PHILLY CHEESESTEAK CALZONES

Philly Cheesesteak Calzones image

These hearty calzones are a must-try for any fan of traditional Philly cheesesteaks! We served them with a little horseradish and they were simply de-lish.

Provided by Amy Cox

Categories     Steaks and Chops

Time 55m

Number Of Ingredients 9

2 pre-made pizza dough from the bakery
2 lb rare deli roast beef
1 c mozzarella cheese shredded
1 c diced onions
1 c diced green peppers
24 slice provolone cheese
1 can(s) sliced mushrooms
4 dash(es) olive oil, extra virgin/to drizzle over top of ingredients
mayonnaise or condiment of your choice

Steps:

  • 1. Roll out pre-made pizza dough from your local bakery to make a slightly thin square that would cover a cookie sheet. Preheat oven to 350 degrees.
  • 2. In the center of the dough, place one layer of shredded mozzarella cheese (approx. 1/2 cup), and then a layer of deli sliced rare roast beef (approx. 1 lb), a layer of onions, mushrooms and green peppers, and then a layer of sliced provolone cheese (approx. 12-15 slices).
  • 3. Add salt and pepper and a light drizzle of olive oil. Make sure to spray the cookie sheet with cooking spray before cooking.
  • 4. Once all the ingredients are there, pull the top edge up and over all the ingredients, and then do the same for the bottom edge, overlapping the flaps, and then tuck in the ends on each side so all the cheese doesn't ooze out while baking. Make sure to follow these steps for the second calzone as well. Roll the Calzone over so that the overlapped side is on the bottom while cooking. Over the top of the dough, slice three small holes to allow heat to evacuate through.
  • 5. Brush the top of the dough with a light sheen of butter and put both calzones in the oven for approx. 30-35 min. or until the dough is a golden color.
  • 6. Each calzone should be large enough to cut into three. Two calzones should feed a family of six. Serve with a side of mayo or your favorite condiment!
  • 7. Please remember that all of the ingredients are to be split in half to make TWO Calzones.

PHILLY CHEESE STEAK

Philly Cheese Steak image

It's hard to think of Philadelphia without thinking of the cheesesteak, a sandwich containing chopped steak, melted cheese and sometimes peppers and onions. The big cheese steak debate, ongoing between rival restaurants Pat's and Geno's, is whether the steak should be topped with Provolone or American cheese, or canned cheese whiz. Bobby Flay's loaded cheese steak recipe is topped with a melted Provolone sauce, onions, peppers and mushrooms.

Provided by Bobby Flay

Categories     main-dish

Time 2h15m

Yield 4 servings

Number Of Ingredients 29

2 to 2 1/2 pound strip loin, trimmed
Olive oil
Salt and freshly ground black pepper
Soft hoagie rolls, split 3/4 open
Provolone Sauce, recipe follows
Sauteed Mushrooms, recipe follows
Caramelized Onions, recipe follows
Sauteed Peppers, recipe follows
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
2 cups whole milk, heated
1 cup grated aged provolone cheese
1/4 cup grated Parmigiano-Reggiano
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 tablespoon unsalted butter
1 1/2 pounds mushrooms (cremini and shiitake), coarsely chopped
3 tablespoons finely chopped fresh parsley leaves
Salt and freshly ground black pepper
2 tablespoons unsalted butter
1 tablespoons canola oil
3 large Spanish onions, peeled, halved and thinly sliced
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 poblano peppers, thinly sliced
2 Cubano peppers, thinly sliced
Salt and freshly ground black pepper

Steps:

  • Place steak in freezer for 30 to 45 minutes; this makes it easier to slice the meat. Remove the meat from the freezer and slice very thinly.
  • Heat griddle or grill pan over high heat. Brush steak slices with oil and season with salt and pepper. Cook for 45 to 60 seconds per side.
  • Place several slices of the meat on the bottom half of the roll, spoon some of the cheese sauce over the meat, and top with the mushrooms, onions, and peppers.
  • Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk, and cook, whisking constantly until thickened, about 4 to 5 minutes. Remove the mixture from the heat and whisk in the provolone and Parmesan until combined; season with the salt and pepper.
  • Heat oil and butter in a large saute pan over high heat. Add the mushrooms and cook until the mushrooms are golden brown. Stir in the parsley and season with salt and pepper.
  • Heat butter and oil in a large saute pan over medium heat. Add the onions, season with salt and pepper, and cook slowly until golden brown and caramelized, stirring occasionally, approximately 30 to 40 minutes.
  • Heat the oil in medium saute pan over high heat. Add the peppers and cook until soft. Season with salt and pepper.

