PEANUT GROUND TURKEY LETTUCE WRAPS



Peanut Ground Turkey Lettuce Wraps image

These Peanut Ground Turkey Wraps are so easy to throw together and full of flavor!

Number Of Ingredients 17

¼ cup water
¼ cup peanut butter
3 Tbsp soy sauce
1 tsp sriracha
1 tsp honey
1 tsp ground ginger
1 tsp sesame oil
1 Tbsp olive oil
1 lbs ground turkey
12 oz cauliflower rice
Butter lettuce
Shredded carrots
Avocado, sliced
Peanuts
Cilantro, finely diced
Green onions, diced
Lime wedges

Steps:

  • In a small microwave safe bowl, heat water until warm.
  • Add in peanut butter and whisk until smooth.
  • Stir in soy sauce, sriracha, honey, ground ginger, and sesame and oil and stir to combine. Set aside.
  • In a large skillet, add in olive oil over medium heat.
  • Add in ground turkey and cook until no longer pink, 8-10 minutes.
  • Add in cauliflower rice and simmer. If frozen, let simmer an additional 5-10 minutes to ensure it's thawed and excess water has been removed.
  • Stir in peanut sauce to thoroughly coat dish. Set aside.
  • Set out butter lettuce and top with a small scoop of ground turkey mixture.
  • Top with your desired toppings. I like to use shredded carrots, avocado, peanuts, cilantro, green onions, and lime juice.
  • Serve and enjoy!

1/3 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
3 tablespoons creamy peanut butter
1 tablespoon rice vinegar
1 tablespoon sesame oil
1-1/2 pounds lean ground turkey
1/2 cup shredded carrot
2 tablespoons minced fresh gingerroot
4 garlic cloves, minced
1 can (8 ounces) whole water chestnuts, drained and chopped
1/2 cup chopped fresh snow peas
4 green onions, chopped
12 Bibb lettuce leaves
Additional hoisin sauce, optional

Steps:

  • Whisk together first five ingredients until smooth. In a large skillet, cook and crumble turkey with carrot over medium-high heat until no longer pink, 6-8 minutes; drain. Add ginger and garlic; cook and stir 1 minute. Stir in sauce mixture, water chestnuts, snow peas and green onions; heat through., Serve in lettuce leaves. If desired, drizzle with additional hoisin sauce.

1 tablespoon olive oil
1 medium yellow onion, diced
2 tablespoons soy sauce
2 cloves garlic, minced
1 pound ground turkey
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
¼ teaspoon red pepper flakes
¼ teaspoon ground ginger
1 head lettuce, separated into leaves

Steps:

  • Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.
  • Make the sauce by whisking soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and ginger together in a small bowl. Pour over turkey mixture and simmer until slightly reduced, 2 to 3 minutes.

1 1/4 lbs ground turkey
1 1/2 tablespoons minced garlic
2 serrano peppers, finely chopped
2 tablespoons fresh ginger, finely chopped
3 tablespoons lemongrass paste or 3 tablespoons finely chopped fresh lemongrass
6 stalks green onions, chopped
1 cup loosely chopped mushroom
1/4 cup loosely chopped water chestnut
2 tablespoons fish sauce
3 tablespoons hoisin sauce
1/2 teaspoon salt
1 teaspoon pepper
1/8 cup peanut oil
2 tablespoons grated carrots
1/4 cup fish sauce
1 teaspoon crushed red pepper flakes
3 limes, juice of
1 tablespoon minced garlic
3 tablespoons sugar
1 head iceberg lettuce or 2 heads boston lettuce leaves, separated into cups
1/4 cup fresh basil, coarsely chopped
1/4 cup fresh cilantro, coarsely chopped
1/4 cup fresh mint leaves, coarsely chopped

Steps:

  • In a large mixing bowl, combine the ground turkey, lemon grass paste, fish sauce and salt/pepper until thoroughly mixed and let sit for 10 minutes.
  • In a large saucepan or wok, heat peanut oil and stir fry the green onions, serrano peppers, ginger, mushrooms, water chestnuts, and garlic until soft (about 4 mins). Now add the ground turkey and hoisin sauce then cook until done (turkey is brown).
  • Chop the fresh herbs as above and place each in an individual serving container (small bowl or ramekin).
  • To make the sauce: In a small mixing bowl, soak the crushed red pepper in lime juice for several minutes Add the garlic, sugar, and fish sauce and stir to dissolve the sugar. Transfer to a serving container and add the grated carrots and serve at room temperature Refrigerated, the sauce will keep in a tightly covered container for up to 5 days.
  • To Serve: Arrange lettuce on a large platter surrounded by the containers of chopped herbs, etc. and the sauce. To make a wrap take a lettuce leaf in hand, scoop a large tablespoon of meat on to lettuce leaf, then add any herbs that you like. Add a teaspoon of sauce onto the mixture on the leaf and then roll and eat. Yum!
