PORK TENDERLOIN WITH PEACH BASIL COMPOTE

Steps:
- Place pork in a baking dish. Pour vinegar over the pork. Sprinkle with Montreal Seasoning. Turn over and sprinkle the other side with Montreal Seasoning.
- Refrigerate for at least 30 minutes, turning the pork over at least once in this time.
- While the pork is marinating, peel the peaches and cut them into small pieces. Toss the peaches in the lemon juice to keep them from browning.
- Put the peaches in a saucepan over medium heat and cook until they begin to boil.
- Reduce the heat to low and stir in the honey, salt, and basil.
- Cook until peaches are soft enough for you to mash them up with a spoon (about 20 minutes), and mash them to your desired consistency. Keep warm. I turned mine off, but left it on the burner, and it stayed pretty warm.
- Preheat oven to 425 degrees.
- Bake the pork tenderloin right in the baking dish it marinated in until done. The package mine came in said 25 minutes, but it took 45 minutes, so just keep checking it.
- Slice and top with peach compote to serve.

- Heat oven to 375°F. In 8-inch skillet, heat 1 tablespoon oil over medium-high heat. Add 1 minced clove of garlic; cook and stir 30 to 60 seconds or until garlic is tender. Remove from heat. Stir in remaining stuffing ingredients.
- Butterfly each pork tenderloin by making lengthwise cut 3/4 of the way through, being careful not to cut tenderloin into 2 pieces. Open each tenderloin and lay flat. If desired, sprinkle cut sides of each with salt and pepper.
- Spread stuffing evenly over cut side of 1 tenderloin. Place second tenderloin, cut side down, over stuffing (to ensure even cooking, place wide end of 1 tenderloin at narrow end of the other). Tie at intervals with cotton string.
- In small bowl, mix 1 tablespoon oil, 1 minced clove of garlic and the fennel seed. Brush tenderloin with oil mixture; place on rack in shallow roasting pan.
- Bake uncovered 35 to 45 minutes or until pork has slight blush of pink in center and meat thermometer inserted in center of pork reads 160°F. Remove string before cutting into slices.

- In a medium bowl, stir together peaches, butter, basil, 1/2 teaspoons salt, and 1/2 teaspoons pepper.
- Butterfly pork tenderloin, cutting to but not through pork. Open pork, and place between 2 sheets of heavy duty plastic wrap; pound pork to 1/4" thickness. Spoon peach mixture down center of each tenderloin. Fold over to enclose filling, and wrap pork in prosciutto. Sprinkle with remaining 1/2 teaspoons salt and 1/2 teaspoons pepper.
- Preheat oven to 400 degrees.
- In a large oven-safe skillet, heat olive oil over medium high heat. Add pork, and cook for 3 minutes per side or until prosciutto begins to brown. Place skillet in oven, and bake for 20 minutes or until a meat thermometer inserted in thickest portion registers 145 degrees. Remove pork from skillet, and let stand for 10 minutes before serving.
- Add broth to skillet, and cook over medium-high heat, scraping browned bits from bottom of skillet with a wooden spoon. Cook until broth is reduced to 1 cup; whisk in basil and mustard. Serve sauce over pork.

PEACH SALSA STUFFED PORK LOIN

- A simple pork loin is transformed when the tangy zest of citrus is paired with sweet peaches for this scrumptious dish
- Peach Salsa: In a small bowl combine the peaches, fruit zests, jalapenos, cilantro, green onions, jam and 1/2 teaspoon each of the garlic salt and pepper, mix, cover and chill.
- Pork Roast: Cut a lengthwise slit down the center of the roast to within 1/2-inch of the bottom. Open the roast so it lies flat. On each half, make another lengthwise slit down the center to within 1/2- inch of the bottom. Open roast and flatten.
- With a spoon, spread the peach salsa on the surface of the meat covering it completely but leaving about an inch at each end uncovered. Roll up the roast lengthwise (from long side) very tightly and tie in 3 or 4 places with the string. Let the meat sit in refrigerator for 20 minutes.
- Brush the outside of the roast with olive oil and sprinkle with the remaining salt and pepper.
- Place the roast on a well-oiled grill on medium-high heat (or a 350 degree Fahrenheit oven); cook for 1 hour and 20 minutes (or 20 minutes per pound) or until a meat thermometer inserted into the pork reaches an internal temperature of 160 degrees. Turn several times during the cooking time.
- Move meat to a large platter or cutting board and let the tenderloin rest, covered with foil, for 15 minutes. Remove the foil, discard the string and slice meat into 1/2-inch slices.

