PEAR-PECAN TART



Pear-Pecan Tart image

No fancy equipment required. Use a pizza pan to build this tart of orange glaze, cream cheese, fresh fruit and rich pecans.

1 1/3 cups Gold Medal™ all-purpose flour
1/3 cup packed brown sugar
2/3 cup butter or margarine, softened
1 cup granulated sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 cup orange juice
1/2 cup water
2 packages (3 oz each) cream cheese, softened
4 cups sliced pears (4 to 5 medium)
1/2 cup chopped pecans

Steps:

  • Heat oven to 400°F. Grease and flour 12-inch pizza pan. In medium bowl, mix flour and brown sugar. Cut in butter, using fork or pastry blender, until crumbly. Press firmly and evenly against bottom and side of pan. Bake 10 to 15 minutes or until light brown; cool.
  • In 1-quart saucepan, mix granulated sugar, cornstarch and salt. Gradually stir in orange juice and water. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute; cool.
  • In medium bowl, beat cream cheese until smooth; spread on cooled crust. Arrange pears on cream cheese. Sprinkle with pecans. Spoon orange glaze over top. Refrigerate until set, about 2 hours. Store in refrigerator.

A delightful dessert I am posting for safe keeping -- I plan to make this for Thanksgiving this year. Found in December 2008 Taste of Home. Definitely the type thing you would find in the PAc NW though!! **Cooling time not included**

15 ounces pear halves
18 1/4 ounces butter recipe cake mix (butter recipe golden cake mix called for)
1/2 cup butter, softened
3 eggs
1 teaspoon vanilla extract
1/2 cup pecans, toasted and chopped
8 ounces frozen whipped topping, thawed
2/3 cup butterscotch sundae sauce, divided (should be at room temp for best results)
2 cups fresh pears, ripe and chopped (if desired peeled)
1/3 cup pecan halves, toasted

Steps:

  • Drain canned pears, reserving liquid; Puree the pears in a blender then add enough reserve liquid to measure 1 cup.
  • In a large mixing bowl, combine the cake mix, butter, eggs, vanilla, chopped pecans and pear puree; beat on low speed for 30 seconds.
  • Beat on medium speed for 2 minutes.
  • Pour into two greased and floured 9-inch round baking pans.
  • Bake at 375 for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Cool for 10 minutes befor removing cake from pans then finish cooling completely on wire racks.
  • Once cool and ready to assemble: fold whipped topping into 1/3 cup butterscotch topping in a small mixing bowl.
  • Place one layer cake on a serving plate, then spread top surface with half of the filling; top with half of the chopped pears.
  • Drizzle with 2 tablespoons of butterscotch topping.
  • Place second cake on top and repeat layers.
  • Arrange pecan halves on top of cake; Drizzle with remaining butterscotch topping.
  • Refrigerate until ready to serve.

3 tablespoons butter, softened
1/2 cup sugar
3/4 teaspoon ground cinnamon
3/4 cup all-purpose flour
1/3 cup finely chopped walnuts
FILLING:
1 package (8 ounces) reduced-fat cream cheese
1/4 cup plus 1 tablespoon sugar, divided
1 large egg, room temperature
1 teaspoon vanilla extract
1 can (15 ounces) reduced-sugar sliced pears, drained well and thinly sliced
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425°. Beat butter, sugar and cinnamon until crumbly. Beat in flour and walnuts. Press onto bottom and up sides of a 9-in. fluted tart pan with a removable bottom coated with cooking spray., For filling, beat cream cheese and 1/4 cup sugar until smooth. Beat in egg and vanilla. Spread into crust. Arrange pears over top. Mix cinnamon and remaining sugar; sprinkle over pears., Bake 10 minutes. Reduce oven setting to 350°; bake until filling is set, 15-20 minutes. Cool 1 hour on a wire rack. Refrigerate at least 2 hours before serving.

