3 slices monterey jack pepper cheese
sliced pepperoni
1 dash salt
jalapeno (optional)
cooking spray
2 tablespoons salsa

Steps:

  • Spray pan with cooking spray.
  • Beat eggs and broil on low heat until mostly cooked.
  • place slices of cheese, pepperoni, and jalapeños over omelet.
  • Let cook until cheese is mostly melted.
  • Add a dash of salt.
  • Fold over, spoon salsa over omelet and serve.

I instantly fell in love and would order one time and time again, then they took it off their menu. Well, I didn't give up and tried to create this yummy...

2 eggs
2 Tbsp milk
salt and pepper to taste
1 Tbsp butter
3 Tbsp pizza sauce
10 slice pepperoni
1/4 c shredded mozzarella cheese
1 Tbsp grated parmesan cheese

Steps:

  • 1. Beat eggs with milk; season with salt and pepper. Spray an 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium-high heat.
  • 2. Pour in egg mixture. As mixture sets at the edges, with spatula, gently push cooked portions towards center. When eggs are almost set on surface but still look moist, spread pizza sauce over half of the omelet.
  • 3. Top with pepperoni and Mozzarella cheese. Fold the omelet in half and slide onto a warm plate. Sprinkle with Parmesan cheese.

2 eggs
2 tablespoons milk
1/4 teaspoon italian seasoning
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
3 tablespoons pizza sauce (I used Papa John's Pizza Sauce)
1/4 cup shredded mozzarella cheese
8 pepperoni slices

Steps:

  • In a small bowl beat together eggs, milk, and Italian seasonings until well blended.
  • In a skillet over medium heat, melt butter.
  • Add eggs; as the eggs set lift edges so the rest of the eggs can cook.
  • When eggs are partially set, spread pizza sauce on half of the eggs.
  • Cover sauce with mozzarella cheese; cover cheese with pepperoni.
  • Place other half of omelet over pepperoni.
  • Remove from heat and let sit for a couple of minutes or until cheese is slightly melted.

PRETZEL PEPPER JACK CHEESE STICKS

One 6-pack pepper jack snack sticks
2 cups vegetable oil, for frying
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 eggs, beaten
2 cups crushed pretzels
Salsa, for serving, optional

Steps:

  • Freeze the cheese sticks for at least 30 minutes.
  • Heat the oil to 350 degrees F in a deep, heavy pot.
  • Set up a breading station with the flour and a pinch of salt and pepper in one pie pan; the beaten eggs in a second; and the pretzel crumbs in a third.
  • Dip each cheese stick in the flour, then in the egg wash, and then in the pretzels.
  • Carefully add the breaded cheese sticks to the hot oil and fry until dark golden brown all over, about 1 minute per side. Drain on a paper-towel-lined plate and immediately sprinkle with salt. Serve with salsa.

1 medium potato
1 medium onion
1 medium tomatoes, coarsely diced
50 g pepperoni, thinly sliced
50 g tasty cheese, grated
1/4 teaspoon ground black pepper

Steps:

  • Whisk eggs in a bowl with Tabasco sauce.
  • Grate onion and potato into same bowl.
  • Add diced tomato and mix together.
  • Place mixture into a lightly oiled small skillet or fry pan over medium to low temperature.
  • Immediately layer pepperoni slices over the top and sprinkle with grated cheese.
  • Grind pepper over the top.
  • Cook around 15-20 minutes until egg has set on the top and cheese has melted, there is no need to flip it.

2 eggs, beaten
2 tablespoons water
1/4 cup bell pepper, any color, finely chopped
1/4 cup onion, finely chopped
1/2 teaspoon italian seasoning
1/2 cup mushroom, sliced
1/2 cup pizza sauce
5 slices pepperoni
1/4 cup mozzarella cheese, shredded
1 tablespoon parmesan cheese (optional)
1/4 cup sausage (optional)

Steps:

  • Beat eggs with water; season with salt and pepper. Set aside. Spray an 8-inch omelet pan or nonstick skillet with cooking spray. Heat skillet over medium heat.
  • In small saucepan, heat pizza sauce.
  • Add sausage to skillet. Cook until browned. Set aside.
  • Add pepper, onion, mushrooms, and seasoning to skillet. Cook, covered, over medium heat until peppers are soft, about 2 to 3 minutes.
  • Add cooked sausage to pepper mixture. Pour eggs over pepper mixture. (Eggs should set immediately at edges). With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. Reserving some sauce for topping, when top of omelet is thickened and no visible liquid egg remains, spoon hot sauce over half of the omelet. Top with pepperoni and mozzarella cheese. Slide from pan onto plate. Spoon on remaining sauce. Sprinkle with Parmesan.

  • Flatten rolls into 3-1/2-in. circles. Top each with about 1 tablespoon of cheese and 1 rounded teaspoon of pepperoni. Bring up edges and pinch to seal.
