It's easy to encourage children to eat an apple a day when this creamy peanut butter spread is served with it! I've made this cheese ball for many occasions, and it's always well received.

Ingredients

1 package (8 ounces) cream cheese, softened
1-1/2 cups peanut butter
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
3/4 cup chopped peanuts
Apple slices

Steps:

In a small bowl, beat cream cheese until fluffy. Add the peanut butter, confectioners' sugar and vanilla; beat until smooth. , Shape into a ball; roll in peanuts. Wrap in plastic. Refrigerate until serving. Serve with apples.

16 ounces cream cheese
1/2 cup real butter
1 teaspoon vanilla extract
3 tablespoons brown sugar
3/4 cup confectioners' sugar
1 cup chopped peanuts
1/2 cup peanut butter chips
1/2 cup chopped Reese's Peanut Butter cups

Steps:

Soften cream cheese and butter. Beat well, then cream in brown sugar and confectioners' sugar.
Add vanilla extract.
Fold in peanut butter chips.
Fold in chopped Reese's Peanut Butter cups.
Refrigerate in a bowl for 3 hours.
Form into a ball, then roll in chopped peanuts.
Serve with graham cracker or chocolate graham cracker sticks.

This recipe is from a cookbook that came with a Sears food processor. That was about 30 years ago. The food processor is long gone, but the recipe lives on. I haven't made this for company in years, but I occasionally make it for myself. Instead of making it into a ball, I put the mixture into a covered bowl and serve myself from that. I like it on some crackers for lunch or as a bedtime snack.

Ingredients

1 lb sharp cheddar cheese
1 small onion, peeled and quartered
1 cup cocktail peanuts
1/2-3/4 cup mayonnaise
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper

Steps:

Cut cheese into strips that will fit into chute of food processor.
Use shredder disc.
Process to grate cheese.
Remove shredder disc and cheese.
Use steel chopping blade.
Chop onion.
Add cheese, peanuts, mayonnaise and seasonings.
Process to blend thoroughly.
Remove from processor.
Form into a ball; wrap in plastic and chill thoroughly.

Beat together the cream cheese, powdered sugar, peanut butter and brown sugar in the bowl of your stand mixer.
Spoon onto a large piece of plastic wrap; bring up all four corners and twist tightly to form a ball.
Freeze for 1 hour and 30 minutes or until the cheese ball is firm enough to keep its shape. Place peanut butter and chocolate chips on a plate. Remove the plastic wrap from the ball and roll it into the chocolate and peanut butter chips to completely cover, pressing them into the ball if necessary.
Place the ball on serving dish; cover and freeze for 2 hours or until almost firm. (Can be made ahead. If frozen overnight, thaw at room temperature for 20 to 30 minutes before serving.) Serve with graham cracker sticks, teddy grahams, Nilla wafers, or apple slices for dipping or spreading.
