CREAMY LEEK AND CHEESE PHYLLO CIGARS



Creamy Leek and Cheese Phyllo Cigars image

2 tablespoons unsalted butter
4 medium leeks, white and light green parts only, minced
3 cloves garlic, smashed, peeled and minced
Kosher salt and freshly ground black pepper
5 ounces cold soft/fresh cheese, such as Boursin or goat cheese
1/3 cup finely grated Parmesan
1/4 cup fresh chopped parsley
Pinch red pepper flakes, optional
One 1-pound box frozen phyllo dough, thawed according to package directions (thirty-six 14-by-18-inch sheets) (See Cook?s Note)
2 sticks (16 tablespoons) unsalted butter, melted
Smoked paprika, as needed for finishing

Steps:

  • For the filling: Melt the butter in a medium saute pan over medium heat. Add the leeks and saute until wilted and very soft, 4 to 5 minutes. Add the garlic and saute until fragrant, about 1 minute. Season with salt and pepper, and then transfer to a medium bowl.
  • Stir in the soft cheese until it melts and the mixture becomes creamy. Stir in the Parmesan and parsley. Season with red pepper flakes if using. Set aside (you can scoop the filling later or pipe it by transferring the filling to a disposable piping bag with 1/2-inch opening cut from the tip).
  • For the cigars: Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Open the phyllo dough and unfurl it. With one of the shorter sides facing you, cut the dough in half lengthwise (you're aiming for rectangles about 7-by-18-inches long, but exact size may vary based on brand of dough). Cover the dough with a lightly damp clean kitchen towel so it doesn't dry out while you assemble the cigars.
  • Make a cigar by placing one sheet of cut phyllo on your work surface with one of the shorter sides facing you. Brush the dough all over (but lightly) with the melted butter and top with another piece of dough. Continue this process until you've layered three pieces of dough. Brush the surface of the final piece with butter, too.
  • Scoop (or pipe) about 1 tablespoon of filling in a line on top of the dough on the side closest to you. Fold the outside pieces of dough inward, and then roll up the dough around the filling to make a cigar shape (a lot like rolling a burrito).
  • Transfer the cigar to the prepared baking sheet, and then repeat with the remaining dough and filling. Brush any of the remaining melted butter over the assembled cigars and sprinkle smoked paprika over each one.
  • Bake the cigars until golden and crisp, 17 to 22 minutes. Cool at least 5 minutes before serving warm.

WARM GOAT CHEESE IN PHYLLO

12 sheets phyllo dough, defrosted
6 tablespoons (3/4 stick) unsalted butter, melted
2 to 3 tablespoons plain dry bread crumbs
3 (3.5- to 5.5-ounce) fresh goat cheese discs
Baby salad greens, such as arugula and mesclun mix, for 6
2 tablespoons champagne vinegar
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Unroll the sheets of phyllo dough on a flat surface and cover them with a slightly damp towel. (If the towel is too wet, the dough will get sticky.) Working quickly so the dough doesn't dry out, place one sheet of phyllo on a board, brush lightly with melted butter, and sprinkle lightly with bread crumbs. Place a second sheet of phyllo on top, brush with melted butter, and sprinkle with bread crumbs. Continue until you have 4 sheets stacked up. Cut the sheets in half crosswise to make 2 almost-squares.
  • Cut one of the goat cheeses in half horizontally, making 2 thin discs. Place each disc in the center of one phyllo square. Starting at one corner, fold the phyllo up over the cheese and continue folding and pleating the phyllo around the cheese, as though you're wrapping a round gift that's tied on top. You will end with extra phyllo dough on top; twist the excess into a topknot. Brush the discs all over with melted butter and place on a sheet pan lined with parchment paper. Continue with the remaining phyllo dough and 2 goat cheese discs to make 4 additional packages.
  • Bake for 20 minutes, until the phyllo is lightly browned. Allow to cool for 5 minutes.
  • While the cheese packages bake, place the salad greens in a large bowl. Whisk the vinegar, mustard, garlic, salt, and pepper together in a small bowl. Still whisking, slowly add the olive oil, making an emulsion. Toss the salad greens with enough vinaigrette to moisten.
  • Distribute the salad among 6 plates and place one warm goat cheese package in the center of each plate. Sprinkle with salt and pepper and serve.

1 tablespoon olive oil
1 tablespoon unsalted butter
3 medium leeks, white parts only, cut in half lengthwise, thinly sliced, and washed, about 3 cups
1/4 cup white wine
1/4 cup walnut pieces, toasted and chopped
1/4 lb soft fresh goat cheese, crumbled, about 3/4 cup
1/3 cup parmesan cheese, grated
1 tablespoon flat leaf parsley, chopped
1/2 teaspoon fresh thyme, chopped
8 sheets phyllo dough, thawed overnight in the refrigerator
4 tablespoons unsalted butter, melted and kept warm

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the oil and butter in a medium sized pan, add the leeks with 1/4 teaspoons salt and a dash of pepper. Saute over medium heat until the leeks soften, no more than 5 minutes.
  • Add the wine and let simmer until the liquid is all cooked off. Move mixture to a bowl and let cool.
  • When the leeks are cool, add the walnuts, Parmesan and goat cheeses, the herbs, and salt and pepper to taste.
  • Lay out all 8 sheets of phyllo dough on a clean counter and cover them with a damp towel.
  • Lay out 2 sheets of the 8, and lightly brush the top sheet with butter. Cut them into 4 strips lengthwise.
  • Spoon a heaping teaspoon of filling at the end of each long strip, and fold the phyllo over at a 45 degree angle to make a triangle. Fold the turnovers as if you were folding a flag, but loosely, because the filling will expand during baking.
  • Fold at an angle until you get to the end of the strip, and cut off any excess dough.
  • Continue making the turnovers in this way, brush them with butter, and put them on a baking sheet lined with parchment paper.
  • At this point, the turnovers can be refrigerated or frozen.
  • Bake for 15 minutes, until crisp and golden.

1 thin leek
40 g butter
1 tomatoes
4 green olives, pitted
80 g soft goat's cheese
black pepper
4 sheets phyllo pastry
2 cherry tomatoes
1 sprig parsley

Steps:

  • Clean leeks, cut in half lengthwise, and slice white parts (greens are not used). Wilt leek in 1 tbsp hot butter in circa 5 minutes Peel tomatoes, remove seeds, and dice. Cut olives in chunks. Mix leek, tomato, olives, cheese; add pepper to taste.
  • Pre-heat oven at 200 deg C (400 deg F). Line cookie tray with baking paper. Melt remainder of butter. Spread a thin layer of butter over a sheet of pastry; fold in two, spread another thin layer of butter on top, put 1/4 of leek mixture on top at short end, and fold into a triangle. Spread with butter. Repeat with other sheets of pastry Bake in oven in until golden brown (circa 15 mins).
  • Cut cherry tomatoes into halves. Serve triangles with cherry tomatoes and parsley.
