When I started bringing this distinctive dish to holiday dinners, a lot of people had never seen barley in anything but soup. They have since dubbed me "the barley lady", and now I wouldn't dare bring anything this dish. Even if I double the recipe, I come home with an empty pan. -Renate Crump, Los Angeles, California

Number Of Ingredients 10

1 medium onion, chopped
1 cup medium pearl barley
1/2 cup slivered almonds or pine nuts
1/4 cup butter, cubed
1/2 cup minced fresh parsley
1/4 cup thinly sliced green onions
1/4 teaspoon salt
1/8 teaspoon pepper
2 cans (14-1/2 ounces each) beef broth
Additional parsley and green onions, optional

Steps:

  • In a large skillet, saute the onion, barley and nuts in butter until barley is lightly browned. Stir in the parsley, green onions, salt and pepper. , Transfer to a greased 2-qt. baking dish. Stir in broth. Bake, uncovered, at 350° for 1-1/4 hours or until the barley is tender and the liquid is absorbed. If desired, sprinkle with additional parsley and green onions.

1 cup uncooked hulled or pearl barley
1 1/2 cups vegetable juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium stalks celery, sliced (1 cup)
1 medium bell pepper, chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 can (14 oz) vegetable or chicken broth
4 medium green onions, sliced (1/4 cup)
1/4 cup pine nuts, toasted

Steps:

  • In 3- to 4-quart slow cooker, mix all ingredients except green onions and nuts.
  • Cover; cook on Low heat setting 6 to 8 hours.
  • Stir in green onions and nuts.

1/2 cup chopped celery (or sliced mushrooms)
1/2 cup chopped green onion
4 tablespoons margarine
1 cup barley
1/3 cup chopped parsley
2 -3 cups chicken broth
1/2 cup pine nuts
salt and pepper

Steps:

  • Saute celery or mushrooms and onion in margarine until soft.
  • Add barley and cook until golden.
  • In a 2 quart casserole, combine barley mixture, parsley and 1 cup chicken broth.
  • Bake covered at 350 degrees for 30 minutes.
  • Stir in pine nuts and 1 cup chicken broth.
  • Bake uncovered for 45 minutes or until barley is tender.
  • If necessary, add more broth.
  • Season with salt and pepper to taste.

1 cup uncooked pearl barley
1 1/2 cups V8 vegetable juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium celery ribs, sliced
1 medium bell pepper, chopped
1 medium onion, chopped
1 (14 1/2 ounce) can ready to serve vegetable broth
4 medium green onions, sliced
1/4 cup pine nuts, toasted*

Steps:

  • Mix all ingredients except green onions and nuts in a 3 1/2 to 6 quart slow cooker.
  • Cover and cook on low heat 6 to 8 hours or until barley is tender, don't cook too long or barley will be gummy.
  • Stir in green onion and nuts.
  • *To toast nuts, bake uncovered in ungreased pan in 350F oven about 10 minutes, stir occasionally, until golden brown.

1 cup pearl barley
6 tablespoons butter
3 ounces pine nuts (1/3 cup)
1 cup chopped scallion (including green tops)
1/2 cup chopped fresh parsley or 2 1/2 tablespoons dried parsley
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/3 cups chicken broth

Steps:

  • Preheat your oven to 350°; rinse the barley in cold water and drain.
  • In a medium skillet, heat the butter and brown the pine nuts, be careful, they burn easily so watch them; remove with a slotted spoon and reserve.
  • Saute the scallions and barley until the barley is lightly toasted; remove from the heat and stir in the nuts, parsley, salt and pepper- spoon this mixture into an ungreased 2-quart casserole dish.
  • Heat the broth to boiling and pour over the barley mixture; stir to blend well, bake, uncovered, for 1 hour and 10 minutes.
