This is a copycat recipe from PF Chang's China Bistro. We don't have a PF Chang's anywhere near us, and my sister had a craving, so I hunted this one up on the 'net.

1 teaspoon cornstarch
2 teaspoons sherry wine or 2 teaspoons red wine
2 teaspoons water
2 teaspoons soy sauce
1 1/2 lbs boneless skinless chicken breasts, diced small
5 tablespoons vegetable oil or 5 tablespoons peanut oil
1 teaspoon minced fresh ginger or 1 teaspoon grated ginger
2 teaspoons garlic, minced
1/2 cup green onion, minced
1 cup shiitake mushroom, minced
1 (8 ounce) can bamboo shoots, minced
1 (8 ounce) can water chestnuts, minced
1 (6 ounce) package chinese cellophane noodles, cooked to pkg. directions
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon sherry wine or 1 tablespoon red wine
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch
lettuce leaf, washed and taken off the head but left whole

Steps:

  • Mix all ingredients for "cooking sauce" and set aside.
  • In medium bowl, combine marinade ingredients and mix well. Add chicken and stir to coat thoroughly. Stir in 1 t. oil and let sit for 15 minutes.
  • Heat wok or large skillet over medium-high heat. Add 3 T. oil, then add chicken and stir-fry for about 3-4 minutes. Set aside.
  • Add 2 T. oil to the pan. Add ginger, garlic, and onion and stir-fry for a minute or so. Add mushrooms, bamboo shoots and wter chestnutsl stir-fry an additional 2 minutes. Return chicken to the pan. Add mixed cooking sauce to the pan. Cook until thickened and hot. Break cooked cellophane noodles into small pieces and cover bottom of serving dish with them. THen pour chicken mixture on top of noodles. Serve along side lettuce leaves for everyone to take what they want, and then spoon into lettuce leaf and roll (like a burrito) individually themselves.

You can skip the restaurant version and make your own in 20 minutes and I promise you this homemade version tastes better. They're super easy and healthier with so many layers of flavor from the hoisin sauce, soy sauce, chili garlic sauce (reduce if you're sensitive to heat), rice wine vinegar, garlic, ginger, and green onions. I found all the ingredients in the Asian section of my regular grocery store. I've made the recipe using both ground chicken and ground turkey and both were excellent.

1 tablespoon olive oil
1 tablespoon sesame oil
1 lb ground chicken (I've also used ground turkey with good results)
1 large vidalia onions or 1 large yellow onion, diced small
1/3 cup hoisin sauce
2 tablespoons low sodium soy sauce
1 tablespoon rice wine vinegar
1 tablespoon asian chili-garlic sauce
3 minced garlic cloves
1 teaspoon ground ginger
1 (8 ounce) can water chestnuts, drained and diced small
2 -3 green onions, sliced into thin rounds
1/2 teaspoon salt (to taste)
1/2 teaspoon fresh ground black pepper (to taste)
8 butter lettuce leaves, for serving

Steps:

  • To a large skillet, add the oils, chicken, and cook over medium-high heat until chicken is cooked through; stir intermittently to crumbly while cooking.
  • Add the onion, hoisin sauce, soy sauce, rice wine vinegar, chili garlic sauce, stir to combine, and cook for about 5 minutes, or until onion is soft and translucent and most of the liquid has been absorbed; stir intermittently.
  • Add the garlic, ginger, stir to combine, and cook for about 1 minute, or until fragrant.
  • Add the water chestnuts, green onions, salt and pepper to taste, and cook for about 2 minutes, or until tender. Taste filling and make any necessary flavor adjustments, i.e. more soy sauce, hoisin, pepper, etc.
  • Spoon about 1/4 cup of the mixture into the lettuce leaves to serve. Recipe is best warm and fresh but filling will keep airtight in the fridge for up to 5 days.

Amazing lettuce wraps taste just like P.F. Changs!!!! (nutritional facts do not include rice wine vinegar or hot mustard powder)

Extra Virgin Olive oil, Boneless Skinless Chicken Breast, Mushrooms, finely diced onion, garlic, iceberg lettuce, sugar, water, soy sauce, rice wine vinegar, ketchup, lemon juice, sesame oil, hot mustard (powdered) red pepper flakes, brown sugar.

Steps:

  • Make the "Special Sauce":
  • disolve sugar in water in small bowl
  • add 1T soy sauce, 1T rice wine vinegar, ketchup, lemon juice and sesame oil.
  • Mix well and refridgerate this sauce untill you're ready to serve,
  • Combine 1/2T hot mustard powder w/ 1t hot water and set this aside as well.
  • (eventually add desired amount of hot mustard mixture and rep pepper flakes to special sauce mixture to pour over the wraps)
  • Cook Chicken:
  • Bring 3/4T Oil to high heat in Wok or large frying pan
  • Saute large chicken breast for 4-5 minutes per side or done.
  • Remove chicken from the pan and cool
  • Keep Oil in the pan and keep hot.
  • As chicken cools mince mushrooms to about the size of small peas
  • Stir Fry Sauce:
  • Prepare the stir fry sauce by mixing 2T soy sauce, 4t brown sugar and 1/2t rice wine vinegar together in a small bowl.
  • When chicken is cool, mince it as small as you can/ about the same size as mushrooms
  • w/ the pan still on high heat add 3/4T olive oil.
  • Add chicken 1t minced garlic, onions and mushrooms to pan.
  • Add the stir-fry sauce to the pan and saute the mixture for a couple minutes then serve it in the iceberg lettuce leafs "cups"
  • Top w/ special sauce

3 tablespoons oil
2 boneless skinless chicken breasts
1 cup water chestnut
2/3 cup mushroom
3 tablespoons onions, choped
1 teaspoon garlic, minced
4 -5 leaves iceberg lettuce
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame oil
1 tablespoon hot mustard
2 teaspoons water
1 -2 teaspoon garlic and red chile paste
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar

Steps:

  • Make the special sauce by dissolving the sugar in water in a small bowl.
  • Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil.
  • Mix well and refrigerate this sauce until you're ready to serve.
  • Combine the hot water with the hot mustard and set this aside as well.
  • Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.
  • Bring oil to high heat in a wok or large frying pan.
  • Saute chicken breasts for 4 to 5 minutes per side or done.
  • Remove chicken from the pan and cool.
  • Keep oil in the pan, keep hot.
  • As chicken cools mince water chestnuts and mushrooms to about the size of small peas.
  • Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
  • When chicken is cool, mince it as the mushrooms and water chestnuts are.
  • With the pan still on high heat, add another Tbsp of vegetable oil.
  • Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.
  • Add the stir fry sauce to the pan and saute the mixture for a couple minutes then serve it in the lettuce"cups".
  • Top with"Special Sauce".
