- In a 2-qt. pitcher, combine pineapple juice, cream of coconut and rum. Refrigerate, covered, until chilled. For each serving, add a generous cup of rum mixture and 1 cup ice to a blender. Process, covered, until smooth. Pour into a chilled hurricane or highball glass. Cut a 1-in. slit into tip of a pineapple wedge; slide wedge over rim of glass.

- Sprinkle gelatine over hot water and stir to dissolve.
- Combine coconut milk powder and warm water, place in a mixing bowl with cream, condensed milk and rum and beat until thick.
- Beat in gelatine, fold in pineapple and spoon into serving glasses.
- Refrigerate until set.

- In a large bowl, combine first three ingredients until smooth. Fold in pineapple, coconut and nuts. Divide and pour mixture into prepared crusts. Refrigerate, covered, until firm, at least 4 hours. If desired, serve with additional whipped topping and cherries.

- Sprinkle gelatine over water in small bowl, stand in pan of simmering water, stir until dissolved (or microwave on High 30 secs). Cool to room temp, do not allow to set.
- Divide pineapple between 4 glasses (approx 1 cup capacity). Beat egg yolks and sugar in small bowl with electric mixer until thick and creamy. Stir in coconut cream, juice, rum and gelatine mixture. Transfer to larger bowl.
- Beat cream in small bowl till soft peaks form, fold into coconut cream mixture. Beat egg whites in small bowl with electric mixer until soft peaks form, fold into coconut cream mixture. Pour into glasses. Refrigerate until set. Decorate with whipped cream and toasted shredded coconut, if desired.