SPINACH AND MINT-BASIL PESTO-STUFFED PORK LOIN

- For the pesto: In a food processor fitted with a steel blade, pulse the basil and mint 3 to 4 times or until chopped, then add the pine nuts and salt and pulse an additional 2 to 3 times. Add the garlic and cheese, pulse 2 times. With the food processor running, slowly add the oil to blend, this should take 1 minute. Don't over-pulse or puree; this will result in a brown liquid sauce, not a bright herb pesto.
- For the pork: To butterfly the pork, place each loin on a cutting board and slice lengthwise through the center, about 3 inches deep, but not cutting all the way through, until it opens to form a 10 by 10-inch square.
- Preheat the oven to 350 degrees F.
- Season the inside of both loins with salt and pepper and evenly spread the pesto, leaving a 2-inch border on all sides. Sprinkle with feta and top with spinach. Roll tightly lengthwise. With butchers twine, tie several knots around the stuffed loins, 4 to 5 times, to ensure even cooking.
- Heat the oil in a heavy bottomed saute pan over high heat, season the outside of the loins with salt and pepper, and sear on all sides, 2 to 3 minutes per side. Remove from the pan and place the loins on a baking sheet lined with aluminum foil and bake for 20 to 25 minutes, or until the internal temperature reaches 165 degrees F. Allow to rest for 5 to 10 minutes before slicing and serving.

- Combine the ginger, 2 tablespoons vinegar and 1 tablespoon high-heat cooking oil, like canola, in a large resealable plastic bag. Sprinkle the pork with freshly ground black pepper and seal in the bag, squeezing out as much air as possible. Refrigerate at least 4 hours, or preferably overnight.
- When ready to cook, move the pork to the counter to bring it to room temperature. Preheat the grill for cooking over medium heat (350 to 400 degrees F).
- Cut the peaches in half crosswise around the pit (not through the stem) for easier release. Twist the halves in opposite directions to release the flesh from the pit. Twist the pit out of the peach, cutting tightly around the pit with a paring knife, if necessary. Drizzle the peaches cut-side up with the remaining 2 teaspoons vinegar.
- Drain off the marinade and sprinkle the pork with 1/4 teaspoon salt. Rub the grill grates lightly with oil and grill the pork until it has nice grill marks and releases easily from the grill, about 8 minutes.
- Turn the pork and cook another 5 minutes. Once more, turn to another side and cook an additional 5 minutes. Remove the pork and cover it loosely with foil. Allow to rest 5 to 10 minutes to let the juices redistribute.
- Meanwhile, place the peaches on the grill cut-sides down and cook until they have nice grill marks, release easily from the grill and are softened, 8 to 10 minutes.
- Sprinkle the pork and peaches with basil and additional salt and pepper to taste. Slice and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain bacon slices on paper towels. Reserve drippings in the skillet.
- Dry pork tenderloin with paper towels and season both sides with salt, pepper, and 1/4 teaspoon ground ginger.
- Increase heat to medium-high and brown tenderloin in the bacon drippings on all sides, 5 to 7 minutes. Removed browned tenderloin from skillet, transfer to a plate, and keep warm.
- Reduce heat to medium. Add onion slices to the same skillet and stir until onions are soft and beginning to take on some color, 3 to 5 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Add sliced peaches, chicken broth, orange juice concentrate, and remaining ground ginger. Bring to a boil and return tenderloin to the skillet. Pile peaches on top of the meat, cover, reduce heat to simmer, and cook until pork is slightly pink in the center, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Arrange pork and peaches on a serving platter.
- Meanwhile, combine fish sauce, water, and cornstarch in a small bowl and stir until there are no lumps. Increase heat to medium and bring skillet contents back to a boil. Add cornstarch mixture to the liquid in the skillet and stir quickly until sauce is bubbly and thickened, about 5 minutes.
- Pour sauce over pork and peaches. Crumble up cooked bacon and sprinkle over the peaches. Garnish with parsley, if desired, and serve warm.

