- In a large bowl, whisk 2 cups milk and pudding mix for 2 minutes; set aside. In a small bowl, beat the cream cheese, sugar, extract and remaining milk. Fold in whipped topping. , Spoon half of the pudding into four parfait glasses. Top with half of cream cheese mixture. Repeat layers. Garnish with candies if desired.

- Beat pudding mix, milk and extract with whisk 2 min.
- Whisk COOL WHIP and food coloring until blended.
- Layer pudding alternately with COOL WHIP in 6 parfait glasses. Refrigerate 15 min.

CREAMY CHOCOLATE PUDDING PARFAIT
Steps:
- In a medium pot combine milk and vanilla pudding mix, place over medium heat whisking constantly. Bring to a boil while continuing to whisk the mixture.
- In 3 medium bowls place white, dark and milk chocolate chips. Combine reserved chips together in a small bowl, mix and set aside.
- Remove mixture from the heat and evenly divide the hot pudding over the 3 bowls. Wait 1 minute then whisk the mixture to incorporate and melt the chips into the pudding.
- Set up 3 resealable bags into 3 large glasses so that it will be easy to pour the warm pudding into the bags. Pour the pudding into separate bags. Tie the bags closed with a twist tie. Place pudding into the refrigerator for 2 hours, or until pudding is chilled and set.
- Cut off the corner of each bag. Pipe each of the pudding mixtures evenly into 6 champagne glasses starting with the dark chocolate, white chocolate and ending with milk chocolate.
- Garnish with reserved chocolate chips.
PEPPERMINT-CHOCOLATE PUDDING PARFAITS
Steps:
- Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in peppermint extract.
- Spoon half the pudding evenly into 6 (9-oz.) glasses, adding about 3 Tbsp. pudding to each glass. Cover evenly with half the cookie crumbs. Spoon 2 tsp. crushed candy over cookie crumb layer in each glass.
- Whisk 1-1/4 cups of the COOL WHIP into remaining pudding; spoon over candy layer in parfait glasses. Cover with remaining cookie crumbs.
- Top with remaining COOL WHIP and crushed candy.

- In a medium sized saucepan whisk together the sugar, cocoa powder, cornstarch and salt. Turn the heat on to medium-low and slowly whisk in the almond vanilla beverage until all the lumps are gone. Stir the mixture occasionally being sure to scrape the sides and bottom of the pan. After about 10 minutes the mixture should start to thicken.
- When it’s thick enough that it coats the back of a spoon, stir in the dark chocolate and crushed candy canes. Continue to stir for another 2-3 minutes or until the chocolate is fully incorporated and candy canes are dissolved. Remove from the heat and stir in the vanilla. If you choose to use peppermint extract instead of candy canes you’ll stir it in with the vanilla.
- Pour the pudding into a bowl and lay a piece of plastic wrap directly onto the top of the pudding. Refrigerate for at least 2 hours or until it’s chilled.
- In the bowl of a food processor add all of the chocolate graham cracker crumb ingredients except the melted coconut oil. Process the mixture until it resembles sand. Slowly add in the melted coconut oil or butter and pulse until the crumbs start to come together. It should look like wet sand. Set aside.