PHILLY CHEESE STEAK CASSEROLE

Yield 6 , 6 serving(s)

Number Of Ingredients 10

1 1/2 lbs lean ground beef
2 bell peppers
1/2 yellow onion
1 garlic clove
1 teaspoon seasoning salt
4 slices provolone cheese
4 large eggs
1/4 cup heavy cream
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees. Spray a 9x9 baking dish with non-stick spray.
  • Dice the peppers and onions into bite-sized pieces. Mince the garlic.
  • Add the ground beef to a skillet and cook over medium heat, crumbling as it cooks.

  • Drain grease from the skillet and pour mixture into the prepared baking dish.
  • Tear the cheese into small pieces and place over the beef mixture.
  • Add the eggs, cream, hot sauce, and Worcestershire sauce to a mixing bowl and whisk well to combine.
  • Pour the egg mixture over the beef and place the dish in the oven. Bake for 35 minutes or until the eggs are set.
  • Let sit 5 minutes before slicing and serving.

"PHILLY" CHEESESTEAK CALZONES

A great hand pie for watching the big game. The recipe makes 4 large calzones, but I have cut them to smaller sizes and made 12 appetizer sizes.

Provided by Marsha Gardner

Categories     Steaks and Chops

Time 25m

Number Of Ingredients 16

DOUGH
2 1/4 c bread flour
1 1/4 tsp kosher salt
1/2 tsp instant yeast
2 Tbsp olive oil, extra virgin
1 c water, ice cold
1/2 tsp sugar
FILLING
2 medium rib eye steaks
1 medium green bell pepper, chopped
1 medium onion, chopped
olive oil, extra virgin
kosher salt and freshly ground black pepper to taste
garlic powder with parsley, to taste
red pepper flakes, to taste
8-10 slice provolone cheese

Steps:

  • 1. DOUGH: Prepare the dough the night before. Mix flour, salt, and yeast together in a bowl. Add the olive oil, water, and sugar and mix until it forms a sticky ball. Knead the dough for 5-7 minutes adding flour, or water if needed. Place the ball of dough on a baking sheet sprayed with nonstick spray and cover the dough with plastic wrap. Place in the refrigerator!
  • 2. CALZONE: Sauté the peppers and onions in a pan with olive oil. Slice the rib eye steak in very thin strips and add it to the pan with the peppers and onions just before they are finished sautéing, but DO NOT cook the strips all the way, or they will over-cook in the oven. Add dashes of garlic powder, salt, pepper, and red pepper flakes (season to taste). Set the filling aside, and flour a surface to work with the dough.
  • 3. Preheat the oven to 350-degrees. Divide the dough into four equal parts. Roll one part out with a rolling pin, place the filling inside and top with a slice of provolone cheese (you can choose to cut the dough to the "braid" the calzone, or just cover the filling and cut vent holes into the top of the calzone).
  • 4. Repeat for the remaining balls of dough and then place the calzones on a greased baking sheet. Brush the tops of the calzones with olive oil and sprinkle with garlic powder. Bake at 350-degrees for 20-30 minutes, or until golden brown.

  • Preheat the oven to 400. If using pizza stone, place it in the oven while it's cold and heat it up at the same time.
  • Make sure to freeze your steak for about an hour before cutting. (Freezing it will help cutting it thinly.)
  • Slice partially frozen steak as thin as possible. Slice green pepper and onion thinly as well and set aside.
  • Preheat some oil (about a tablespoon or two) in a medium frying pan, over medium heat and saute steak, peppers and onions with some salt and pepper until steak is no longer pink. Strain juice and set the mixture aside.

From melskitchencafe.com
Estimated Reading Time 3 mins
  • Make the french bread roll recipe and follow the steps through the first rise. Separate the dough into 6 or 7 pieces and shape into a ball. Let them rest lightly covered for 10-15 minutes to help the dough relax a bit.
  • While the dough rests, preheat the oven to 400 degrees and heat the oil in a large nonstick skillet. Add the onions and mushrooms and cook, stirring now and then, until the onions begin to become translucent and the mushrooms start to cook down, about 3 minutes. Add the peppers and continue to cook until the vegetables are tender and most of the liquid has cooked off, about another 3-5 minutes. Toss in the roast beef and cook until the beef is warmed through (if there is still a lot of liquid left in the skillet from adding the roast beef, either drain the liquid or cook until the liquid evaporates). Take the skillet off the heat.
  • Using a nonstick mat or a lightly greased countertop, working one at a time, start flattening each piece of dough into a circle. (Photo #1)
  • Eventually you’ll want it between six or eight inches in diameter (depending on how thick you want the calzone – I prefer them on the thinner side so they aren’t overly doughy). (Photo #2)
