1 1/2 lbs sole fillets, skinned
to taste lemon juice
to taste white pepper
1 egg white
to taste salt
1/4 cup flour
to taste oil (for frying)
1 1/2 teaspoons active dry yeast
1/2 cup water
3/4 cup flour
1 teaspoon oil
3/4 cup beer
1 pinch sugar

Steps:

  • Wash fillet in lemon and water.
  • Season with salt and pepper.
  • Chill while you prepare the batter.
  • Sprinkle yeast over warm water.
  • Let stand until dissolved.
  • Place flour in a bowl with the salt and sugar.
  • Make a well in the center.
  • Add the dissolved yeast, oil and 2/3 of the beer.
  • Stir with a wooden spoon just to combine. Stir in remaining beer.
  • Let the batter stand, covered, in a warm place for 30-35 minuted, until it has thickened and become frothy.
  • Dry fish with paper towels and cut each fillet diagonally into 2 pieces.
  • Heat the oven to warm.
  • Stir together remaining flour, pepper and salt in a plate. Heat the oil.
  • Whip egg white until it forms soft peaks and fold into batter.
  • Coat fish with seasoned flour, patting so they are evenly coated.
  • Shake off excess flour.
  • Using a 2 pronged fork, dip the fish into the batter.
  • Lift it out and hold it over bowl 5 seconds to drip off excess batter.
  • Carefully lower the piece of fish into the hot oil and deep fry, turning once, until golden crisp.
  • Fry 1-2 pieces at a time, transferring to paper towels as you go.

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

Skip the takeaway, and spend a little effort perfecting fish & chips at home - you'll be rewarded with crisp, deeply golden fish and moreish chips

about 1 litre sunflower oil, for frying
2 thick skinless fillets of whiting, ling, pollock, haddock or cod (about 150g each)
2 large Maris Piper potatoes
1 tsp malt vinegar, plus extra to serve
75g self-raising flour, plus extra for dusting
25g cornflour
small pinch of ground turmeric
125g cold lager or fizzy water
4 cornichons
1 tsp capers
1 shallot
handful of parsley leaves, chopped
5 tbsp mayonnaise

Steps:

  • Cut the potatoes into chips and soak in cold water for 5 mins, then wash until the water runs clear. Tip into a pan of cold water with a pinch of salt and 1 tsp vinegar. Bring to a simmer, then turn down the heat and simmer gently for 10-12 mins until cooked through but not falling apart. Drain gently, then place on a tray in a single layer and chill until needed. Can be prepared a day ahead.
  • To make the tartare sauce, chop the cornichons, capers and shallot (finely chop if you prefer a smooth sauce), then combine with the parsley, mayo and a pinch of salt. Will keep chilled for up to 24 hours.
  • When you're ready to fry, prepare the batter. Tip the flours and turmeric into a bowl with a pinch of salt, pour over the beer or fizzy water, and mix quickly until everything just comes together to the consistency of double cream - do not over-beat, a few lumps are fine. Keep chilled.
  • Pour the oil into a deep, wide pan like a wok, or heat a deep-fat fryer to 180C. If using a pan or wok, ensure that it is no more than two-thirds full with oil. Heat the oil until it is shimmering and carefully lower in the chips using a slotted spoon. Fry for 8-10 mins, gently stirring occasionally until golden and crisp. Transfer to kitchen paper to drain.
  • Put a little flour in a dish, then bring the oil you used to cook the chips up to 185C, if you have a thermometer, or until a drizzle of batter sizzles and crisps in less than a minute. Working quickly, dust the fish in flour, then dredge through the batter. Hold the fillet above the batter to let the excess drip back into the bowl, then carefully lower into the oil. Fry the fillets for a minute until the batter is just starting to set, then take a spoon and drizzle the fillets with extra batter to create an even crunchier, wispy coating. Fry the fish for about 4 mins, turning once, until deep golden and crisp. Lift onto some kitchen paper to drain for a minute, then serve with the chips, tartare sauce, and plenty of salt and vinegar.

800g unpeeled, even-size Maris Piper or King Edward potato
2 tbsp olive oil
300g frozen garden pea
1 tbsp olive oil
2 tsp lemon juice
650g (approx) skinless haddock, hake or cod fillet from a sustainable source, cut into 4 equal-size pieces
50g self-raising flour, plus 1 tbsp
50g cornflour
1 egg white
125ml ice-cold sparkling water
1 lemon, cut into wedges
600ml sunflower oil, for frying

Steps:

  • Scrub the potatoes, cut into 1.5cm thick lengthways slices, then cut each slice into 1.5cm thick chips. Tip the chips into a large saucepan, pour in enough water to just cover, bring to the boil, then lower the heat and gently simmer for 4 mins only. Drain, tip onto a clean tea towel, pat dry, then leave to cool. Can be done 1-2 hrs ahead. Heat oven to 220C/fan 200C/gas 7. Put a large shallow non-stick roasting tray in the oven with 1 tbsp olive oil and heat for 10 mins.
  • Transfer the chips to a bowl and toss in the remaining oil using your hands. Tip out in a single layer onto the hot roasting tin. Bake for 10 mins, then turn them over. Bake 5 more mins, then turn again. Bake for a final 5-8 mins until crisp. Drain on paper towels.
  • While the chips are in the oven, cook the peas in boiling water for 4 mins. Drain, then tip into the pan and lightly crush with the back of a fork. Mix in the oil, lemon juice and freshly grated pepper. Cover and set aside.
  • The fish can also be cooked while the chips are in the oven. Pat the fillets dry with paper towels. Put the 1 tbsp of flour on a plate and use to coat each fillet, patting off the excess. Pour the oil for frying into a heavy, medium non-stick wok or wokshaped pan. Heat to 200C (use a thermometer so you can check the oil stays at that temperature). Mix 50g flour, cornflour, a pinch of salt and some pepper. Lightly whisk the egg white with a balloon whisk until frothy and bubbly, but not too stiff. Pour the water into the flour mix, gently and briefly whisking as you go. The batter shouldn't be completely smooth. Add the egg white, then lightly whisk in just to mix. Try and keep as many bubbles as you can so the batter stays light. Cooking two pieces of fish at a time, dip them in the batter to coat, let some of it drip off, then lower into the hot oil using a slotted spoon. Fry for 5-6 mins, making sure the oil stays at 200C and turning the fish over halfway through so it is golden all over. Lift out with a slotted spoon, drain on kitchen paper. Check the oil is back up to 200C, then repeat with remaining fish. Reheat the peas and serve with the fish, chips and lemon wedges.
