BONFIRE EGGS WITH GREEN PEPPERS AND CHEESE



Bonfire Eggs with Green Peppers and Cheese image

4 medium russet potatoes
Kosher salt and freshly ground black pepper
4 large eggs
About 2 tablespoons heavy cream
Hot sauce, optional
1/4 red onion, diced
1/2 green bell pepper, diced
2 ounces shredded cheese

Steps:

  • Start a fire!
  • Poke the potatoes all over with a fork and microwave them for 12 minutes or bake at 350 degrees F for 20 minutes. Let the potatoes cool until they're cool enough to handle or wrap the bottoms in aluminum foil or use heat-safe gloves for the next step. Working with one potato at a time, chop off the end (keep this part, it is the potato's hat) and then use a small spoon to hollow out the potato, leaving about 1/3 inch of potato flesh all around. (Reserve the potato innards for another use, like potato soup or mashed potatoes, or feed them to your chickies.)
  • Salt the insides of the potatoes, then crack an egg into the center of each potato. Add 1/2 tablespoon cream, a good pinch of salt, a turn of pepper, hot sauce, if using, and a quarter of the onion and pepper to the center of each potato. Give it a quick scramble (I like using a chopstick for this). Top each with a little pile of cheese. Place the potatoes' hats back on them, then wrap each tightly in aluminum foil.
  • Carefully put the potatoes in the fire. Cook, turning occasionally with long tongs or a stick, for 20 minutes, then unwrap and check for doneness; the egg should be cooked and fluffy. If the egg is still runny, rewrap the potato and put it back in the fire for a few more minutes.
  • Let cool slightly and enjoy!

CREAMY POLENTA WITH BRAISED GREENS AND POACHED EGGS

1/4 cup stemmed and finely chopped Tutto Calabria hot long red chile peppers, or hot cherry peppers
1 cup extra-virgin olive oil
Kosher salt
1 cup whole milk
Kosher salt and freshly ground pepper
1 cup polenta or stone-ground yellow cornmeal
4 tablespoons (1/2 stick) unsalted butter
1/2 cup freshly grated parmesan cheese
3 tablespoons extra-virgin olive oil
1 small red onion, halved and thinly sliced
2 cloves garlic, thinly sliced
1 1/4 pounds mustard greens, ribs removed, leaves chopped
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
1 tablespoon white vinegar
4 eggs
Kosher salt and freshly ground pepper
Chopped fresh flat-leaf parsley, for serving

Steps:

  • Make the chile oil: Combine the chopped chiles, olive oil and 1/4 teaspoon salt in a small saucepan over low heat and cook 5 minutes. Remove from the heat and let cool completely. Transfer to a bowl, cover and refrigerate up to 1 week. (You will have about 1 1/4 cups chile oil.)
  • Cook the polenta: Bring 3 cups cold water, the milk, 1 teaspoon salt and 1/2 teaspoon pepper to a boil in a medium saucepan over high heat. Gradually whisk in the polenta; whisk constantly until the mixture is smooth and begins to thicken, about 5 minutes. Reduce the heat to medium low and simmer, stirring often, until tender and thickened but still creamy, about 30 minutes. Add more hot water as needed if the mixture seems too dry. Stir in the butter and cheese.
  • Meanwhile, make the braised greens: Heat the olive oil in a large high-sided saute pan over medium heat. Add the onion and cook until softened, 4 minutes. Add the garlic and cook, stirring occasionally, until slightly golden brown, about 2 minutes. Add the greens, season with salt and pepper and toss. Reduce the heat to medium, stir in 1 cup water, cover and cook until wilted and soft, about 20 minutes. Remove the lid during the last 5 minutes to cook off any additional liquid. Stir in the red wine vinegar just before serving.
  • Poach the eggs: Heat 3 cups water with the white vinegar until simmering in a large high-sided frying pan. Break each egg into a cup, then gently add to the water. Poach until the yolks are nearly set, 4 to 5 minutes. Remove the eggs from the pan with a slotted spoon to drain the liquid and place on a plate. Season with salt and pepper.
  • To serve, spoon some of the polenta into bowls, top with some of the greens and a poached egg per bowl. Drizzle with the chile oil and garnish with the chopped parsley.

