1/2 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup cold butter
FILLING:
1 can (8 ounces) crushed pineapple
1 package (8 ounces) cream cheese, softened
3 tablespoons sugar
1 tablespoon all-purpose flour
1 large egg, lightly beaten
1 cup milk
1 teaspoon vanilla extract
Ground cinnamon

Steps:

  • In a bowl, combine the flour, sugar and salt; cut in butter until mixture is crumbly. Press into an ungreased 8-in. square baking dish. Bake at 325° for 12 minutes. Cool on a wire rack. , For filling, drain pineapple, reserving the juice; set pineapple and juice aside. In a large bowl, beat the cream cheese, sugar and flour. Add egg; beat on low just until combined. Add pineapple juice. Gradually add milk and vanilla. Sprinkle pineapple over crust. Slowly pour filling over pineapple. Sprinkle with cinnamon. , Bake at 325° for 1 hour or until a knife inserted in the center comes out clean. Cool on wire rack for 1 hour. Store in the refrigerator.

Steps:

  • In a large bowl, combine butter and sugar. Combine flour and baking powder; add to butter mixture. Add egg; mix until well blended and crumbly. Add milk and blend until dough forms a soft ball., Pat dough onto bottom and 1-1/2 in. up sides of a greased 13-in. x 9-in. baking dish. Place pineapple in a sieve over a 4-cup glass measure; press with the back of a spoon to squeeze dry. Spread pineapple evenly over bottom crust, reserving juice in glass measure; set aside., In a large bowl, beat the cream cheese, sugar and flour. Add the egg yolks, lemon juice and vanilla; mix well. Add enough milk to reserved pineapple juice to measure 2-1/2 cups. Stir milk mixture into cream cheese mixture until well combined., In a large bowl, beat egg whites on high until stiff. 1/3 cup butter, melted
1 (43 g) package Dream Whip
1 (250 g) package cream cheese, softened
1 (8 1/4 ounce) can crushed pineapple, drained
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Mix together graham wafer crumbs and melted butter until well blended. Remove 1/2 cup for the topping. Pack remaining crumbs in 8-inch square baking pan.
  • Bake in oven for 10 minutes, remove pan and allow base to cool completely.
  • Prepare Dream Whip as directed on package. Set aside.

This a recipe the was given to me by my soon-to-be mother-in-law because I told her that I would love to have recipes from my fiance's childhood to make and surprise him with. These squares are so awesome! They are not too sweet, and at great cold out of the refrigerator. I wish my mother would have known how to make them when I was a child. LoL! Thank goodness I didn't go a lifetime without them.

1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 egg yolk
1 2/3 cups canned crushed pineapple with juice
1 lb cottage cheese
1 egg yolk
2/3 cup milk
1 teaspoon sugar
1 (1/4 ounce) package dry active yeast
1/4 cup lukewarm water (105 degrees)
4 egg yolks
4 cups flour
1 cup cold butter, cut into small cubes

Steps:

  • Mix 1/2 cup sugar, cornstarch, and salt in a sauce pan.
  • Stir in 1 egg yolk and pineapple.
  • Cook over medium-medium-high heat until think.
  • Set aside to cool completely.
  • In a medium bowl, mix together cottage cheese and 1 egg yolk and set aside.
  • Scald milk
  • Add teaspoon of sugar to milk and set aside to cool to lukewarm.
  • Dissolve yeast in lukewarm water for 1-2 minutes.
  • Add yeast mixture to milk and set sit until lots of little bubbles form on surface.
  • In a large bowl cut together butter and flour until in resembles a course meal.
  • Stir yeast mixture into the flour mixture
  • On a floured surface, roll out 2/3's of the dough to fit the bottom of a 16-10" baking pan.
  • Spread cottage cheese mixture over dough followed by pineapple mixture.
  • Roll out remaining dough and cut into lattice strips.
  • Lay the strips in an over-under pattern across the top of the pineapple mixture to give the lattice effect.
  • Cover and let rise in a moist warm area for 1 hour.
  • Bake in a preheated oven for 35-40 minutes.

