PECAN WINE CAKE RECIPE

- 1. Preheat the oven to 300°F. Butter and lightly flour a 9-inch (12-cup) fluted tube pan; set aside. 2. In a medium bowl, combine the sugars; set aside. In a large bowl, beat the butter with an electric mixer until soft and fluffy. Add half of the sugar mixture to the creamed butter. Increase mixer speed; beat mixture until smooth. Set aside. 3. In a large bowl, beat the eggs with a whisk (I used an electric handheld mixer) until light and fluffy (about 5 minutes). Gradually whisk the remaining sugar mixture into the eggs. Continue whisking until consistency is smooth and creamy. Add this mixture to the butter mixture; whisk until smooth. 4. In another large bowl, combine flour, mace, and salt. Alternately add the flour mixture and the wine to the butter-and-egg mixture; mix well with a wooden spoon after each addition. Stir in pecans. 5. Pour the batter into the prepared pan; place on a baking sheet. Bake in the preheated oven for 1 hour and 45 minutes to 2 hours or until the cake is golden and a knife comes out clean when inserted. Cool cake in pan for 30 minutes. Turn out on a wire rack and cool completely. If desired, sprinkle powdered sugar over the cake. Makes 16 to 20 servings.
WHITE WINE POUND CAKE
I got this recipe from my water aerobics instructor. I only make it at Thanksgiving and Christmas. The first year I made it, I was too full for dessert after dinner. I only got to taste the leftover crumbs because my family ate the whole thing Christmas Day. The second year I baked it the night before Christmas and left it on the counter. When I got up Christmas morning, a fourth of it had already been eaten. Serve all by itself or with ice cream and/or fruit.

- Preheat oven to 325 degrees F (165 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray and lightly coat with flour.
- Whisk cake mix, pudding mix, 1/4 cup white sugar, brown sugar, and cinnamon together in a bowl. Beat vegetable oil, water, 1/2 cup white wine, and eggs into flour mixture using an electric mixer until batter is smooth. Pour batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour. Cool cake in pan on a wire rack, about 1 hour.
- Combine 1/2 cup white sugar, butter, 1/4 cup white wine together in a saucepan immediately after removing cake from oven. Cook sugar mixture, stirring constantly, over medium heat until sugar is dissolved and butter is melted, 3 to 5 minutes. Spoon 1/2 the glaze over cake while cake is still warm.
- Invert cooled cake onto a cake plate and spoon remaining glaze over top of cake. Allow cake to absorb glaze, about 15 minutes. Dust cake with confectioners' sugar.

MOMMA'S WINE CAKE

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch bundt pan.
- In medium bowl combine the cake mix, instant vanilla pudding, nutmeg, vegetable oil, white wine, and eggs. Beat with an electric mixer for 5 minutes.
- Bake at 350 degrees F (175 degrees C) for 50 minutes or until a toothpick inserted in the center comes out clean. Let cake cool on rack in pan for 10 minutes then remove cake from pan to rack. Let cake cool completely before slicing. Garnish sliced cake with a dollop of whipped cream or dust with confectioners' sugar and sliced strawberries.
- Variation: You can also "flour" the pan after it's been greased with cocoa powder or a cinnamon sugar mixture for a textured crust. Simply fill a clean salt shaker for easy application. This will eliminate that "white stuff" on the outside of your baked cake which makes for a prettier cake.

DOLESTER MILES' COCONUT PECAN CAKE
This is a rich, special-occasion cake that takes the traditional Southern coconut cake to another level, with ground toasted pecans in the batter and an easy-to-make Chantilly cream for frosting. It has become the signature dessert for Dolester Miles, who serves slices over a little puddle of crème anglaise at Chez Fonfon and Bottega, and sometimes at the Highlands Bar & Grill, the Birmingham, Ala., restaurants owned by Frank and Pardis Stitt. Assembly can be a challenge, so she suggests building the cake by stacking the delicate slabs of cake with filling in between each layer into a deep, round cake pan, then slipping it into the refrigerator for about an hour. The filling acts like a delicious glue. When the cake is inverted and unmolded, the edges have an even, professional appearance.

