1 pkg. (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding
1 can (20 oz.) crushed pineapple in juice, undrained
1/2 cup chopped walnuts
3-1/4 cups JET-PUFFED Miniature Marshmallows, divided
2 tubs (8 oz. each) COOL WHIP Whipped Topping, thawed
3 maraschino cherries with stems

Steps:

Combine dry pudding mix, pineapple, nuts and 1 cup marshmallows in large bowl. Gently stir in 1 tub COOL WHIP.
Add 2 cups of the remaining marshmallows to remaining COOL WHIP in separate bowl; mix lightly.
Layer half each of the pudding mixture and marshmallow mixture in large serving bowl; repeat layers. Top with remaining marshmallows and cherries. Refrigerate 1 hour.

1 (16 ounce) carton Cool Whip (or use reduced fat)
1 (8 ounce) package cream cheese, softened (or use reduced fat)
1 (20 ounce) can crushed pineapple, drained
1 cup walnuts, chopped

Steps:

Mix Cool Whip and cream cheese with a mixer. Fold in pineapple and walnuts. Pour into a dish, garnish with chopped walnuts and chill overnight.
FOR VARIATIONS: a small package of pistachio pudding (or any other flavor you like), and some small marshmallows can be added to the ingredients above and its taste is excellent, too.
Another option is to add a small package of lime or lemon jello dissolved in a cup of boiling water. Let it set and add the ingredients above. Serve and decorate with some cherries on top.

1 cup all-purpose flour
1/2 cup cold butter
1 cup chopped walnuts, toasted, divided
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
2 cartons (8 ounces each) frozen whipped topping, thawed, divided
2-1/2 cups 2% milk
2 packages (3.9 ounces each) instant chocolate pudding mix
1 cup semisweet chocolate chunks
Chocolate syrup

Steps:

Preheat oven to 350°. Place flour in a small bowl; cut in butter until crumbly. Stir in 1/2 cup walnuts. Press onto bottom of an ungreased 13x9-in. baking dish. Bake until light golden brown, 12-15 minutes. Cool completely on a wire rack., In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in 1 carton whipped topping. Spread over crust. In a large bowl, whisk milk and pudding mix for 2 minutes. Gently spread over cream cheese layer. Top with remaining whipped topping. Sprinkle with chocolate chunks and remaining walnuts. Refrigerate until cold., Cut into bars. Just before serving, drizzle with chocolate syrup.
