Buttery Peanut Butter Blondies made from scratch.

115 grams (1/2 cup or 1 stick) butter, melted
125 grams (1/2 cup) smooth peanut butter*
225 grams (1 and 1/4 cup) brown sugar
1 teaspoon vanilla extract
1 egg + 1 egg yolk
175 grams (1 and 1/4 cup) plain flour or all purpose flour
1/2 teaspoon baking powder
150 grams (1 cup) chocolate chips
30 grams (1/2 cup) mini marshmallows

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square baking tin with baking or parchment paper, ensuring two sides overhang.
  • In a large mixing bowl, add melted butter. Then add peanut butter, sugar, vanilla and eggs and gently whisk together.
  • Add flour and baking powder. Stir until smooth batter forms. Add chocolate chips and marshmallows and stir again.
  • Pour blondie batter into prepared tin, smooth the top and place in the oven. Bake blondies for approximately 30 minutes or until golden on the edges and a skewer inserted in the middle comes out clean.
  • Leave in pan to cool completely - blondies will firm up as they cool. Cut into squares to serve.

Nonstick cooking spray
2 cups sugar
1/2 cup light corn syrup
6 tablespoons unsalted butter, cubed
1/2 teaspoon baking soda
1 1/2 cups roasted salted peanuts

Steps:

  • Line a rimmed baking sheet with foil and grease with nonstick cooking spray.
  • Stir together the sugar, corn syrup and 1/2 cup water in a medium saucepan fitted with a candy/deep-fry thermometer. Bring the mixture to a boil over medium heat, then continue to boil until it's golden brown and it reaches 340 degrees F, about 15 minutes.
  • Working quickly, remove the pan from the heat and stir in the butter and baking soda until smooth (it will foam and bubble up). Stir in the peanuts until evenly distributed amongst the sugar mixture.
  • Pour onto the prepared baking sheet and quickly smooth with a rubber spatula into a thin and even layer. Let harden uncovered at room temperature until cooled completely. Break into pieces and store in an airtight container.

1 cup white sugar
½ cup light corn syrup
¼ teaspoon salt
¼ cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda

Steps:

  • Grease a large cookie sheet. Set aside.
  • In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
  • Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

200g caster sugar
100g roasted peanuts
1 tsp sea salt flakes

Steps:

  • Line a baking tray with baking parchment. Melt the sugar in a medium frying pan over a medium heat for 4-5 mins until caramelised - it should be a dark amber colour. Don't stir, as this causes the sugar to crystallise - instead, tilt the pan slowly so the sugar melts evenly.
  • Add the peanuts, stir with a wooden spoon, then quickly and carefully tip onto the prepared tray. Immediately sprinkle over the sea salt flakes and leave to cool until set. Will keep for several weeks in an airtight container.

1 cup packed brown sugar
1/2 cup sugar
2 eggs

FROSTING:
1/4 cup butter, softened
1/4 cup baking cocoa
2 tablespoons milk

1-1/2 cups confectioners' sugar
1/3 cup peanut butter chips

Steps:

  • In a large bowl, cream the peanut butter, butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour and baking powder; add to creamed mixture alternately with milk, beating well after each addition. Stir in chips. , Spread into a greased 13x9-in. baking pan. Bake at 325° for 35-40 minutes or until a toothpick inserted in the center comes out clean (do not overbake). Cool on a wire rack., For frosting, in a small bowl, combine the butter, cocoa, milk, corn syrup and vanilla. Gradually add confectioners' sugar; beat until smooth. Frost brownies. Sprinkle with chips. Cut into bars.

1 1/2 cups light brown sugar, firmly packed
3/4 cup butter
2 large eggs
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 cups peanut brittle, coarsely chopped
2 teaspoons vanilla extract
1 teaspoon butter flavor extract

Steps:

  • Combine brown sugar, and butter in a saucepan and cook over medium heat until butter is melted.
  • Remove this mixture from the heat and cool slightly.
  • Add eggs, one at a time, beating until just blended.
  • In a separate bowl, combine the flour, baking powder, and salt.
  • Whisk the dry mixture to blend.
  • Add the brown sugar mixture and stir until well blended.
  • Stir in the extracts and peanut brittle.
  • Lightly grease and flour a 13 X 9 inch baking pan; press the mixture into the baking dish.
  • Bake at 350 degrees for 20-25 minutes or until golden brown.
  • Remove from oven and cool completely before cutting.
  • These can be cut into rectangular or diamond shaped bars.
