PINEAPPLE SWEET ROLLS

Yield 2-1/2 dozen.

Number Of Ingredients 18

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1-1/2 cups warm whole milk (110° to 115°)
6 tablespoons butter, melted
1 cup sugar
1 teaspoon salt
2 large eggs, beaten
6 to 6-1/2 cups all-purpose flour
FILLING:
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 cup orange juice
2 tablespoons grated orange zest
1 can (8 ounces) crushed pineapple, drained
1/3 cup sugar
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon orange juice

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, salt, eggs and 1-1/3 cups flour; beat until smooth. Stir in enough of the remaining flour to form a soft dough. , Turn onto a floured surface, knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, melt butter in a saucepan. Stir in flour until smooth; gradually add orange juice. Stir in remaining filling ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool. , Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each half into a 15x12-in. rectangle. Spread filling evenly over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 1-in. rolls. Place with cut side down into two greased 13x9-in. baking pans. Cover and let rise until doubled, about 1 hour. , Bake at 350° for 20-25 minutes. Cool. Combine glaze ingredients; drizzle over rolls.

2 packages (8 ounces each) cream cheese, softened
1 can (8 ounces) unsweetened crushed pineapple, drained
1/4 cup finely chopped green pepper
2 tablespoons finely chopped onion
2 teaspoons seasoned salt
1-1/2 cups finely chopped walnuts
Optional: Assorted crackers and fresh vegetables

Steps:

  • In a small bowl, beat cream cheese, pineapple, green pepper, onion and seasoned salt until blended. Cover and refrigerate for 30 minutes. Shape into a ball (mixture will be soft); coat in walnuts. Cover and refrigerate overnight. Serve with crackers and vegetables.

2 (8 ounce) packages cream cheese, softened
10 tablespoons granulated sugar
1 egg, separated
1 teaspoon vanilla
1 teaspoon lemon juice
1/2 cup crushed pineapple, drained
2 (8 ounce) packages refrigerated crescent dinner rolls
1/2 cup powdered sugar
3 teaspoons milk
1/4 cup chopped nuts (optional)

Steps:

  • In food processor blend togehter cream cheese, sugar, egg yolk, lemon juice and vanilla.
  • Unfold 1 package crescent rolls. Place the two lengths together, side by side on waxed paper. Cover with another piece of waxed paper. Roll out to fit a 10″×15″ jelly roll pan (cookie sheet).
  • Ease dough into ungreased pan, spreading with hands as needed to fit pan. Evenly spread cream cheese mixture over top and sprinkle with pineapple.
  • Roll out remaining package of dough. Cut into strips 3/4" wide. Crisscross strips on top of cheese mixture, lattice style. Use leftover strips if desired, to form a border around pastry.
  • Lightly beat egg white and brush over top. Bake at 350 for 25-30minutes or until golden. Cool 30 minutes.

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1/2 cup butter, softened
5 tablespoons sugar
2 large eggs
1/4 teaspoon salt
4-1/4 to 4-1/2 cups all-purpose flour
PINEAPPLE FILLING:
1 can (8 ounces) crushed pineapple, undrained
1/2 cup sugar
3 tablespoons cornstarch
CREAM CHEESE FILLING:
2 packages (8 ounces each) cream cheese, softened
1/3 cup sugar
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
ICING (optional):
1 cup confectioners' sugar
2 to 3 tablespoons milk

Steps:

  • In a large bowl, dissolve yeast in water. Add butter, sugar, eggs, salt and 2 cups flour; beat on low speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , For pineapple filling, combine the pineapple filling ingredients in a saucepan. Bring to a boil over medium-high heat; reduce heat to medium. Cook and stir until thickened. Cool. In a bowl, combine cream cheese filling ingredients; mix well. , Punch dough down. Divide dough in half. On a floured surface, roll each portion into a 15x9-in. rectangle. Place on greased baking sheets. Spread the cream cheese filling lengthwise down center third of each rectangle. Spread the pineapple filling on top. , On each long side, cut 1-in. wide strips 3 in. into center. Starting at one end, fold alternately strips at an angle across filling. Seal ends. Cover and let rise for 20 minutes. , Bake at 350° for 25-30 minutes or until golden brown. Cool. If desired, combine icing ingredients and drizzle over braids. Store in refrigerator.

1 (8 1/2 ounce) can crushed pineapple, drained
2 tablespoons finely chopped green onions
1/4 cup minced green pepper
1 tablespoon season salt
1 cup chopped pecans

Steps:

  • Be sure all the juice is squeezed out of the pineapple, then combine the pineapple with the cream cheese, onions, minced green pepper and seasoned salt.
  • Mix well.
  • Refrigerate at least 4 hours or overnight.
  • Shape into a log and roll in the chopped pecans.
  • Refrigerate until ready to serve.

12 frozen dinner roll dough (We used Rhodes rolls)
1 (7.5 ounce) package sliced deli ham
12 slices Swiss cheese
1 (20 ounce) can Pineapple chunks (drained)
1 Tablespoon butter

Steps:

  • Thaw frozen rolls in a storage bag for about 1 1/2 hours. You don't want them to rise, just thaw.
  • After the rolls are thawed (but not risen), stretch out each roll and lay it flat on a greased cookie sheet.
  • Place a slice of ham on each roll.
  • Then top with a slice of cheese.
  • Place 3 pieces of pineapple chunks on top of cheese.
  • Fold the dough over the toppings and pinch the edges together.
  • Try to not have any holes in your dough, as your cheese will melt out of it.
  • Bake at 350 degrees for 15-20 minutes, or until golden brown.
  • Remove from oven and rub butter on top of the rolls.
  • Let cool a few minutes before serving.
