These wonderful fritters were shared with our friends in town, only after I had 2 for myself. They are perfect for breakfast with a cup of coffee. I think they could qualify as a desserts as well. Hope you enjoy!

2 large eggs
1/3 c milk
1/2 tsp vanilla
1 c all purpose flour
1 tsp baking powder
3 Tbsp sugar
1/2 tsp salt
1/4 to 1/2 tsp nutmeg
1 Tbsp butter, melted
1 1/2 c mixed fruit (i used 1/2 peaches diced small and 1/2 blueberries
oil for frying
GLAZE
1 c powdered sugar
heavy cream (enough to make glaze)
1/2 tsp orange zest (optional)

Steps:

  • 1. Heat oil in deep fryer or deep frying pan to 375 degrees F.
  • 2. Whisk milk, eggs and vanilla together. Combine flour, baking powder, sugar, salt and nutmeg. Fold in peaches; add melted butter.
  • 3. With cookie scoop, scoop batter into hot oil. The batter will sink and then rise. Cook for about 2 - 3 minutes until golden brown, depending on size of fritters. Remove fritters from oil; drain on paper; glaze.
  • 4. GLAZE: Mix together and drizzle over fritters.
  • 5. NOTE: you can also just roll cooled fritters in powdered sugar if you don't want to glaze.

Use up the season's juicy, sun-ripened peaches in this corn fritter recipe filled with gooey Halloumi cheese and sweet onions. These fritters are decadent and slightly sweet, and homegrown herbs add a fresh taste. Number Of Ingredients 13

1-1/4 cups cornmeal
2 tablespoons minced fresh basil
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1 large egg plus 1 large egg white
3/4 cup 2% milk
2 tablespoons honey
1 cup finely chopped sweet onion
1/2 cup diced Halloumi cheese
Oil for deep-fat frying
1 medium peach, chopped
4 thin slices prosciutto, cut into thin strips

Steps:

  • In a large bowl, whisk the first 5 ingredients. In another bowl, whisk egg, egg white, milk and honey until blended. Add to dry ingredients, stirring just until moistened. Fold in onion and cheese; let stand 10 minutes., In an electric skillet or deep fryer, heat oil to 375°. Stir batter. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, 2-3 minutes on each side. Drain on paper towels. (Keep cooked fritters warm on a baking sheet in a 200° oven until all fritters are made,), Serve fritters with chopped peach and prosciutto; sprinkle with additional pepper.

  • Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
  • Add the remaining 7 Tablespoons of sugar, eggs, butter, vanilla extract, salt, nutmeg, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
  • Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size.   • For the fritters: Combine the flour, sugar, baking powder, salt and cinnamon in a large bowl. Whisk to combine.
  • In a medium bowl, combine the eggs, milk, vanilla and melted/slightly cooled butter. Whisk to combine. Make a well in the dry ingredients and add the wet ingredients. Stir just until combined. Add the blueberries and fold in. You'll want lots of blueberries, so add until the dough is well spotted with fruit. You almost can't have too many blueberries!
  • *Tips: Have a cooling rack ready, set over a baking sheet. For deep frying, use a heavy, deep pot if you don't have a deep fryer. Have a lid handy, just in case. You'll need 2-3 inches of oil. If you have a thermometer, heat oil to 375° F. Without a thermometer, test oil heat by dropping a bit of batter in. It should float, sizzle immediately, and turn golden within a minute or so.
  • In a heavy, deep pot, heat oil to 375° F. Drop fritters by the spoonful in to hot oil. Cook until underside is deep golden brown. Flip over and cook the other side. Remove to a cooling rack set on top of a baking sheet. Continue until all fritters are cooked.