½ cup confectioners' sugar
½ cup sliced almonds
⅔ cup butter
2 (8 ounce) packages cream cheese, room temperature
½ cup white sugar
2 eggs
⅔ cup unsweetened pineapple juice
¼ cup all-purpose flour
¼ cup white sugar
1 (20 ounce) can crushed pineapple, drained with juice reserved
½ cup heavy cream, whipped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine 2 cups flour, confectioners' sugar, and almonds. Cut in butter until mixture resembles coarse crumbs. Press crust mixture into the bottom of an ungreased 9x13-inch pan. Bake in preheated oven for 15 to 20 minutes, until lightly browned. Set crust aside, and leave the oven on.
  • While the crust is baking, prepare the cream cheese layer. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Beat in eggs one at a time. Blend in 2/3 cup unsweetened pineapple juice. Pour over hot crust and bake until filling is set, about 20 minutes more. Allow to cool completely.
  • Make the topping: In a saucepan, combine 1/4 cup flour, 1/4 cup sugar and 1 cup reserved pineapple juice. Bring to a boil and stir for 1 minute. Remove from heat and stir in crushed pineapple. Cool completely. When cool, fold in whipped cream. Spread topping over cream cheese layer. Refrigerate 4 hours before serving.

2/3 cup softened butter
1/2 cup toasted and finely chopped almonds (food processor)
1/2 cup powdered sugar

2 eggs
2/3 cup pineapple juice
1/4 cup flour
1/4 cup sugar

Steps:

  • For the crust:.
  • Heat oven to 350.
  • Mix all crust ingredients with a fork and press into 9x13" pan.
  • Bake 15 to 20 minutes or until set.
  • For The Filling:.
  • In a bowl beat cream cheese until smooth and fluffy.
  • Beat in 1/2 cup sugar and the eggs.
  • Stir in 2/3 pineapple juice.
  • Pour over hot crust and bake about 20 minutes or until middle is set.
  • Cool completely.

  • Heat to a boil over medium heat, stir for 1 minute.
  • Remove from heat and fold in pineapple.

  • Beat whipping cream in a chilled bowl until stiff.
  • Fold in the cooled pineapple mixture.
  • Spread carefully over top of cream cheese and crust.
  • cover and chill for 4 hours.

These squares are so popular in our N. E. Pa. area and are often requested for bake sales. At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

3 (20 ounce) cans crushed pineapple
1 2/3 cups granulated sugar
3 teaspoons minute tapioca
5 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
2 whole eggs
1 cup butter or 1 cup margarine
3/4 cup milk (start with 1/2 cup milk)

Steps:

  • Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
  • Dough:.
  • In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
  • Add the sugar, salt, baking powder, baking soda and mix well.
  • Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
  • Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
  • Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
  • Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
  • Again, flour surface and roll out other piece of dough and place on top.
  • Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
  • Let cool. Cut into desired squares. May be dusted with confectioners sugar.

  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
  • Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.

Aunt Hattie made a living out of baking this, and Placek, pound cake and other Polish recipes to order. That kept her pretty busy. A very old treasured family recipe. Jarred fruit filling (such as Solo brand) may be used instead of the home-made pineapple filling. Not quite as good though. And you might need more than one jar. Might as well bite the bullet and just make it yourself!

1 small fresh yeast cake (or 1 pkg. dry yeast)
1/2 cup scalded milk, cooled
3 egg yolks
1/2 lb butter
3 cups sifted flour
2 tablespoons sugar
1 teaspoon salt
1 (20 ounce) can crushed pineapple, undrained
1 -2 tablespoon cornstarch, just enough to thicken slightly

Steps:

  • To start, make a pineapple filling by mixing a large can of crushed pineapple with cornstarch and simmering until thick. Might need a little fresh lemon juice to make tastier. Cool.
  • Mix together and set aside yeast, milk, egg yolks; this is the sponge. If using dry yeast, dissolve it in a little water first.
  • Mix as for pie crust: butter, flour, sugar, salt
  • Mix with the sponge.
  • Divide dough in half. Roll out half of the dough and line a 15 x 11 jellyroll pan.
  • Cover with the pineapple filling. Yes, it's a pretty thin layer. Supposed to be!
  • Roll second half, cut in strips and lattice over top
  • Let raise 1 hour. Bake at 350 for 35 minutes.
  • Drizzle with following frosting and sprinkle with chopped nuts if desired.
  • Frosting: 1 T butter, /2 t vanilla, powdered sugar.