9 large eggs, separated
1 1/2 cups granulated sugar
1 tablespoon freshly grated lemon zest, plus more for garnish
1 teaspoon pure vanilla extract
1 teaspoon salt
12 ounces pecans, toasted and finely ground (3 cups)
Confectioners' sugar, for dusting
Lemon Curd for Pecan Torte
Mixed berries, for serving

Steps:

  • Preheat oven to 350 degrees. Put egg yolks, granulated sugar, zest, vanilla, and salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until pale and thickened, about 4 minutes. Fold in pecans.
  • Beat whites in a clean mixing bowl until stiff peaks form; fold into yolk mixture. Pour into a 10-inch springform pan.
  • Bake until golden brown, about 1 hour (if top browns too quickly, tent with foil). Let cool on a wire rack 30 minutes. Remove sides of pan. Let cool completely. Dust with confectioners' sugar. Serve with curd and berries; garnish with zest.

1/2 cup sugar
1/2 cup ground almonds, toasted

2 packages (8 ounces each) cream cheese, softened

1/4 teaspoon almond extract
2 large eggs
TOPPING:
1/2 cup packed brown sugar
1/4 teaspoon ground nutmeg
3 cups thinly sliced peeled fresh pears
1/2 cup slivered almonds

Steps:

  • In a small bowl, combine the flour, butter, sugar, almonds and nutmeg. Press onto the bottom of a greased 9-in. springform pan; set aside., In a large bowl, beat the cream cheese, brown sugar and extract until smooth. Add eggs; beat on low speed just until combined. Pour over crust., For topping, combine brown sugar and nutmeg. Add pears; toss to coat. Arrange over top. Sprinkle with almonds., Bake at 350° for 50-60 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate leftovers.

This is an old family recipe that uses our Texas pecans. I've made it often for birthdays and family gatherings. My brother-in-law said it was the only cake he's ever eaten in which the cake tastes as good as the frosting!

12 large eggs, separated
2 cups sugar
2-1/2 cups ground pecans
1/2 cup dry bread crumbs
1/2 teaspoon vanilla extract
BUTTERCREAM FROSTING:
1 cup milk
1/4 cup cornstarch
2 cups semisweet chocolate chips
1 cup butter, softened
2 cups confectioners' sugar
2 teaspoons vanilla extract
Whole pecans, optional

Steps:

  • In a bowl, beat egg yolks and sugar until thick and lemon-colored, about 5-6 minutes. Combine pecans and bread crumbs; stir into yolk mixture with vanilla. In another bowl, beat the egg whites until stiff peaks form; fold into batter. Divide evenly among three greased and waxed paper-lined 9-in. round baking pans. Bake at 350° for 25-30 minutes or until cakes test done. Cool for 10 minutes before removing from pan; cool completely on a wire rack. For frosting, combine milk and cornstarch in a saucepan until well blended. Add chocolate chips. Cook and stir over medium heat until thickened. Cool to room temperature. In a bowl, cream butter and confectioners' sugar. Add vanilla and beat until smooth. Stir in chocolate mixture; beat until fluffy. Spread between cooled cake layers. Frost top and sides. Garnish with pecans if desired.

½ (17.3 ounce) package frozen puff pastry, thawed
¼ cup butter
⅓ cup brown sugar
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
¼ cup maple syrup
4 firm pears - peeled, cored, and halved, or more as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll puff pastry out on a lightly floured surface to 1/4-inch thickness; place in the refrigerator.
  • Melt butter in a 9-inch cast iron skillet over medium heat; stir in brown sugar, cinnamon, and nutmeg and cook and stir until sugar dissolves, about 5 minutes. Stir maple syrup into brown sugar mixture; cook, stirring, until mixture begins to bubble. Remove skillet from heat.
  • Place one pear half, cut side up, into the center of skillet. Cut remaining pear halves in half again; arrange pear quarters around the center pear, cut sides up.
  • Place skillet over medium-low heat; cook pears, basting with syrup mixture, until they begin to soften, about 5 minutes. Remove skillet from heat.
  • Remove puff pastry from refrigerator; place pastry over pears, tucking edges of pastry around pears inside skillet.
  • Bake in the preheated oven until pastry is puffed and golden, about 20 minutes; allow to cool for 5 minutes. Place a serving plate over skillet; invert to remove tart (skillet will still be hot). Serve warm.
