ICE CREAM PIE WITH EASY CARAMEL SAUCE



Ice Cream Pie with Easy Caramel Sauce image

I can't think of anything more logical than making an ice cream pie in the dead of winter, can you? Oh...you can?

Caramel Sauce
4 tbsp. Butter
1 c. Brown Sugar, Packed
1/2 c. Half-and-half
Pinch Of Salt
1 tbsp. Vanilla
Crust
1/4 c. Egg Whites
1/4 tsp. Salt
1/4 c. Sugar
1 c. Pecans, Finely Chopped
Filling
2 pt. Ice Cream (1 Pint Each Of Different Flavors)

Steps:

  • To make the caramel sauce:Mix butter, brown sugar, half & half, and salt in a saucepan over medium low heat. Cook while whisking gently for 5 to 7 minutes, until thicker. Add vanilla and cook another minute to thicken further. Turn off heat and pour sauce into a jar. Refrigerate until cold. To make the crust:Preheat oven to 350 degrees. Beat egg whites until frothy. Add sugar and salt and beat on high until stiff. Fold in nuts. Spread mixture all over the bottom and sides of a non-glass pie pan, making sure to adequately coat the sides. Bake for 15 to 20 minutes, watching toward the end to make sure crust doesn't get too brown. Remove from oven when crust is golden brown. Allow crust to cook completely.When crust is cool, remove ice cream from freezer. Allow to soften. When soft, spread one pint of ice cream (I used Butter Brickle) over the bottom of the crust. Spread the other pint (I used Vanilla Bean) over the first flavor. Cover with foil and freeze until very hard.To serve, cut slices of pie and serve on individual plates with cold caramel sauce spooned over the top. *Note that the crust will be a bit sticky...but it's oh, so good!

WAFFLE CONE ICE CREAM PIE



Waffle Cone Ice Cream Pie image

1/2 gallon strawberry ice cream
12 waffle cones
4 tablespoons salted butter, melted
6 ounces white chocolate
1 tablespoon coconut oil
3 tablespoons rainbow sprinkles
1 cup chopped fresh strawberries
1/4 cup store-bought strawberry sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • Using an ice cream scoop, remove three large scoops ice cream to a plate. Place the plate in the freezer and return the gallon to the freezer.
  • Add 9 of the waffle cones to the bowl of a food processor. Pulse until the cones become a mix of mostly crumbs with a few larger chunks here and there. Pulse in the melted butter until well combined. Press the mixture into the bottom of a 9-inch nonstick springform pan. Bake for 5 minutes. Let cool completely, about 10 minutes.
  • Remove the rest of the ice cream from the freezer to start to soften it a little bit.
  • Meanwhile, put the white chocolate and coconut oil in a microwave-safe bowl. Microwave in 15-second increments until melted and smooth. (This time will vary based on your microwave.) Working one at a time, dip the top quarter of the 3 remaining waffle cones in the white chocolate mixture, then sprinkle with about 2 tablespoons rainbow sprinkles. Place the cones onto champagne flutes, decorated-side down, to set. (You can also set them on wax paper to set.)
  • Add the remaining softened ice cream to the crust and spread to smooth. Sprinkle the chopped strawberries over the top and gently press into the ice cream. Using a spoon, drizzle the top with the remaining white chocolate mixture. Finish with the remaining tablespoon sprinkles.
  • Remove the scoops of ice cream from the freezer and place them in the center of the pie. Top each scoop with one inverted decorated ice cream cone; be sure to place them on an angle, so they are not sitting vertically on the ice cream scoops. Transfer the pie to the freezer and let set for at least 2 hours.
  • When ready to serve, run a sharp knife around the edge of the pie to help release it from the springform pan. Remove the pie from the pan, slice and serve drizzled with the strawberry sauce.

MILE HIGH MUD PIE

2 quarts (4 pints/1/2 gallon) coffee ice cream, softened
2 cups chopped pecans
2 quarts (4 pints/1/2 gallon) chocolate ice cream, softened
2 1/2 cups chocolate-coated toffee pieces
50 chocolate sandwich cookies
1 1/2 sticks (12 tablespoons) butter, melted
2 quarts (4 pints/1/2 gallon) vanilla ice cream, softened
2 1/2 cups chocolate shell ice cream sauce, such as Magic Shell
Store-bought caramel sauce, warmed, for serving

Steps:

  • Line an 8-quart bowl with overhanging plastic wrap.
  • Tip the coffee ice cream into the bowl and smooth the surface. Sprinkle over the chopped pecans and freeze until the ice cream is firm, at least 1 hour.
  • Tip the chocolate ice cream into the bowl and smooth the surface. Sprinkle over the chocolate-coated toffee pieces and freeze until firm, at least 1 hour.
  • Meanwhile, make the crust: Put the sandwich cookies in a food processor and pulse until fine crumbs. Pour in the melted butter and pulse to combine.
  • Tip the vanilla ice cream into the bowl and smooth the surface. Tip the crust on top of the vanilla ice cream, spread it evenly and press down firmly. Freeze again until completely set, 4 hours and up to overnight.
  • Turn out the pie onto a board or serving platter lined with 4 squares of parchment arranged so that the paper overhangs the edges of the platter. Peel off the plastic wrap and pour over the chocolate shell ice cream sauce to coat the entire pie. Carefully slide out the sheets of parchment and discard.
  • To serve, cut big slices of pie, drizzle over some warm caramel sauce and stick a steak knife into the center standing up.

