PICA DE GALLO INSPIRED GAZPACHO (GLUTEN-FREE)
This is my personal take on gazpacho. It's fresh, healthy, gluten-free, and can be easily vegan. Great summer recipe and great for beginners in the kitchen! DO NOT add water! I like to serve mine in chilled bowls with cooked prawns and fresh cilantro on top.

Steps:
- Blend tomatoes, red onion, and serrano chile pepper in a blender until smooth; add cilantro, lime juice, garlic, vinegar, and salt; blend. Slowly pour olive oil into mixture while the blender is running. Continue blending for 10 more seconds.

Steps:
- In a small bowl, mix 1 teaspoon salt with the pinch of sugar. In a medium bowl, toss the tomatoes gently with the salt mixture. Add onion and jalapeno and combine.
- Place the avocado on top of the tomato mixture and squeeze with lime juice to coat the avocado.
- Sprinkle on the cilantro, and stir to combine. Serve.

- Put all veggies in a large bowl and toss with salt. Let sit on your counter for about a half hour, or till the veggies have released a lot of their liquid.
- Separate the veggies from the liquid, reserving the liquid. Place on a tray (or if your freezer is tiny like mine, in a couple large ziplock bags) and place in the freezer for at least a half hour, or until they are partially frozen.
- Combine the thawed veggies, reserved juice, oil and sherry vinegar in a large bowl. Ladle into a blender, working in batches if necessary, and blend on high until quite smooth. Pour into a large bowl and whisk to combine the different batches. Serve immediately or chill for up to 24 hours.
