These vegan sugar cookies are perfect for Christmas and Valentine's Day! They're soft, perfectly sweet, and super easy to make. And it's so much fun to decorate them!

2 cups all-purpose flour
3/4 cup vegan butter (such as Earth Balance)
3/4 cup white sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons natural vanilla extract
1/2 teaspoon almond extract
2 tablespoons soy or almond milk

Steps:

  • In a mixing bowl, add softened vegan butter and sugar. Beat with a handheld or stand mixer for about 3-4 minutes on high speed until the butter sugar mixture is light and fluffy.
  • Add the vanilla extract, the almond extract, and the soy or almond milk. Beat again on high speed until well combined. This should take about a minute.
  • Now add the dry ingredients. Mix again on high until everything is well combined. Do not overmix the batter. Form a ball and cover it with plastic wrap. Place it in the fridge for 30 minutes.
  • Lightly cover your kitchen counter with flour and roll out the dough with a rolling pin.
  • Cut out the cookies with cookie cutters. I used star, heart, and Christmas tree shaped cookie cutters. Preheat the oven to 350 °F.
  • Line a baking tray with parchment paper and place the cookies on top. Bake for 8 minutes. As every oven is a bit different, check regularly, so they don't get too dark.

1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ cup vegetable oil
½ cup white sugar
¼ (6 ounce) container soy yogurt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet with cooking spray.
  • Sift flour, baking powder, cinnamon, and baking soda into a bowl.
  • Mix vegetable oil, sugar, and soy yogurt together in a bowl. Stir in flour mixture until dough comes together.
  • Drop tablespoons of dough 2 inches apart onto the prepared baking sheet.
  • Bake in the preheated oven until golden, about 7 minutes.

  • In a stand-up mixer, beat the vegan butter for one minute until it is light and fluffy. Turn off the mixer and scrape down the side. Slowly add the granulated sugar. Whip together for aother minutes, scraping down the sides as necessary. Add the applesauce and vanilla extra and mix until it is well incorporated. The dough may look a little curdled at this point. That’s okay! It will sort itself out once the rest of the ingredients are added.
  • With the mixer on low, slowly add the dry ingredients. Mix until the dough comes together. Do not over mix that dough. Once you add the flour, mix it until it just starts coming together. At that point, turn it out onto a floured work surface and bring it together with your hands. Transfer the dough to a piece of parchment paper, lightly dust with powdered sugar and top with another piece of parchment paper. Roll out to about 1/4" thick. Refrigerate for 1 hour.
  • Once your dough is chilled, cut out shapes with your cookie cutters. Avoid rolling out the dough many times. Each time the dough is rolled, it will get more cracked and dense. Keep the shapes as close together as possible. Return to the refrigerator for 30 minutes to let the dough reharden. Otherwise, your cookies will spread out too much in the oven.
