One salad I remember fondly was just thinly sliced cabbage with pineapple chunks and pecans. Momma made dressing with mayonnaise, vinegar and a little sugar.

Ingredients

1/2 cabbage head
1 can(s) pineapple chunks 8.25 oz.
1/2 c pecans
2 Tbsp sour cream
1/4 c mayonnaise
1/2 lemon, squeezed
1 Tbsp sugar

Steps:

1. Slice the cabbage thin and place in bowl
2. Drain juice, then scatter chunks of pineapple over cabbage
3. Toss in chopped pecans
4. Make a dressing with sour cream, mayonnaise, lemon juice, and sugar to taste
5. Toss with dressing just before serving

1 red apple, grated
1/2 small cabbage, shredded very finely
2 tablespoons radishes, shredded finely
1/2 cup boiled peas
salt

Steps:

Soak shredded cabbage in salted water (boiling water).
Drain.
Add grated pineapple and other ingredients and toss.
Serve with meat dishes.

3/4 cup mayonnaise
2 tablespoons sugar
2 tablespoons cider vinegar
1 to 2 tablespoons 2% milk
4 cups shredded cabbage

Paprika, optional

Steps:

For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat., Refrigerate until serving. If desired, sprinkle with paprika.

6 cups thinly sliced cabbage
1 tablespoon olive oil
2 tablespoons honey mustard salad dressing
1/8 teaspoon white pepper

Steps:

Drain pineapple, reserving 1 tablespoon juice; set aside. In a large skillet, saute cabbage in oil for 5-8 minutes or until crisp-tender. Add the salad dressing, pepper and reserved pineapple and juice. Cook for 1 minute or until heated through.

2 tablespoons chopped fresh flat-leaf parsley

Steps:

In a small bowl, whisk together the oil, vinegar, and salt. Put the remaining ingredients in a large bowl. Add the dressing and toss to mix. Refrigerate for at least an hour. Serve cold. I have recently discovered many salads that are unique, both in ingredients and dressings. This is another that I just tried and it is so fabulous!

Ingredients

6 slices bacon
1/4 cup pineapple juice
3 tablespoons red wine vinegar
1/4 cup olive oil
salt and black pepper
1 (10 ounce) package chopped romaine lettuce
1 cup pineapple chunk
3 green onions, chopped
1/2 cup sliced almonds
1/4 cup toasted flaked coconut

Steps:

Cook bacon until crisp over medium high heat.
Drain, crumble and set aside.
Combine pineapple juice, red wine vinegar and salt and pepper in a small bowl.
Whisk in olive oil slowly.
On a large platter, place Romaine lettuce, pinepple chunks and green onions.
Pour dressing over and toss.
Top with almonds, crumbled bacon and coconut and serve.
