Steps:
- Remove and discard tough outer leaves from the green cabbage. Cut the head in half, cutting through the core. Use the tip of the knife to remove the core from both halves, then cut each half into quarters. Slice each quarter thinly into short strips. Repeat with the red cabbage and place both in a large bowl.
- Whisk together the mayonnaise, vinegar, sugar and celery seeds in a small bowl, then season with salt and pepper. Add more sugar as desired. Toss the cabbage with half the dressing, then lay in a shallow dish (a 9-by-13-inch baking dish works well). Cover and refrigerate for 1 to 2 hours.
- Once cabbage has marinated in the dressing, taste and add reserved dressing as desired. Add the carrots and parsley and toss to combine.
CLASSIC CREAMY COLESLAW DRESSING
I use this on bagged broccoli slaw (2 lbs) and the ratio of slaw to dressing is perfect. I believe I got this from Martha Stewart's little food magazine a while back.

- Whisk together mustard, vinegar, lemon juice, sugar, salt, mayonnaise, and sour cream in a small bowl.
- Refrigerate dressing, covered, until ready to use, or up to 2 days.
PERFECT COLE SLAW DRESSING
Cole Slaw is one of those wonderful side dishes usually more popular in Summer, but always good any time. There are about as many great recipes for Cole Slaw as there are great cooks. In mine, I use the usual shredded cabbage, carrots, red cabbage, a little bell pepper (red or yellow for color), and this dressing is the best I have found. This is a mayonnaise-based dressing. I know many folks prefer a vinegar-based dressing, but personally, I find them to be too tart for my taste. Just refrigerate until using and always refrigerate your cole slaw when not on your table! Safety first!

- Put all ingredients together in a mixing bowl and mix well until smooth and creamy in consistency. Have your Cole Slaw veggies shredded and ready. (Should be about 2 quarts)... Pour dressing over mixed cole slaw veggies and blend together very well, cover and refrigerate. I recommend you refrigerate at least 2 hours before serving, stirring the slaw to blend flavors every 20 minutes or so.. This may look as if it is not enough, but if you keep stirring it often, it will be plenty.
- Serve chilled. Bon Apetit' Y'all!

I searched for years for the "perfect" coleslaw dressing,,,this is it ! Large recipe, makes a quart,,,but you can easily halve the ingredients. I'm thinking you will love it too !
