PEPPER JACK MEATLOAF
This Pepper Jack Meatloaf is absolutely delicious. Especially if you like the flavor of Pepper Jack Cheese.

Steps:
- Preheat Oven to 350°F.
- In a large mixing bowl, combine the egg, bread crumbs, onion, salt and pepper.
- Add the ground beef to the mixture and mix well. Press half of the beef mixture into the bottom of a greased loaf pan. Sprinkle 3/4 cup of the pepper jack cheese over meat to within 1/2 inch of sides. Press remaining beef mixture over cheese.
- Bake uncovered for 50-55 minutes or until the meat is no longer pink. Sprinkle the remaining cheese over meatloaf and bake an additional 5 minutes until cheese is melted.
- Let meatloaf stand for 10 minutes before slicing. Serve with salsa if desired.

- In a large bowl, combine the egg, bread crumbs, onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8x4-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese., Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a thermometer reads 160°. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with salsa if desired.

- Preheat oven to 400 degrees F. Grease a loaf pan. Mix meat, celery, onion, oatmeal or crackers, eggs together well. Press half of the meat mixture into prepared loaf pan. Place cheese over meat mixture. Top with remaining meat mixture and press down to seal. Spread ketchup over top of meat loaf...sprinkle with chili powder, salt and pepper. Bake, covered lightly with foil, for 30 minutes. Increase oven temperature to 425 degrees F, remove cover and continue to bake for 20 minutes or until edges are bubbling and knife inserted in center comes out clean. Let sit for 5 minutes then slice and serve.
