I ESPECIALLY like this recipe because it makes a nice meal for two without lots of leftovers. The pork gives this meat loaf a moist, tasty, old-fashioned flavor-it's one of our favorite main dishes. -Kim McMurl Fargo, North Dakota

1 egg
3 tablespoons milk
1/2 teaspoon Worcestershire sauce
1/2 teaspoon onion salt
1/4 teaspoon pepper
1/4 cup cracker crumbs
1/2 pound uncooked ground pork
1/3 cup packed brown sugar
1/4 cup ketchup
3 tablespoons vinegar
1/2 teaspoon prepared mustard

Steps:

  • In a medium bowl, beat egg; add milk, Worcestershire sauce, onion salt, pepper and crumbs. Add pork and mix well. Shape into two 5-in. x 2-1/2-in. loaves; place in a small baking pan. Combine remaining ingredients; pour over loaves. Bake, uncovered, at 325° for 1 hour or until no longer pink.

1-1/2 pounds ground beef
1 can (5 ounces) evaporated milk
1 large egg, lightly beaten
3/4 cup quick-cooking oats
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup ketchup
1 tablespoon brown sugar
1 tablespoon prepared mustard

Steps:

  • In a bowl, combine the first seven ingredients. Shape into six loaves, about 4x2-1/2-in. Place in an ungreased 13x9-in. baking dish. Combine the ketchup, sugar and mustard; spoon over loaves. , Bake, uncovered, at 350° for 35-45 minutes or until a thermometer reads 160°.

2 eggs, beaten
¾ cup crushed buttery round crackers
½ cup milk
½ cup grated Parmesan cheese
½ cup chopped onion
1 teaspoon Worcestershire sauce
1 teaspoon dried Italian-style seasoning
1 teaspoon garlic salt
1 pound lean ground beef
1 pound ground sausage
1 cup ketchup
½ cup packed brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the eggs, cracker crumbs, milk, cheese, onion, Worcestershire sauce, Italian-style seasoning, garlic salt, ground beef and ground sausage. Mix this together well and form into individual loaves. Place the loaves in a 9x13 inch baking dish.
  • In a separate small bowl, combine the ketchup, brown sugar and Worcestershire sauce. Mix this together well and spoon some of this sauce over each loaf. Garnish each loaf with some Parmesan cheese and seasoning to taste.
  • Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes.

1 cup shredded Cheddar cheese
½ cup quick cooking oats
1 teaspoon salt
1 pound ground beef
⅔ cup ketchup

  • Preheat oven to 350 degrees F (175 degrees C).

1 cup fresh bread crumbs
1 tablespoon milk
1 teaspoon pizza seasoning
1/2 teaspoon salt
1 to 2 cloves garlic, minced
1/2 cup pizza sauce
1/3 cup finely chopped onion (1 small)
1/3 cup chopped pitted ripe olives
3 slices (1 oz each) mozzarella cheese, cut into strips

Steps:

  • Heat gas or charcoal grill. In large bowl, mix ground beef, bread crumbs, milk, pizza seasoning, salt and garlic. Shape mixture into 12 (4-inch) sausage-shaped rolls. Flatten each to 1/4-inch thickness to form patties.
  • In medium bowl, mix 1/4 cup of the pizza sauce, the onion and olives. Spoon about 1 tablespoon mixture evenly onto 6 patties, spreading to within 1/2 inch of edges. Top with remaining patties; pinch edges to seal.
  • Place meatloaves on grill; cover grill. Cook with medium heat 10 to 14 minutes, turning several times, until thermometer inserted in meatloaves reads 160°F (avoid inserting in filling). Brush meatloaves with remaining 1/4 cup pizza sauce and top each with cheese strips; cook 1 minute longer or until cheese is melted.

3 cups finely chopped yellow onions (three onions)
1 -2 tablespoon olive oil
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon thyme
3 tablespoons Worcestershire sauce
1/3 cup chicken broth
3 tablespoons crushed tomatoes
2 1/2 lbs ground beef
3/4 cup Italian seasoned breadcrumbs
2 eggs, beaten
1/2 cup ketchup

Steps:

  • Preheat the oven to 350 degrees F and lightly grease a cookie sheet.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and crushed tomatoes. Allow to cool slightly.
  • In a large bowl, combine the ground beef, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense. Divide the mixture into 6 -9 portions (depending on size) and shape each portion into a small loaf on a cookie sheet. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.
