HAM AND PIMENTO CHEESE COLLARD WRAPS



Ham and Pimento Cheese Collard Wraps image

Using steamed collard greens is a clever way to make a quick snack or a platter of colorful wraps for a crowd. Try our version, and then make a habit of keeping the steamed leaves in a resealable bag in your fridge to fill with your favorite leftovers. And if you have it on hand, add a few splashes of green hot sauce to the mayo before spreading.

1 large bunch collard greens, large and medium leaves separated, stems removed up to the leaves (about 20 leaves)
Kosher salt
A few splashes of green hot sauce, optional
2 1/2 to 3 tablespoons mayonnaise
5 to 6 slices sharp Cheddar
15 to 18 slices jarred roasted red peppers (each about 1 inch thick and 2 inches long)
10 to 12 slices smoked deli ham, or 1 1/4 to 1 1/2 cups rotisserie chicken

Steps:

  • Lay each collard leaf, underside up, on a flat surface. Locate the thickest part of the stem and use a small, sharp knife to just shave the top off for even thickness (this makes rolling the leaves up easier).
  • Fill a large wide skillet or pan with about 1/4 inch of water. Arrange a few leaves at a time, overlapping, in a circle on the bottom of the pan and sprinkle lightly with salt. Repeat with the remaining leaves.
  • Put the skillet over medium-high heat and as soon as steam appears, lower the heat to medium, cover and steam until the collards are green, tender and pliable, 8 to 10 minutes. Remove from the heat and use tongs to transfer the leaves to a baking sheet to cool completely.
  • Lay out 2 large leaves and slightly overlap (or 3 leaves if they are smaller). If desired, add a few splashes of hot sauce to the mayonnaise. Spread the center of the leaves with 1/2 tablespoon of the mayonnaise, and then top with a slice of cheese followed by three slices of red pepper. Top with another collard leaf, and then with two slices of the ham or 1/4 cup of the chicken. Fold in the sides of the leaves and tightly roll up like a burrito. Cut in half and enjoy, or refrigerate whole for a few hours before serving.
  • 6th Ingredient: A few splashes of green hot sauce on the mayo.

8 ounces extra-sharp Cheddar, grated
1/4 cup mayonnaise
2 tablespoons cream cheese
1 tablespoon Worcestershire sauce
1 teaspoon dried mustard
1 teaspoon maple syrup
1/2 sweet onion, grated
Half a 4-ounce jar pimentos, diced
1/2 recipe Phyllo Dough (an 18-by-36-inch piece), recipe follows
2 tablespoons unsalted butter, melted
6 slices uncured deli ham
2 cups unbleached all-purpose flour, plus more for dusting
Generous pinch fine sea salt
1/2 cup room-temperature water
1 tablespoon canola oil
1 large egg, at room temperature

Steps:

  • For the pimento cheese: Combine the Cheddar, mayonnaise, cream cheese, Worcestershire, mustard, maple syrup, onion and pimentos in a medium bowl and mix until fully incorporated. Reserve half the mixture in a tightly sealed container in the refrigerator to serve with crackers or another use. Put aside the remaining mixture while you prepare the dough.
  • For the snacks: Preheat the oven to 325 degrees F and line a baking sheet with parchment paper. Set aside.
  • Brush the phyllo with butter. Halve the piece lengthwise, then cut each piece crosswise into thirds. You will have 6 pieces total.
  • Place a slice of ham at the short end of a piece of phyllo. Spoon one-sixth of the remaining pimento cheese down the side of the ham closest to the phyllo. Fold in the excess phyllo along the long edges and then roll the the phyllo into a cigar, starting at the end with the ham and pimento cheese. Brush the phyllo with butter as you roll.
  • Place the phyllo cigars a few inches apart on the prepared baking sheet. Bake until golden brown and crispy, 15 to 20 minutes.
  • In a large bowl, whisk together the flour and salt. In a liquid measuring cup, whisk together the water, oil and egg. Pour the wet ingredients into the dry and using a wooden spoon or a Danish whisk, stir the mixture until a shaggy dough comes together.
  • Transfer the dough to a work surface and knead until the dough is a bit smoother. Then "slap" the dough and turn it over and knead it until smooth; this could take between 5 to 10 minutes. You can also mix the dough in a stand mixer with the dough hook attachment. This takes about 10 minutes. Cover the dough in plastic wrap and allow to rest a room temperature for 2 hours.
  • Cover a table (at least 36 inches square) with a clean tablecloth. Sprinkle the cloth all over with flour. Gently press the dough into a rough 12-by-12-inch square and then gently pull the dough into a large square, about 36 inches. Use a pair of clean kitchen scissors to cut the thicker edges off the perimeter and discard them. Allow the dough to rest to dry out just a bit, about 5 minutes.

