vinaigrette and season with salt and pepper, to taste. Arrange the watercress on a large platter and place the salmon in the center. Drizzle with additional vinaigrette and garnish with dill.

1 large sweet onion (peeled, and cut into 4 slices crosswise, ends discarded)
4 salmon steaks (4 ounces each)
1 teaspoon fresh lemon juice
1 teaspoon balsamic vinegar
2 teaspoons olive oil
lemon wedge (to garnish) (optional)

Steps:

  • In a fish poacher or heavy skillet, bring wine, water, peppercorn, bay leaf, and lemon slices to a boil.
  • Reduce heat to simmer, add onion slices and salmon steaks.
  • Cover and simmer until onions are tender and salmon flakes when prodded with a fork, 12 to 15 minutes.
  • Transfer onion slices and salmon steaks to a heated serving platter.
  • In a small cup, whisk lemon juice, balsamic vinegar, and olive oil with a fork until well blended.
  • Drizzle over onions slices and salmon.
  • If using, garnish with lemon wedges. Serve at once.

Another recipe for my stove-top smoker! Love this thing! Cooking time does not include marinade time. Because the salmon cooks quickly, either partially cook the potatoes or add them to the smoker and smoke until partially cooked before adding the salmon. Serve with your favorite dill sauce (mine is Recipe #102047)

2 tablespoons brown sugar
1 teaspoon salt
2 teaspoons ground black pepper
2 bay leaves
1 cup dry white wine
2 lbs salmon fillets
1 large sweet onion, sliced very thinly
6 golden potatoes, peeled and partially cooked
1 sweet red pepper, seeded and sliced
1 tablespoon alder wood chips (I've also used cherry wood)
lemon, and
parsley sprig (to garnish)

Steps:

  • In a shallow glass dish (or zip lock bag) combine the sugar, salt, pepper, bay leaves, and wine.
  • Stir to dissolve the sugar and salt.
  • Place the salmon fillet in the solution; cover and refrigerate for at least 2 hours, preferably overnight.
  • Remove and blot the marinade from the salmon.
  • Place the Alder wood chips in the base of the smoker and position the drip pan and rack.
  • Line the drip pan with aluminum foil and pour about 1/3 cup of the marinade into the drip pan.
  • Lay the fillet on the smoker rack, skin side down, and cover with several layers of the sliced sweet onions, placing potatoes and peppers around the salmon.
  • Cover and smoke in the usual fashion for 15 - 18 minutes.
  • Transfer the fish and sliced onions carefully with a spatula to a serving platter.
  • Garnish with the parsley and lemon wedges.
  • Serve with your favorite dill sauce (my favorite Recipe #102047).

For many New Englanders, Independence Day celebrations just wouldn't be the same without the traditional meal of poached salmon with egg sauce, along with new potatoes, baby peas and, of course, strawberry shortcake (Recipe #289569). The egg sauce is a nice compliment to most any baked or broiled fish, as well as the poached salmon. Just substitute a half a cup of bottled clam juice or canned chicken broth for the poaching liquid.

1 small onion, halved
5 peppercorns
1 bay leaf
4 whole sprigs dill (plus additional sprigs for garnish)
4 salmon steaks, cut about 1-inch thick (about 1 1/2 pounds total)
3 tablespoons butter
1/4 cup all-purpose flour
1/2 cup poaching liquid, reserved from poached salmon recipe
3/4 cup canned chicken broth, divided
1/2 cup heavy cream
1 dash salt
1/8 teaspoon pepper (preferably white pepper)
1/4 cup finely chopped carrot (about half of a small carrot)
1/4 cup finely chopped onion (about half of a small onion)
2 hard-cooked eggs, peeled and coarsely chopped
2 tablespoons chopped fresh dill

Steps:

  • DIRECTIONS FOR POACHED SALMON: In a very large skillet, bring 3 cups of water to a boil over medium-high heat. Add the onion halves, peppercorns, bay leaf, and 4 sprigs of dill. Add the salmon steaks in a single layer, making that they are covered by the liquid (add more water, if necessary.) Return the liquid to a simmer over medium-high heat; reduce the heat to medium-low, cover, and simmer the fish until the salmon is opaque throughout, 8 to 10 minutes. With a slotted spatula, remove the fish to a platter and cover loosely with foil to keep warm. Reserve the poaching liquid for the Egg Sauce.
  • Make the Egg Sauce (directions follow).
  • To serve, spoon the Egg Sauce over the salmon steaks and garnish each with a fresh dill sprig, if desired.
  • DIRECTIONS FOR EGG SAUCE: In a small saucepan, bring a 1/2 cup of the chicken broth to a boil (do this as you are bringing the poaching liquid for the salmon to a boil). Reduce the heat and add the chopped carrots and chopped onions and cook for about 10 minutes, or until carrots are tender; drain the vegetables and discard broth.
  • In a medium saucepan, melt the butter over medium heat. Whisk in the flour. Stir in the 1/2 cup of reserved salmon poaching liquid, the remaining 1/4 cup of chicken broth, and cream. Increase the heat to high and cook, stirring constantly, until sauce comes to a boil, about 1 minute.
  • Whisk in the salt, pepper, and the cooked carrots and onion. Reduce the heat to low and simmer, stirring occasionally, for 10 minutes.
  • Gently stir in the chopped eggs and the chopped dill. Make about 2 cups.

1 lemon, halved