I am not sure, but I believe this recipe comes from one of those recipe cards found in some magazines, or perhaps it is another from the Government of Alberta. Doesn't really matter because it is GOOD! I find that if you get all your veggies, bread, etc. prepared in advance, this comes together very easily. Please, enjoy!

- Preheat oven to 325°F - have a roasting pan, with rack, ready.
- Split tenderloins lengthwise, but do not cut completely through the meat (this is easily accomplished if the tenderloins are very cold).
- Spread the tenderloins open and pound them gently to make them a bit thinner.
- Melt butter in a heavy skillet.
- Add celery, onion, sweet peppers and cook gently for about five minutes, stirring occasionally.
- Add breadcrumbs and continue cooking and stirring until the crumbs are lightly browned.
- Remove from heat and add apple, raisins and spices.
- Cover one of the tenderloins with the stuffing.
- Lay the other tenderloin on top and wrap the strips of bacon around them, either securing with toothpicks or tying.
- Put on rack in roasting pan in preheated oven for about 1-1/2 hours or until meat is very tender and cooked through. Do not overcook.
- Nice served with baked or roasted potatoes and a baby spinach salad.
GRILLED GARLIC/BASIL PORK TENDERLOIN
This is another favorite for me. Simple, lean, healthy and inexpensive. Goes well with green beans and perhaps a grilled Vidalia onion.

- Trim any excess fat and silver skin from the tenderloins and place in a gallon size zip-loc bag.
- Add the olive oil, garlic and basil, evacuate most of the air and seal the bag. Message until the garlic and basil is evenly distributed around the meat and refrigerate for 4 hours or more.
- Remove the tenderloins from the refrigerator about 30 minutes prior to grilling. Preheat the grill to allow searing to take place.
- Sear the tenderloins for 2 minutes on each side to seal in the juices and to provide grill marks. Reduce heat and grill for an additional 14-16 minutes turning after 7-8 minutes depending on how large your tenderloins are and how well done you like your pork.
- This entree goes very well with fresh green beans and a grilled Vidalia onion.

- Remove thin slice from top and bottom of onion and peel. Slice in half laterally. For each half, make 4 cuts from top toward bottom 1/2 way through onion. Season with salt and pepper and place small pat of margarine in center. Cut bacon strip in half and lay on top of onion. Wrap in foil and grill for 60 minutes at 350°. The onion will caramelize and become very sweet.

- Place dried fruit mix in bowl and add boiling water.
- Set aside to rehydrate.
- Trim all fat and silverskin from tenderloin.

- If you have time, toast walnuts over medium heat until fragant or use as they are.
- Wash lettuce and spin dry. Put in a large salad bowl.
- Wash and dry peach. Cut in 1/4 inch wedges from pit and add to lettuce.
- Tear basil into 1/2 inch pieces, sprinkle over peach.
- If using cheese for additional color and flavor, crumble over salad.
- Top salad with walnuts and mint leaves.
- For dressing whisk together all ingredients except oil until well blended. Add oil, mix well and taste for a nice slightly sour balance, there will be sweetness from the peach.
- Pour dressing over salad and mix at the table.

- Cook sugar until it turns a golden brown. Remove from heat and add vinegar. The vinegar will harden the sugar. Place back on stove top and cook on medium for about 10 minutes. Swirling the pan to make sure the sugar remelts.
- Once the mixture has started to thicken, remove from heat and add honey, basil and peach puree. Cook for another 15 minutes to thicken.
