PEACH BUNDT CAKE



Peach Bundt Cake image

If you have fresh peaches, they'll work great in this cake. Just make sure they're peeled. Frozen fruit won't work, because the water content is too high.

2 sticks (1 cup) unsalted butter, softened
2 cups sugar
4 large eggs
1 tablespoon pure vanilla extract
One 16-ounce can sliced peaches, drained of juices and roughly chopped
3 cups all-purpose flour (see Cook's Note)
1 teaspoon kosher salt
1 1/2 teaspoons baking powder
1/4 cup buttermilk or whole milk
Nonstick vegetable oil spray

Steps:

  • Preheat the oven to 350 degrees F.
  • With a hand mixer on high speed or stand mixer with paddle attachment, beat the butter and sugar for about 5 minutes, until the mixture is light and fluffy. It should look like whipped cream in texture and color. As you're beating, scrape the sides of the bowl with a rubber spatula to make sure all of the butter is incorporated.
  • Add the eggs one at a time while continuing to beat on high (see Cook's Note). Add the vanilla and beat the mixture on high speed for another 4 to 5 minutes, scraping the sides of the bowl as you beat.
  • In a medium bowl, toss the peaches with 1/4 cup of the flour, coating the fruit. Add the peach-and-flour mixture to your mixing bowl and beat on high until the peaches are incorporated.
  • In a separate bowl, combine the remaining 2 3/4 cups flour with the salt and baking powder.
  • Turn the hand mixer down to a low speed. Add about half of the dry ingredients, taking care to scrape the sides of the bowl to make sure all of the ingredients are well blended. Add the buttermilk and continue to mix. Finish by adding the rest of the dry ingredients and incorporating it into the batter.
  • Spray a nonstick Bundt pan with nonstick vegetable oil spray. Pour in the cake batter and bake for 50 to 55 minutes. A toothpick or knife inserted into the cake center should come out dry. If it's wet, let the cake bake a few more minutes.
  • Remove the pan from the oven and let the cake cool for 15 minutes. Flip it onto a plate to serve.

1 can(s) 29 oz. can of peaches in heavy syrup ( drain off the juice and save. process the peaches in a blender or chopper)
3 - eggs
1 stick(s) butter
1 teaspoon(s) vanilla
1/2 cup(s) milk mixed with 1/2 cup of peach juice
1 cup(s) go lean crunch/honey bunches of oats/great grains(any type of crunchy cereal)
GLAZE
2 teaspoon(s) peach juice
1 tablespoon(s) orange juice
1/2 cup(s) powdered sugar

Steps:

  • Preheat oven to 350 degrees. In a bowl, whisk together all the dry ingredients except for sugar and the cereal
  • Place sugar and butter in mixer bowl and beat until well combined. Add eggs, one at a time, blending well after each addition. Turn the mixer speed down to low and add vanilla extract and peaches that have been processed.
  • Add the flour mixture and the sugar mixture alternately with the milk and peach juice, till it is all combined. When it it all combined mix for about 3 minutes on medium speed. Then by hand stir in the cereal.
  • Put the batter into a bundt pan that has been greased and floured. Bake for 45-50 minutes or until a toothpick inserted comes out clean. Let rest for 10 minutes before inverting on to a plate.
  • When the cake is cool mix together the peach juice orange juice and powdered sugar to create a glaze. Drizzle over the cake.

MAKE-AHEAD PEACH BREAKFAST BAKE



Make-Ahead Peach Breakfast Bake image

2 tablespoons butter
2 peaches, peeled, sliced
2 tablespoons packed brown sugar
2 teaspoons vanilla
1 1/2 cups Original Bisquick™ mix
2/3 cup heavy whipping cream
4 eggs
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla
2 peaches, peeled, sliced
Real maple syrup

Steps:

  • Heat 10- to 12-inch ovenproof skillet over medium heat; add 1 tablespoon of the butter. Add 2 sliced peaches, and sprinkle with brown sugar. Cook 3 minutes; stir peaches, and cook another 2 to 3 minutes or until caramelized and soft. Remove from the heat; add 1 teaspoon of the vanilla. Toss well, then remove and slide the peaches onto a plate. Rub remaining 1 tablespoon butter in warm skillet. Let skillet cool.
  • In medium bowl, add Bisquick mix, 2/3 cup whipping cream, eggs and 1 teaspoon vanilla. Mix to combine, being careful not to overmix. Fold in caramelized peaches.
  • Pour batter into buttered skillet (you can use a greased 13x9-inch pan, if you prefer). At this point, cover the skillet and place in the fridge overnight, or go on to baking step.
  • The next morning (or whenever you are ready to go on to the baking step), heat oven to 450°F.
  • Bake at 450°F for 10 minutes, then reduce oven temperature to 350°F, and continue baking 10 to 15 minutes or until lightly golden on top.
  • Meanwhile, beat 1 cup whipping cream with electric mixer on high speed until soft peaks form. Add powdered sugar and 1 teaspoon vanilla, and whip until combined.
  • Cut into wedges, and serve hot with sliced peaches, a dollop of whipped cream and a drizzle of maple syrup.

6 large eggs, room temperature
1 1/4 cups sour cream

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 14-cup nonstick Bundt pan. Whisk together 3 cups flour, baking soda, and salt. Toss peaches with remaining 2 tablespoons flour to coat. In a large bowl, using a mixer, beat 2 sticks butter and 2 cups sugar on medium-high until fluffy and pale yellow. Beat in eggs, one at a time, until incorporated. With mixer on low, add flour mixture in 2 additions, alternating with sour cream, and beat until combined. Fold peaches and vanilla into batter and transfer to pan. Tap pan firmly on counter several times to remove any air bubbles and smooth top.
  • Bake until a toothpick inserted in center comes out clean, 1 hour. Transfer pan to a wire rack set over a rimmed baking sheet; let cool 15 minutes.
  • Meanwhile, melt remaining 1 stick butter. Combine remaining 1/4 cup sugar and cinnamon. Using an offset spatula or small knife, loosen cake from pan, then invert onto rack. Working in sections, brush cake with butter and sprinkle liberally with cinnamon sugar. Serve warm or at room temperature, with whipped cream if desired.
