8 oz. penne
2 boneless skinless chicken breasts
kosher salt
Freshly ground black pepper
1 tsp. garlic powder
1/2 tsp. Italian seasoning
1 tbsp. oil
2 tbsp. butter
1 tbsp. minced garlic
1 tbsp. flour
1 c. heavy cream
Freshly ground black pepper
1/2 c. freshly grated Parmesan, plus more for serving
Fresh thyme or parsley, for serving

Steps:

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
  • Season chicken with salt, pepper, garlic powder, and Italian seasoning. In a large skillet over medium-high heat, heat oil, then cook chicken until browned on both sides and cooked through. Dice chicken, set aside, and cover to keep warm.
  • Wipe skillet clean, then melt butter over medium-high heat. Stir in garlic and cook, 1 to 2 minutes. Sprinkle flour over butter and garlic and stir until thick.
  • Gradually whisk in heavy cream until a smooth sauce is formed, then add salt and pepper and stir in Parmesan until melted.
  • Stir in chicken and penne, then top with pepper, thyme or parsley, and more Parmesan. Serve immediately.

This grilled chicken and bacon with pasta in a creamy garlic sauce was a meal fit for a king. Just perfect for a father's day meal. I wanted a special dish and this was a hit! Inspired from Plain Chicken Blog

3 to 4 boneless chicken breast
1 lb bacon, fried and crumbled
1 lb penne, cooked to directions
MARINATE
1 c white wine
1/4 c olive oil, extra virgin
2 clove garlic, chopped
1 tsp herbes de provence
1/2 tsp salt
1/2 tsp white pepper
CREAMY GARLIC SAUCE
1 c heavy cream
4 oz cream cheese
1/2 c parmesan cheese, grated
2 large egg yolks
1 to 2 tsp chives, dried
1 to 2 tsp garlic powder
salt and pepper to taste
1 to 2 tsp red pepper flakes

Steps:

  • 1. Combine ingredients for marinate in a ziploc bag or marinate container; add boneless chicken breast. Make sure chicken is coated well. Refrigerate over night or at least a couple of hours prior to grilling. You can grill the chicken outside over charcoal, on a gas grill or in a cast iron stove top grill. For this recipe I used my cast iron stove top grill.
  • 2. Put water on stove to boil for pasta; add salt. Once water boils add pasta and cook according to directions on package.
  • 3. Fry bacon. I cut up the bacon before frying.
  • 4. Cut cream cheese up into small piece. Combine cream cheese and heavy cream in a small pan, simmer over low heat, stirring occassionally until cream cheese has melted.
  • 5. Heat grill over medium high heat. Once good and hot, drain marinate off chicken and add chicken to hot grill, reduce heat to medium. Cook 5 to 7 minutes on each side or until chicken is done with no pink showing.
  • 6. Once chicken is done, remove from pan and slice into bite size pieces. Return to pan, cover and keep warm over a low heat until ready to add to pasta.
  • 7. Once cream cheese has melted; whisk in parmesan cheese, egg yolks, chives, garlic powder, red pepper flakes, salt and pepper. NOTE: Don't worry about the raw egg yolk, it will cook in between this warm mixture and the hot pasta.
  • 8. When pasta is done, drain reserving 1/2 cup of the hot liquid. Return pasta to pot and immediately add cream cheese mixture. Add some of the reserved water to loosen the sauce. Add chicken and bacon, toss to combine. Sprinkle top with some dried chives or fresh parsley and serve with a green salad and a roll. NOTE: if you feel you have too much chicken, store some in ziploc bag in the fridge to use in a salad for another day.
  • 9. NOTE: I had four pots and pans on the stove all at one time. This dish goes fast once it gets going. I started heating the cast iron grill first and then I started my water for pasta, started melting the cream cheese in the heavy cream, started frying the bacon and added chicken to hot stove top grill. It seemed to all come together nicely in the end.

8 ounce(s) dried dreamfields penne rigate pasta
1 tablespoon(s) olive oil, extra virgin
1 large zucchini, halved lengthwise and sliced
2 cup(s) fresh mushrooms, sliced.
3 teaspoon(s) minced garlic in olive oil, jarred.
1 cup(s) reduced-sodium chicken broth
1 tablespoon(s) flour
4 ounce(s) light cream cheese, softened.
1/4 cup(s) dried tomatoes, chopped.
1 tablespoon(s) dried parsley
2 tablespoon(s) grated romano cheese.

Steps:

  • Sprinkle chicken w/ salt & pepper. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat. Cook chicken until no longer pink inside, about 5 min per side. Remove chicken from pan. Cook pasta, drain, keep warm. Heat oil in skillet, place over medium heat. Cook zucchini, mushrooms and garlic for 5 min, stirring occasionally. Add veggies to pasta. In small bowl, whisk together broth and flour until smooth. Add flour mix to skillet. Add cream cheese to skillet and whisk until smooth. Cook 1 min. Stir in dried tomatoes. Add mix to pasta and veggies. Sprinkle w/ parsley and cheese.

For The Garlic Parmesan Toast:
1 baguette, cut in half then halved lengthwise
8 tablespoons (4 ounces) unsalted butter
14 cloves garlic, minced or pressed through garlic press (about 1/4 cup)
Kosher salt
3 ounces parmesan, grated (about 1 1/2 cups)
1/4 cup chopped fresh parsley leaves
For The Pasta:
2 tablespoons unsalted butter
4 small shallots, minced (about 1/2 cup)
4 medium garlic cloves, minced (about 4 teaspoons)
1 (28-ounce) can whole peeled tomatoes packed in juice
2 tablespoons tomato paste
1/2 teaspoon red chili flakes
6 tablespoons vodka
1 teaspoon granulated sugar
3/4 cup heavy cream
1 pound boneless, skinless, chicken breasts, sliced crosswise against the grain into 1/2-inch thick strips
1 pound dried penne pasta
1/3 cup chopped fresh basil leaves

Steps:

  • Prepare Garlic Bread: Adjust oven rack to upper-middle position and preheat oven to 400°F. Line rimmed baking sheet with foil. Place bread on sheet cut side up. 2 In small saucepan over medium heat, melt butter with garlic. Cook until garlic is fragrant and has softened slightly, about 4 minutes. Spoon garlic butter over bread and season with salt. Sprinkle with Parmesan. Set aside. 3 Make the Pasta: Bring a large pot of salted water to a boil over high heat. In large skillet over medium heat, melt butter. Add shallots and cook, stirring, until softened and just beginning to brown, about 8 minutes. Stir in garlic and cook until fragrant, about 30 seconds. 4 Transfer shallot mixture to blender. Add tomatoes (with juice) and tomato paste. Blend until smooth. 5 Transfer tomato mixture back to skillet and stir in chili flakes, vodka, 1 1/2 teaspoons salt, and sugar. Bring to boil over medium heat. Reduce heat to medium-low and simmer, stirring occasionally, until slightly thickened and flavors are melded, about 15 minutes. Stir in cream and season to taste. Stir in chicken and cook until just cooked through, about 2 minutes. Keep warm while pasta cooks. 6 Cook pasta according to package directions. Meanwhile, place garlic bread in oven and bake until cheese is starting to brown, about 10 minutes. Remove from oven and sprinkle with parsley. Drain cooked pasta, reserving 1 cup of pasta water. Toss pasta with sauce, adding pasta water as necessary until sauce reaches desired consistency. Season to taste with salt and pepper if necessary. Stir in basil. Serve pasta and bread immediately, passing additional cheese tableside if desired.
