- Preheat the oven to 425 degrees F.
- Slice the focaccia round in half through the middle to create 2 rounds. Place cut-side up on a baking sheet. Brush the bread with the olive oil and season with a pinch of salt and pepper.
- Spoon 1/4 cup of the marinara over each round and sprinkle the provolone over the top, making sure to leave the outer edge of the focaccia rounds exposed. Over the cheese, distribute the sausage slices, hot cherry peppers, kalamata olives, artichokes and Manzanilla olives across each round.
- Bake until the edges are golden and the cheese is melted, 10 to 12 minutes. Dot or drizzle the pizzas with the pesto and sprinkle with the Parmesan and basil. Slice and serve.
CAST-IRON PIZZA

- Place a 12-inch cast-iron skillet in the oven and preheat to 500 degrees F.
- Meanwhile, roll or stretch the dough into a 14-inch circle. Carefully remove the skillet from the oven. Drizzle two thirds of the olive oil into the skillet, then carefully transfer the dough to the skillet, pressing the dough up the edges. Spread the sauce over the dough, making sure to get all the way to the edges. Shingle the pepperoni over the sauce and top with the mozzarella pearls. Brush the exposed dough with the remaining olive oil. Bake on the bottom rack until golden brown, 12 to 14 minutes.
- Transfer to a cutting board, top with torn basil, cut into slices and serve.
PIZZA POCKETS

- For the dough: Sprinkle the yeast over 3 cups warm (not lukewarm) water. Let stand for a few minutes.
- In a mixer, combine the flour and salt. With the mixer running on low speed (with a paddle attachment), drizzle in the olive oil until combined with the flour. Next, pour in the yeast/water mixture and mix until just combined and the dough comes together. (The dough will be sticky.) Form the dough into a ball.
- Coat a separate mixing bowl with a light drizzle of olive oil and toss the dough in the olive oil to coat. Cover the bowl tightly with plastic wrap and set it aside for 1 hour to rise. Then put it in the fridge to chill for 2 hours or longer. (The dough is much easier to work with when very cold.)
- For the mushroom version: Add the olive oil to a pan with the heat on medium and saute the garlic and onions for about a minute. Add the mushrooms and thyme and saute for 3 minutes. Add the white wine and reduce for a couple of minutes until most of the liquid is gone. Season with salt and pepper. Let cool to room temperature.
- For the meat version: Crumble the Italian sausage into a skillet with some olive oil and brown until cooked through, 5 minutes. Let cool.
- When you are ready to make the pizza pockets, take half the dough and roll it out into a large rectangle. Cut into 18 rectangles with a rectangular cutter. Put 9 of the rectangles onto a baking sheet and top them with the fillings for the meat version: some marinara sauce, mozzarella, sausage, pepperoni and Canadian bacon. Lay the other 9 rectangles on top and crimp the edges with a fork. Brush with the beaten egg. Put into the freezer to flash-freeze for 30 minutes.
- Repeat with the other half of the dough and the fillings for the mushroom version: some mozzarella, goat cheese and the sauteed mushrooms.
- When the pockets have been flash-frozen, transfer to ziptop bags and store in the freezer.
- When ready to cook, place on a baking sheet and bake at 450 degrees F for 10 to 12 minutes.
PIZZA GRILLED CHEESE

- Preheat the oven to 425 degrees F.
- In a medium bowl, using a rubber spatula, mix together the ricotta, mozzarella, 1/2 cup of the Parmesan, the diced pepperoni and the basil until well combined.
- Butter one side of each slice of bread. Working buttered side down, spread each slice with 1 tablespoon of the marinara. Divide the cheese mixture among 6 slices of the bread, and sandwich with the remaining slices. For each sandwich, sprinkle the top piece of bread with 1 tablespoon of the remaining Parmesan. Flip, and sprinkle the other side with an additional tablespoon of Parmesan.
- To make all of these sandwiches at once, heat 2 baking pans in the oven for 10 minutes. Spray the bottom of one of the pans with cooking spray, and place the buttered and Parmesan-ed sandwiches in the pan. Spray the underside of the second pan, and place it on top of the sandwiches. Bake until golden brown and crispy, and the cheese is melted, 10 minutes.
- Cut each sandwich into 3 pieces. Using a few shreds of mozzarella cheese as glue, make a face using the black olive slices as eyes, the green olive slices as a nose, and the pepperoni slices as a mouth. Melt for 4 minutes in the oven to adhere.
- Serve with marinara for dipping if desired.
PIZZA GRILLED CHEESE

- In a small bowl, mix together the butter, Parmesan, Italian seasoning and crushed red pepper. Brush one side of each slice of bread with this mixture.
- Heat a nonstick skillet over medium heat. Lay one piece of the bread, butter-side down, in the skillet. Spread 1 tablespoon marinara sauce on the bread and layer on the mozzarella, provolone, pepperoni, pepper slices, olives and basil leaves. Top with the second slice of bread, butter-side up. Toast in the skillet, flipping as needed, until the bread is golden and the cheese has melted, 4 to 5 minutes.
- Remove from the skillet and slice in half. Serve with the remaining 1/4 cup marinara on the side.
GRILLED FRUIT PIZZAS

- For the cookie crust: Preheat the oven to 350 degrees F.
- In a large bowl, cream the granulated sugar, butter, vanilla and lemon and lime zests thoroughly. Add the eggs and beat until light and fluffy. Add the milk and mix. In a medium bowl, sift together the flour, baking powder and salt. Blend the flour mixture into the butter and sugar mixture. Divide the dough in half, flatten into discs and wrap with plastic wrap. Refrigerate for 1 hour or freeze for 20 minutes.
- Roll out the 2 pieces of dough and put each one on a baking sheet. Bake until the cookie dough is cooked and golden brown but not overly crisp, 8 to 10 minutes. Allow to cool completely.
- For the topping: Using a mixer with the whisk attachment, whip together the cream cheese, powdered sugar, vanilla and lemon zest in a medium bowl until light and fluffy.
- For the apple jelly glaze: Mix the apple jelly and 3 tablespoons water together in a bowl.
- For the grilled fruit: Heat a grill pan to medium-high heat and oil with the coconut oil. Thread the strawberries, kiwis, peaches and pineapple slices separately onto skewers (there should be about 2 skewers per type of fruit) and lay them onto a plate. Brush with apple jelly glaze. Turn the skewers over and brush the other side with more glaze.
- Grill the fruit, turning once, until grill marks appear, 2 to 3 minutes. Remove the fruit from the skewers, placing each type of fruit into individual bowls.
- Serve the cooled crusts with the cream cheese topping, bowls of grilled fruit and the remaining apple jelly glaze. Let everyone build their own pizza by spreading the topping onto the crust, decorating with as much fruit as desired and finishing with a final brushing of apple jelly glaze for gloss!