- Heat oven to 350 degrees. Grease two 9-inch round cake pans and line the bottom of each with parchment paper. Grease the parchment paper, then dust with flour, tapping out excess.
- Finely grind the coconut in a food processor, then transfer to a bowl. Add pecans to the food processor, along with 2 tablespoons sugar, and finely grind them.
- In a large bowl, sift together flour, baking powder and salt. Stir in coconut and pecans.
- In the bowl of a mixer fitted with the paddle attachment, beat butter, cream of coconut and the remaining sugar on high speed until light and fluffy, about 4 minutes. Add eggs one at a time, mixing well after each addition and scraping down the bowl as necessary, then beat in coconut extract.
- Add the flour mixture in 3 batches, alternating with the coconut milk, starting and ending with flour mixture. Divide batter between the pans and smooth the top of each with a spatula. Bake until cakes are golden and a tester comes out clean, 30 to 35 minutes. Let cakes cool in the pans on a wire rack for 30 minutes. Run a knife around the edge of each cake, invert onto rack, and remove the parchment. Let cool completely.
- Meanwhile, make the filling: Place egg yolks in a small heatproof bowl and set aside. In a saucepan, combine condensed milk, butter and cream of coconut and cook over medium-low heat, stirring constantly, until hot, about 4 minutes. Whisk 1/3 of the hot milk into the egg yolks. Transfer egg mixture to the saucepan of milk and whisk constantly over medium-low heat until mixture has the consistency of pudding, about 4 minutes. Do not let the custard get too thick. Transfer to a bowl and stir in the shredded coconut. Let cool completely.
- Make the simple syrup: In a saucepan, heat sugar and 1/2 cup water, stirring occasionally, until sugar has dissolved. Remove from heat.
- Assemble the layer cake in a pan: Cut each cake in half horizontally. Place one layer in the bottom of a 9-inch cake pan, moisten the top with 2 to 3 tablespoons simple syrup and spread 1/2 cup of the coconut filling in a thin, even layer with an offset spatula. Repeat to make 2 more layers of cake and filling, then place the last layer on top. Refrigerate cake for about 1 hour. To unmold, run a spatula around the edges, invert a cake plate over the top, and flip the cake over onto the plate.
- Make the icing: Whip the cream with the confectioners' sugar and coconut extract until stiff peaks form. Spread on the top and sides of the cake and sprinkle with toasted coconut. Refrigerate until ready to serve.

PECAN WINE CAKE
I found this recipe in the Ultimate Italian magazine. It is very dense and moist. Warm it up just slightly and sprinkle a bit of powdered sugar on top!! thats all it needs. I also served it with whip cream, but liked the powdered sugar better. You'll love it!!!

- 2. In a large bowl, beat butter with an electric mixer on med. to high speed for 30 seconds. Add half of the sugar mixture. beat on high speed about 6 minutes or until nice and smooth. scraping sides of bowl occasionally.
- 3. In another large bowl. beat eggs with a wire whisk about 5 minutes or until light and fluffy. Gradually whisk the remaining sugar mixture into beaten eggs. Continue whisking until mixture becomes smooth and creamy. Add egg mixture to butter mixture, whisking until smooth.
- 4. In another bowl stir together flour, mace (or alspice or nutmeg) and salt.Alternately add flour mixture and wine to butter mixture, beating with a wooden spoon after each addition. Stir in pecans. Pour batter into the prepared pan, spreading evenly. Place pan on a baking sheet.
- 5. Bake for 1 3/4 to 2 hours or until top is golden brown and a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 30 minutes. remove cake from pan, cool completely on rack.
- 6. Make-ahead tip: For best flavor, wrap and chill cake overnight before serving. Store in refridge. Do not freeze.