Country Ham Biscuits and Scallion-Pimento Cheese image

Two 7-ounce bricks sharp white Cheddar, finely grated
Two 4-ounce jars pimentos, drained and diced
1/2 cup mayonnaise
1/4 cup chopped scallions
2 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1/4 teaspoon kosher salt
4 tablespoons unsalted butter, cut into cubes and chilled, plus 1 tablespoon for the skillet
3/4 cup buttermilk, well shaken
1/4 cup finely diced country ham

Steps:

  • Preheat the oven to 450 degrees. Place a 10-inch cast-iron skillet in the oven to heat.
  • For the scallion-pimento cheese: Stir together the cheese, pimentos, mayonnaise and scallions in a large bowl. Set aside, or if making ahead, place in the fridge until ready to use.
  • For the country ham biscuits: Mix the flour, baking powder and salt in a bowl. Using a pastry blender or 2 table knives, cut the cold butter cubes into the flour until it resembles coarse meal. Use a fork to stir in the buttermilk to make a soft dough that comes together and leaves the sides of the bowl (make sure all the flour is worked in). Stir in the ham. Turn the dough out onto a lightly floured board and knead 3 or 4 times until smooth and manageable.
  • With your hands or a floured rolling pin, flatten the dough to a thickness of 1/2 inch. Cut the dough out with a 2-inch floured biscuit cutter.
  • Remove the skillet from the oven and melt the remaining 1 tablespoon butter in it. Place the biscuits in the skillet. Bake until lightly browned, 10 to 12 minutes.
  • To serve: Split the biscuits and serve with a generous spread of pimento cheese.

1/2 ready-to-eat, cooked ham, bone-in, uncut (NOT spiral cut), shank end or butt end (about 8 pounds)
25 cloves
1/2 cup Dijon mustard
3 tablespoons clover honey
3 tablespoons light brown muscovado sugar
1 teaspoon finely chopped fresh thyme
Kosher salt and freshly ground black pepper
Pimento Cheese, recipe follows
Buttermilk Biscuits, recipe follows
1 1/2 pounds extra-sharp yellow Cheddar, coarsely grated
1 cup prepared mayonnaise
1 cup drained and finely diced roasted red peppers
1/2 teaspoon cayenne powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 cups all-purpose flour, plus more for dusting
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
12 tablespoons cold unsalted butter, cut into small pieces, plus more for greasing
1 1/2 cups cold buttermilk
1/2 cup heavy cream
2 teaspoons freshly ground black pepper, not super fine and not coarse, somewhere in between
2 tablespoons melted butter

Steps:

  • Remove the ham from the refrigerator 2 hours before baking.
  • Preheat the oven to 350 degrees F. Line a roasting pan with foil.
  • Place the ham, fattier side-up, in the prepared pan. Score a diamond pattern in the fat with a sharp knife, about 1/4-inch to 1/2-inch deep, and the parallel lines about 1 1/2-inches apart. Do not score the meat itself, just the fat and any skin. You can score the fat to as deep as where the fat meets the meat.
  • Place the cloves in the center of the diamonds to form a nice pattern around the top and sides of the ham. Place the ham in the oven. Cook for 30 minutes.
  • Combine the mustard, honey, sugar and thyme and season with salt and pepper.
  • After 30 minutes, begin basting the ham with the glaze. Continue to cook the ham for another 30 minutes (about 10 minutes per pound) or until an internal temperature of 110 to 120 degrees F is reached.
  • Remove the ham from the oven and let rest 15 minutes before slicing. Slice into paper thin slices.
  • To serve, spread Pimento Cheese on the bottom of the Buttermilk Biscuits and layer with thin slices of glazed ham.
  • Combine the cheese, mayonnaise, roasted red peppers, cayenne powder, salt and pepper in a medium bowl. Cover and refrigerate for at least 1 hour and up to 24 hours to allow the flavors to meld.;
  • Preheat the oven to 450 degrees F. Grease a baking sheet with butter or line with parchment paper.
  • Combine the flour, baking powder, baking soda and salt in a large bowl. Combine until the ingredients are incorporated. Cut in the butter using your fingers or a pastry cutter until the mixture resembles coarse meal. Add the buttermilk and gently mix until the mixture just begins to come together.
  • Scrape the dough onto a lightly floured counter. Pat the dough into a 10 by 12-inch rectangle about 3/4-inch thick. Cut into 2-inch squares or use a 2-inch round cutter to cut out biscuits. Press together the scraps of dough, and repeat the process. Place the biscuits on the prepared baking sheet. Brush the tops with cream and sprinkle with the black pepper. Bake the biscuits until lightly golden brown, 12 to 15 minutes. Brush the tops with the melted butter. Cool on a baking rack.

1 jar (5 oz.) KRAFT Pimento Spread
1/2 cup KRAFT Shredded Sharp Cheddar Cheese

1-1/2 pkg. (9 oz. each) OSCAR MAYER Deli Fresh Black Forest Ham
1/3 cup butter, melted
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1/4 cup KRAFT Grated Parmesan Cheese
1-1/2 tsp. dried minced onion

Steps:

  • Heat oven to 350ºF.
  • Do not separate rolls. Use long serrated knife to cut block of rolls horizontally in half; place bottom halves of rolls in 13x9-inch pan.
  • Mix pimento spread, cheddar and pimentos until blended; spread evenly onto cut sides of rolls.
  • Place ham on bottom halves of rolls; cover with tops of rolls.
