POACHED HALIBUT WITH TOMATO AND BASIL

- Season fish with salt and pepper. In a large skillet add the oil. Arrange fish in the pan and turn to coat in oil, then add garlic, shallots and wine. Top each fillet of fish with 1/4 of the tomatoes. Place the pan on the stove top and bring the liquid to a boil over medium high heat. Top the pan with a tight fitting lid and reduce heat to moderate. Cook fish 8 to 10 minutes until opaque and flaky, but not dry. Carefully transfer fish topped with tomatoes to dinner plates or serving plate with a thin spatula. Spoon pan juices over the fish. Squeeze the wedge of lemon over the cooked fish and top each fillet with lots of torn or shredded basil. Serve immediately.
POACHED LOBSTER WITH CAVIAR MOUSSE AND DIJON MUSTARD SAUCE
Steps:
- To make the caviar mousse, mix the mustard and the whipped cream gently together until smooth. Add the finely chopped shallots, and season with salt and pepper. Gently fold in the caviar without breaking the eggs. Set aside.
- To prepare the sauce, combine the creme fraiche with the mustard until it thins out a little. Season with salt and pepper.
- To serve the dish, simply place a cookie ring on the plate. Fill the ring with the caviar mixture, and remove the ring. Place half of a lobster tail on the caviar mixture, and a lobster claw in front of it. Drizzle some mustard sauce around the food. Decorate with some algae, toast, and a sprinkle with black mustard seeds.
POACHED LOBSTERS WITH BASIL SAUCE

- Bring enough water to a boil to cover the lobsters when they are added. Put in lobsters and let water return to boil. Cook 10 minutes.
- Meanwhile, trim off ends of zucchini and steam or boil. To steam, place zucchini in top of a steamer rack and put rack over the steamer bottom containing boiling water. To boil, bring enough water to a boil to cover zucchini when added. Add the zucchini. Steam or boil the zucchini 4 minutes or until tender but still crisp. Drain.
- In the meantime, heat 1 tablespoon butter in a saucepan and add shallots. Cook until wilted. Add wine and basil. Bring to boil and cook until the liquid is almost evaporated. Add cream and bring to boil. Cook about 30 seconds. Swirl in remaining 2 tablespoons butter, salt and cayenne.
- Line a small saucepan with a sieve and pour the sauce into it. Press as much liquid as possible from the solids. Serve hot.
- Drain lobsters. It is best to remove meat from shells. It is easier, however, to split lobsters in half lengthwise and spoon small amounts of sauce on top. Serve zucchini cut into thin slices with melted butter brushed on top.

SEAFOOD IN BASIL SAUCE
Use shrimp or scallops (or a combination) in this delicious sauce flavored with basil, garlic, and oil. You can also use the sauce on poached salmon or whitefish, too. I like to serve this over pasta with some sauteed whole mushrooms and a tossed green salad. Be sure not too cook the seafood too long or it will toughen. This recipe is easily halved or doubled.

- In a blender of food processor, combine basil, garlic, olive oil, salt and 1 T. melted butter. Process until smooth.
- Heat the 2 T. butter in a heavy skillet over high heat until the butter bubbles.
- Add seafood, turning quickly in the butter to evenly coat. Reduce heat to medium. Saute, stirring, until seafood is heated through and cooked.
- Add sherry. Simmer 30 seconds. Add sauce from blender or food processor. Stir with spatula until sauce coats seafood evenly.
- Sprinkle with Parmesan cheese and parsley. Serve immediately.

- Fill large pot with enough water to completely cover lobsters. Add vinegar and bring to boil. Remove from heat and submerge lobsters.
- Steep lobsters 2 to 3 minutes. Remove lobsters from water, twist to remove knuckles and claws and return these to hot water.
- Separate tails from body of lobster (reserve body for stock or discard). Cut through cartilage on underside of lobster, pull apart and pull out tail meat in 1 piece. Cut tail in half lengthwise, remove vein and trim any loose strands. Remove claw meat intact by wiggling off small lower claw, to which a piece of cartilage is attached (be sure to remove this cartilage if it separates) and by cracking fat claw near its base to open and remove meat without damaging it. Remove knuckle meat and reserve for another use (it's great sauteed quickly in butter for a snack). Place all meat on paper-towel-lined plate, cover with plastic wrap and refrigerate until ready to use. (Allow lobster meat to sit at room temperature 1 hour before cooking if chilled.)
- To make beurre monte, bring 2 tablespoons water to simmer in large saucepan. Whisk in butter, 1 piece at a time, reducing heat to low and being careful not to boil butter. Submerge lobster tail in butter and poach over low heat until heated through, 5 to 6 minutes. (Optimum temperature of beurre monte is between 180 and 190 degrees.)

- Set up a very large ice bath. In a large pot of boiling water, cook the lobsters until they turn bright red but are not cooked through, about 6 minutes. Drain well and transfer to the ice bath to cool. Drain well.
- Twist the bodies from the lobster tails. Using scissors, cut along the underside of the shells and remove the meat. Halve the tails lengthwise and discard the dark intestines. Crack the claws and knuckles and remove the meat. Cut all the lobster meat into chunks and transfer to a bowl.
- In a medium saucepan, melt 1 stick of the butter with 2 tablespoons of water over moderate heat. Transfer the mixture to a blender. With the machine on, gradually add the remaining cold butter until emulsified. Return the butter to the saucepan and warm over medium heat, then season generously with salt and pepper. Add the lobster meat and cook over moderately low heat, stirring occasionally, until just cooked through, about 5 minutes.
- Meanwhile, in a small bowl, whisk the mayonnaise with the Dijon, mustard powder, 1 teaspoon of the lemon juice and 1 1/2 teaspoons of water. Season the mustard-mayo sauce with salt and pepper.
