This Georgia peach pound cake can also be made with other fruits such as apple or cherry.

1 cup butter or margarine, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 cups fresh peaches, pitted and chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter a 10 inch tube pan and coat with white sugar.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Reserve 1/4 cup of flour for later, and sift together the remaining flour, baking powder and salt. Gradually stir into the creamed mixture. Use the reserved flour to coat the chopped peaches, then fold the floured peaches into the batter. Spread evenly into the prepared pan.
  • Bake for 60 to 70 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Allow cake to cool in the pan for 10 minutes, before inverting onto a wire rack to cool completely.

1 cup butter, softened
2 cups sugar
6 large eggs, room temperature
1 teaspoon almond extract
1 teaspoon vanilla extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
2 cups diced fresh or frozen peaches
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream, beating well after each addition. Fold in the peaches., Pour into a greased and floured 10-in. fluted tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

It's peach season and my husband and family love fresh peaches. Since I make peach custard pies all season long, recipe on here by the way, I thought I'd try a peach pound cake. You can frost, glaze or leave plain, that's up to you. I also put in Peach Schnaaps, for a more peach flavor. Enjoy.

1/4 cup(s) shortening
3 cup(s) sugar
6 - extra large eggs
3 1/4 cup(s) flour
1 1/4 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1 1/2 cup(s) sour cream
1 - small package gelatin
2 1/2 cup(s) fresh peaches, peeled and chopped
1 teaspoon(s) vanilla extract
1 teaspoon(s) almond extract
2 teaspoon(s) peach schnapps
1 cup(s) chopped walnuts
1 cup(s) flaked coconut

Steps:

  • Preheat oven to 350. Grease and flour and sugar a 10 inch tube pan. Cream butter, sugar and shortening until fluffy. Add eggs, one at a time, beating well after each addition. stir dry gelatin mix into sour cream and set aside. Add flour, baking soda and salt along with the sour cream mixture, beginning and ending with flour. Add flavorings, schnapps, fold in nuts and coconut and gently fold in peaches. Batter is very thick and will be high in the pan. Check my pictures. If you want you can make two smaller cakes out of this batter, but this cake is beautiful and big as is. It can be frosted, I would use a cream cheese with peach schnapps or drizzle or powdered sugar after cooled.

  • Preheat oven to 350°.
  • Grease and flour a 10-inch tube pan and set aside.
  • In large mixing bowl, beat butter and sugar well, until very light and fluffy.
  • Beating well after each addition, one at a time add eggs.
  • In a separate bowl, combine flour, soda and salt.
  • Mix together sour cream and peaches.
  • Beginning and ending with dry ingredients, alternately add dry ingredients and sour cream-peach mixture to creamed mixture.
  • Beat well after each addition.
  • Stir in extracts.
  • Pour batter into prepared pan and bake until cake tests done, 75 to 80 minutes.
  • Cool slightly, remove from pan and cool completely.
  • 10-12 servings.
  • This recipe was delicious, using the amounts stated in my recipe. The reviewer's recipe is an entirely different recipe, and should not be confused with mine.

  • Preheat oven to 325 degrees. Spray a 12 cup bundt pan with nonstick cooking spray and add a few tablespoons of all-purpose flour to pan, shake it around to coat well, then tap out and discard any excess.
  • In the bowl of an electric stand up mixer, gradually beat butter until it's creamy. Add sugar and beat at medium speed for 5-7 minutes, or until mixture is light and fluffy. (I beat for 7 minutes). Add eggs, one at a time, beating just until the yolk disappears and is incorporated into the batter.
  • In a medium bowl, mix together flour, salt, and baking soda. Add to butter mixture, alternating with sour cream, beginning and ending with the flour mixture. Beat batter on low just until blended after each addition.
  • With the mixer on low, stir in vanilla and peaches and continue to beat for about 1 minute. Using a large rubber spatula or wooden spoon, give the batter a final stir and make sure the peaches are mixed evenly throughout the batter.
