- In a 5-qt. slow cooker, layer the first 9 ingredients in order listed (do not stir). Cover and cook on high for 4-5 hours or until vegetables are tender. Stir in milk. Discard bay leaves before serving.

CROCK POT SPLIT PEA SOUP
Steps:
- Gather the ingredients.
- Layer the ingredients in a slow cooker in the order given-split peas, ham, carrots, onion, celery, garlic, bay leaf, parsley, pepper, and salt; add the water or stock. Do not stir the ingredients.
- Cover and cook on high for 4 to 5 hours or on low for 8 to 10 hours until peas are very soft and the ham falls off the bone.
- Remove the meat from the bones and chop. Save some of the chopped ham for a garnish, if desired. Remove the bay leaf.
- Before serving, mash the peas slightly to thicken the soup or blend the soup in batches for a smoother texture (safety tips below).

Steps:
- Tie the parsley stems and thyme together with kitchen string and place in a 6-quart slow cooker. Add the split peas, leek, celery, carrots, 1 teaspoon salt and 1/2 teaspoon pepper; stir to combine. Add the turkey leg and 7 cups water. Cover and cook on low until the split peas and meat are tender, 6 to 8 hours.
- Discard the herb bundle. Discard the skin and bones from the turkey leg and shred the meat. Vigorously stir the soup to break up the peas and make the soup smoother. Thin with water, if desired. Stir in the chopped parsley and about three-quarters of the turkey meat; season with salt and pepper.
- Ladle the soup into bowls. Thin the yogurt with a little water, then spoon onto the soup. Top with the thawed peas and the remaining turkey. Serve with bread, if desired.

- In a 4- or 5-qt. slow cooker, combine all ingredients. Cook, covered, on low 7-9 hours or until peas are tender., Remove ham bone from soup. When cool enough to handle, remove meat from bone; discard bone. Cut meat into cubes and return to soup or save meat for another use. Remove bay leaf. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

This is a modified version of my Mom's Pea Soup recipe - minus the ham bone, and made for the crock pot. It could easily be further modified to be vegetarian with the substitution of vegetable broth instead of chicken broth.

ALL DAY PEA SOUP (CROCK POT)
This is one of our favorite crock pot soups. It's very quick to assemble and very tasty with some crusty bread on a cold and rainy day. It is economical and vegetarian friendly.

Steps:
- Place all ingredients except for the sausage into your crock pot (put the peas on the bottom). The peas will grow some during cooking, so do not make more than 3/4 full to start with (ask me how I know). If you do not have bouquet garni, use your favorite blend of herbs for soup. Make sure the liquid at least covers the peas. 3 cups works in my oval pot, but it make take more in yours.
- Cook on LO for 4 to 6 hours, depending on crock pot. With my old crock pot, I could cook this for 8 hours on low, but with the new one it's closer to 6. This will also work on High for 2-3 hours.
- Place the sausage in for the last 20 minutes of cooking. Ideally, we grill the sausage and stir it in at the table, but in the real world, I've even microwaved the sausage and then stirred it in at the table.
- If you are serving a mixed crowd (some vegetarian, some not) make this with the vegetable stock and serve the sausage on the side. It will please both groups, and the soup will not suffer. If you leave out the sausage, you may find that you need to add a second teaspoon of herbs towards the end of cooking. If you have smoked paprika, it is a nice addition to add the smoky flavor that is missing from the sausage.
- Taste and adjust seasonings. It sometimes needs salt and pepper. Remove the bay leaf.
- Leftovers reheat well and will freeze. If you have a large crock pot, it is an easy recipe to double.
CROCKPOT PEA SOUP
Simple recipe for a hearty pea soup that I literally prefer nine days old. Very handy if you have a ham bone left over from the holidays. This recipe is suited for an 8 qt crockpot, but simply half all ingredients but the bones for 4 qt.

- dice onions and saute in the olive oil until soft then add to crock pot.
- peel and slice the carrots and add to crock pot
- add bone(s), stock, and garlic powder to crock pot.
- add water. you may add water to achieve volume or final density you desire (I usually maximize the space in my crock pot, and this results in a less dense soup that doesn't turn into pudding in the fridge).
- salt and pepper to taste.
- you may opt to make a stock from the pork bone(s) in your crock pot overnight the night before. This makes it easier to remove the bones and cartilage, then just add everything else.

- Prepare vegetables.
- In a crock pot, lay the smoked pork neck pieces at the bottom of the pot, covered with the vegetables. Add the split peas, bay leaves, and some salt and pepper. Don't add the boneless diced ham yet!
- On the stove, heat water to boil. Pour hot water over crock pot contents to cover. Set crock pot on high.
- Let cook for approximately 6 hours, or when done. Check periodically to make sure it has enough water for the peas to absorb.
- Adjust salt and pepper to taste, and add diced ham to warm through. Remove bay leaves and serve.