Unsalted butter, room temperature, for ramekins
1/2 cup chopped cooked greens, such as spinach, Swiss chard, or kale
4 large eggs
4 teaspoons heavy cream
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 375 degrees with a rack in top third. Generously butter four 1/2-cup ramekins; add 1 tablespoon greens to each. Break an egg into each ramekin, then top each with another 1 tablespoon greens. Drizzle each with 1 teaspoon cream; season with salt and pepper. Transfer ramekins to a rimmed baking sheet.
  • Place sheet on rack and bake until whites are just set and eggs are still soft in centers, 12 to 15 minutes (start checking at 12, as they tend to cook at different rates). Serve immediately.

1 cup mixed hardy greens (spinach, kale and chard, sold prepped in bags)
3 scallions, white and green parts sliced
1 jalapeño, seeded and diced small
Kosher salt and freshly ground black pepper
1/4 cup half-and-half
2 tablespoons prepared pesto
6 large eggs
1/2 cup shredded Monterey Jack
2 ripe tomatoes, sliced thick
2 tablespoons chopped chives

Steps:

  • Melt the butter in a large nonstick skillet over medium heat. Add the hardy greens, scallions and jalapeños. Season with salt and pepper and cook until the greens have wilted, about 2 minutes.
  • Meanwhile, add the half-and-half, pesto and eggs to a pitcher or bowl. Whisk with a fork until well combined.
  • Add the egg mixture to the skillet and season with a pinch of salt and pepper. Cook, stirring frequently, until creamy curds begin to form, about 2 minutes. Add the Monterey Jack and continue to cook, stirring, until the eggs are just cooked and the cheese has melted, another 2 to 3 minutes.
  • Serve the eggs on top of the tomato slices and garnished with the chives.

Hearty greens turn silky in a mixture of heavy cream, garlic, shallot, thyme and Parmesan under a lid of flaky puff pastry. Using store-bought puff pastry in place of homemade pie crust ensures a perfect result every time. It also steers pot pie into the weeknight-possible category. Greens and heavy cream require a good amount of salt to taste like their best selves, so taste and season well when the recipe says to do so.

3 tablespoons unsalted butter
10 garlic cloves, peeled and thinly sliced
1 shallot, peeled and finely chopped
1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
2 1/2 pounds mixed hearty greens (like kale, spinach, mustard greens or collard greens), stems removed and leaves torn into large pieces
Kosher salt and black pepper
1 tablespoon all-purpose flour, plus more for rolling
2 cups heavy cream
1 teaspoon hot sauce
1/2 cup freshly grated Parmesan
1 sheet frozen puff pastry, thawed
1 egg, beaten

Steps:

  • Heat the oven to 400 degrees and line a baking sheet with parchment or foil.
  • In a medium (10-inch) oven-proof skillet over medium heat, melt the butter. Add the garlic, shallot and thyme and cook, stirring occasionally, until softened but not browned, 5 to 6 minutes.
  • Add a handful of the greens and season lightly with salt and pepper. Using tongs, toss the greens in the butter until wilted. Repeat, making sure to season each batch, until all the greens are added and wilted. (They will eventually all fit.)
  • Stir in the flour until it disappears into the greens, then add the cream and hot sauce and stir well to combine. Bring to a simmer, then remove from heat and stir in the Parmesan. Season to taste with salt and pepper.
  • On a lightly floured work surface or the bottom of another baking sheet, use a lightly floured rolling pin, roll and trim the puff pastry into a 12-inch circle. If you find the pastry contracts when you roll it, give it a few minutes between each roll to relax a little.
  • Transfer the skillet to the lined baking sheet. Drape the puff pastry over the skillet so that there is about 1/2-inch hang over on all sides. (Trim any sides that have more than an inch.) Brush the beaten egg onto the puff pastry, then cut four large slits into the pastry. Bake until the puff pastry is puffed and golden brown, about 10 minutes. Reduce the oven temperature to 375 degrees and bake until the pastry is cooked through and the filling is bubbling, 30 to 35 minutes. (If the pastry is getting too dark, cover with foil.) Let sit for a few minutes before diving in.

  • Add peppers, chiles and garlic, and sprinkle with salt and pepper. Cook, stirring occasionally, until peppers are brightly colored but not too soft, 4 to 6 minutes.
  • Reduce heat to medium-low and pour in eggs. Cook, stirring occasionally with a wooden spoon or rubber spatula, until eggs are cooked, 3 to 8 minutes. Serve on toast or over rice, or wrapped in a flour tortilla.
