CHOCOLATE CHUNK COOKIES
Steps:
- ***Note: The amount of instant coffee should have been 2 heaping teaspoons, not 2 heaping tablespoons. I apologize for this error in the recipe entry! Add one stick of butter to a medium skillet over medium heat. Allow it to melt and bubble up for 3 to 4 minutes, swirling the pan to keep the butter moving around. When the butter is a medium golden brown, remove the pan from the heat (it will continue browning in the pan over the next 30 seconds or so!) Pour butter (and any solids in the bottom of the pan) into a heatproof bowl and allow it to cool completely, about 30 minutes. Meanwhile, allow the other stick of butter to soften.Preheat the oven to 375 degrees*.Cream the softened butter together with the brown sugar and regular sugar until it's nice and combined. Add the eggs and vanilla, and beat until smooth, scraping the bowl if necessary to make sure everything is incorporated.With the mixer on medium-low, very slowly drizzle in the cooled melted butter, making sure to add all the darker brown solids. Scrape the bowl the mix again for 20-30 seconds, until everything is combined.In a separate bowl, combine the flour, coffee granules, baking soda and salt. Stir together, then add it in 1/3 increments, mixing on low, until it's totally incorporated. Scrape the bowl and beat for a few more seconds. Stir in the chocolate chunks and nuts, if using. In batches, scoop by heaping teaspoon onto a baking sheet lined with a baking mat, Press extra chocolate chunks into the tops of each cookie, if desired. Refrigerate scoped cookies for 15 minutes, then bake for 9 to 10 minutes, or until golden brown. Remove from oven, then transfer cookies to a cooling rack. Repeat with the rest of the dough. Serve cookies with a big glass of cold milk!

- Preheat oven to 375 degrees.In a bowl, stir together butter, margarine, brown sugar, and white sugar until combined. Add eggs and vanilla and stir together.In a separate bowl, stir together flour, instant coffee, baking soda, and salt. Add to wet ingredients in batches, stirring gently after each addition. Stir in flax seed if desired.Stir in chocolate chips.Drop balls of dough on a cookie sheet and bake for 11 to 13 minutes. Remove from cookie sheet and eat warm.Die from guilty pleasure.
PIONEER BOULANGERIE CHOCOLATE CHIP BUTTER COOKIES
I couldn't believe my luck when I found this recipe in "The Los Angeles Times California Cookbook" (1981). The Pioneer Boulangerie was a fabulous bakery/restaurant in the Ocean Park area of Santa Monica; my friends and I lived on these fabulous chocolate chip cookies for years! The Boulangerie disappeared some time in the 1990s, but it's great to know these cookies can still be enjoyed.

- Cream together butter and two cups of powdered sugar.
- Add salt, vanilla, and flour and mix until blended. Mixture will be stiff!
- Stir in chocolate pieces.
- Pinch off pieces of dough. Roll into 1" balls and flatten with a fork on a baking sheet.
- Bake at 350 for 15 minutes. Sprinkle with additional powdered sugar while still hot.

- Line 3 baking sheets with parchment.
- In the bowl of an electric mixer, cream together the butter, granulated sugar and brown sugar until light and fluffy, 2 to 3 minutes, scraping the sides of the bowl as needed. Add the vanilla and eggs and beat on medium speed until just combined. Add the flour, baking soda and kosher salt and mix on low speed until just combined. Remove the bowl from the mixer and stir in the chocolate chunks using a wooden spoon or spatula.
- Use a 1/4-cup scoop to scoop the cookies, making sure to scrape the scoop against the side of the bowl to flatten off the top. Scoop onto the lined baking sheets about 2 inches apart to give them space to spread while baking. Sprinkle a pinch or two of sea salt on top of each cookie dough mound. Refrigerate, uncovered, at least 20 minutes.
- Preheat the oven to 350 degrees F.
- Bake until golden brown, 17 to 18 minutes. Let the cookies cool and crisp up on the baking sheets.
FINALLY HEALTHY CHOCOLATE CHIP COOKIES!
I found this recipe on a heart healthy recipe site. I made them and they are incredible! I couldn't believe it! They are the lowest fat/cholesterol/sodium chocolate chip cookies I've had that actually taste great! I did change it a bit when I made them by using 1/2 C whole wheat flour and 1/2 C all purpose flour.

- Spray cookie sheets with nonstick cooking spray of your choice.
- grind oats in blender or food processor until fine and add to medium bowl.
- stir in flour, baking soda, salt and stir until blended.
- beat butter until fluffy, add oil, sugar, brown sugar, egg, and vanilla and beat until smooth.
- add dry ingredients a little at a time and beat until combined.

CHOCOLATE CHIP BUTTER COOKIES
I have a personal list of my top 15 favorite cookie recipes, and this has been Number 1 for years. I cannot remember where I got the recipe from, but it is a good one. I made a platter a few months ago for a friend giving a luncheon at her job, and the cookies were almost gone before people even finished the entrees. People were coming into the room, grabbing handfuls and pocketing them, thinking nobody was watching. I have to admit, I was very flattered! Note: The recipe calls for 4 sticks of butter or margarine. Do not substitute anything else, like oil, or shortening, or applesauce -- it just won't be the same. I use either all butter, or often will use 1/2 butter and 1/2 margarine, with no loss of quality in the results. The recipe halves easily.

- Preheat oven to 350.
- It is not necessary to grease the cookie sheets.
- Cream together the butter or margarine with the 2 cups of powdered sugar.
- Add the salt, vanilla and 3 1/2 cups flour, and mix until blended; the mixture should be fairly stiff, so add more flour if needed.
- Stir in the chocolate chips.
- Pinch off pieces of dough, roll into about 3/4" balls (you can make them larger if you prefer), place on the cookie sheets about 2" apart, and flatten with a fork on baking sheet twice for each cookie, making a criss-cross pattern and flattening cooking about halfway.
- Bake for 12-15 minutes, or until just very lightly beginning to brown around the edges.
- Let the cookies sit on the cookie sheet for about a minute, then remove to a rack and dust lightly with additional powdered sugar.
- Dust again when cookies are completely cooled, or store as is, and dust a 2nd time after putting on a platter to serve.
- Makes about 64 cookies; recipe halves easily.
