Also known as Furr's Cafeteria Pineapple Millionaire Pie! This easy vintage recipe takes minutes to prepare. Sweet and rich, it tastes like a million bucks!

Steps:
- In a large bowl, cream together butter, powdered sugar, egg yolks, salt and vanilla extract. Beat until it resembles frosting.
- Spread mixture into pie shells. Chill while you prepare the next layer.
- In a large bowl, whip whipping cream until stiff peaks form. Blend in crushed pineapple and pecans. Spread on top of first layer.
- Chill for 3 hours or more.

I am honoring Cafeteria's today..they fed us all well for many years. Now most alllll are gone. I miss them. Here is another pie recipe from the cafeteria recipes..from Furr's this time. I HAVE REVAMPED THIS RECIPE SO THAT "THOSE OF US WITH DIABETES" CAN ALSO HAVE SOME. I ADDED A RECIPE TO MAKE 'HOMEMADE POWDERED SUGAR' FOR...

Steps:
- 1. Cream 2 cups powdered sugar and butter with electric mixer until fluffy (be SURE to do this step first).
- 2. Add eggs, salt and vanilla. Beat until light and fluffy.
- 3. Spread mixture evenly into baked pie crusts, then chill.
- 4. Whip heavy cream until stiff. Blend in powdered sugar. Then fold in pineapple and pecans.
- 5. Spread mixture on top of chilled filling; and chill thoroughly before serving.
- 6. NOTE: This pie is sweet and not for diabetics. But if you make your own powdered sugar by grinding Splenda into a powder, you can eat some too.
- 7. TIP For Diabetics: *To make your homemade powdered sugar from Splenda...take 1 cup Splenda and 2 tablespoons cornstarch, using a clean coffee grinder (or a blender) place both ingredients in the cup, placeing the lid on and pulse into a powder form. This can be used for dusting cakes, cupcakes...etc. You can also make a frosting with it.
- 8. Frosting made with Homemade Powdered Sugar: 8 ounces low-fat cream cheese 1 teaspoon vanilla 1/4 cup light butter Beat 8 oz of cream cheese with the butter. Mix in vanilla and 1/2 cup of the home made powdered sugar (taste it as you go).

FURR'S CAFETERIA CHOCOLATE BLISS PIE
This is a copycat recipe of Furr's Cafeteria Chocolate Bliss Pie. This pie is a Furr's Cafeteria Butter Chess Pie with a dark chocolate topping.

Steps:
- Combine sugar and flour in a large bowl; add eggs and buttermilk, blend with a mixer. Blend in butter and vanilla extract, and pour into unbaked pastry shell.
- Bake at 350 degrees F for 45 minutes or until set.
- Check for doneness after the minimum baking time by gently shaking the pie. The center should be set with a slight jiggle.n Do not overcook, or the pie will have the consistency of an omelet instead of a custard.
- Cool on a wire rack for 10 minutes.
- Melt the chocolate, pour over the pie and spread evenly. Cool in freezer for about 45 minutes to set chocolate.
- Instead of buttermilk, you can use cow, soy almond, or coconut milk and two tablespoons buttermilk powder.

- Cream together powdered sugar and butter with electric mixer. Add eggs, salt and vanilla. Beat until light and fluffy. Spread mixture evenly into a baked pie shell. Chill Whip cream until stiff. Blend in 1/2 cup powdered sugar. Fold in pineapple and pecans. Spread this mixture on top of base mixture and chill thoroughly. Very good but make sure eggs are very fresh because they are not cooked.

I found this recipe back in 1998 at another web site. I have made it on several occassions and it has always been a big hit. When I make this I cut calories and carbs where I can. It is so easy, rich and sure to please.