KING OF THE RANCH ICE CREAM PIE

1 pint chocolate ice cream, softened
One 9-inch store-bought chocolate graham pie shell
1/2 cup chopped pecans
1/2 cup caramel sauce
1/2 cup chocolate sauce
16 maraschino cherries, drained
1 pint dulce de leche ice cream, softened
One 13-ounce can whipped cream

Steps:

  • Scoop the chocolate ice cream into the chocolate graham pie shell and spread into an even layer.
  • Scatter half the pecans over the ice cream and drizzle over half of the caramel and chocolate sauces. Place in the freezer to harden for a couple hours. Place the drained cherries on a sheet pan lined with parchment paper and place in the freezer alongside the pie.
  • Remove the pie from the freezer and spread the dulce de leche ice cream over the top, smoothing the surface. Add the remaining pecans and drizzle the remaining caramel and chocolate sauces, in thin crisscrossing lines, over the top of the pie, making sure not to cover it completely. Squirt about 16 small mounds of whipped cream around the circumference of the pie. Place a frozen cherry on each mound of whipped cream. Transfer to the freezer to harden, 2 to 3 hours minimum. (Can be made up to a week in advance, just cover tightly once it has hardened.)
  • When ready to serve, use a warm knife to cut into neat slices. Enjoy.

LEMON ICEBOX PIE

12 graham crackers
1/3 cup salted butter, melted
1/3 cup granulated sugar
2 cups heavy cream
1/2 cup powdered sugar
2 teaspoons vanilla extract
1 cup lemon curd
8 ounces cream cheese, at room temperature
1/2 cup sweetened condensed milk
1/4 cup blackberries
1/4 cup raspberries
1/4 cup fresh mint leaves
1/3 cup powdered sugar

Steps:

  • For the crust: Preheat the oven to 350 degrees F.
  • Break the graham crackers, add them to a food processor and process to fine crumbs. Add the melted butter and granulated sugar and process until well combined; the texture should be that of dry sand.
  • Using the back of a measuring cup, press the crumbs firmly into a 9-inch round pie dish. Put the pie dish on a baking sheet and bake until slightly golden, about 5 minutes. Set aside to cool while making the filling.
  • For the filling: In a stand mixer fitted with a whisk attachment, whip the cream, powdered sugar and vanilla until stiff. Set aside.
  • To a clean mixing bowl, add the lemon curd, cream cheese and sweetened condensed milk and beat until smooth. Gently fold 3/4 cup of the whipped cream into the lemon curd mixture until combined.
  • Pour the filling into the cooled pie shell. Top with the remaining whipped cream and use the back of a spoon to spread it and make peaks. Freeze, uncovered, for at least 2 hours. (If storing longer, after 2 hours in the freezer remove, cover and return to the freezer. Store for up to 48 hours in advance. If freezing overnight or longer, remove from the freezer 10 to 12 minutes before slicing.)
  • For serving: If desired, top with the blackberries, raspberries and mint. Dust with powdered sugar.

NO-CHURN CHOCOLATE DREAM ICE CREAM



No-Churn Chocolate Dream Ice Cream image

2 1/2 cups heavy cream
1/4 cup powdered sugar
1 tablespoon vanilla extract
One 14-ounce can sweetened condensed milk
1/4 cup unsweetened cocoa powder
6 ounces semisweet chocolate, melted and cooled, plus 1/2 cup semisweet chocolate chips
6 ounces white chocolate, melted and cooled, plus 1/2 cup finely chopped white chocolate
Assorted chocolate sprinkles and toppings, for garnish

Steps:

  • Chill a 9-inch loaf pan or glass container in the freezer.
  • Add the heavy cream, powdered sugar and vanilla extract to the bowl of an electric mixer. Using a whisk attachment, whip until stiff. Fold in the condensed milk. Divide the mixture between 2 large bowls.
  • To one of the bowls, add the cocoa powder, melted semisweet chocolate and chocolate chips, then fold into the whipped cream.
  • To the second bowl of whipped cream, add the melted white chocolate and chopped white chocolate, then fold in.
  • Layer the different cream bases into the chilled loaf pan a couple spoonfuls at a time. (There is no rhyme or reason when layering; you want it to be imperfect.) Once all of the base has been added to the pan, swirl the two using a skewer or butter knife. Sprinkle an assortment of sprinkles over the top and wrap lightly with plastic wrap. Freeze overnight.
  • When ready to serve, scoop into individual glasses and top with additional sprinkles.
