BLACK BEAN BROWNIES

Steps:
- Place the beans, 1/4 cup chocolate chips and oil in a food processor; cover and process until blended. Add eggs, brown sugar, cocoa, vanilla, baking powder and salt; cover and process until smooth., Transfer to a parchment-lined 8-in. square baking pan. Sprinkle with remaining chocolate chips. Bake at 350° for 20-25 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Cut into bars.

PEG'S FAMOUS BLACK BEAN BROWNIES
I finally had my first taste of black bean brownies and was hooked. This recipe was given to my by my doctor and she said they got it from the Farmer's Almanac 2016. So, I don't know if they tweaked anything or not but here it is. Now, these are more cake like brownies but incredibly yummy considering that they are made of beans. Since then, I've tried another recipe that I really enjoy as well.

Steps:
- Preheat oven to 350 degrees and grease and 8 by 8 inch pan. Put the first 7 ingredients into a blender or food processor and blend till smooth.
- Transfer to a bowl and stir in the chocolate chips & walnuts.
- Pour into your pan & bake 35 to 40 minutes or till a tooth pick inserted comes out clean.
- Let cool in the pan and then slice. Add a little powdered sugar on top if desired. These are a really gooey brownies.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
- Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
- Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
