PAULA'S VOLCANO CAKE

This decadent chocolate cake is perfect for a special occasion.

1 (8 oz) package softened cream cheese
1 stick room temperature, plus 4 tablespoons butter for the glaze butter
2 cups (4x or 10x) sugar
1 cup sweetened coconut flakes
1 cup pecans
1 (18.25 oz) box prepare by following direction on box German chocolate cake mix
10 or candy of choice bite-sized almond and chocolate covered candy
1/4 cup cocoa powder
1/2 cup milk
1 1/2 cups confectioner's sugar
1/2 teaspoon almond extract

Steps:

  • For the cream mixture:
  • Beat ingredients (the softened cream cheese, 1 stick butter and sugar) together with an electric mixer. Set aside until ready to use.
  • Cake:
  • Preheat oven to 350 °F. Grease a 13 by 9 by 2-inch cake pan.
  • Line bottom of greased pan with coconut flakes. Sprinkle pecans on top of coconut. Set aside.
  • Follow directions on back of box to prepare cake. Beat for approximately 2 minutes, using an electric mixer. Fold in bite-sized candy. Pour into cake pan. Evenly space dollops of cream mixture on top of the cake. When the cake cooks, the cream will sink down to the bottom. This will be your "volcano" of flavor. Place in oven for 40 to 45 minutes. While cake is still hot spread the glaze evenly over the cake.
  • For the glaze:
  • In a small saucepan, melt the 4 tablespoons of butter over medium-low heat. Whisk in cocoa powder and add milk until you get a thin consistency. If glaze is too thick, add more milk. While bringing the butter and milk mixture to a boil, whisk in confectioner's sugar and almond extract. Glaze should be thin. Remove from the heat and allow to cool before using.

1 cup butter, melted
8 ounces semisweet chocolate or 8 ounces dark chocolate
100 g sugar
50 g flour
5 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 200-210°C (400°C). Grease or butter ramekins. Make sure you use a lot of butter/oil if you want to invert it onto a plate, otherwise it will stick.
  • Melt the butter and chocolate together and mix. Pour into a big bowl.
  • Sieve in the flour and sugar and whisk.
  • Add the eggs and continue to whisk. If you like a more cake-y texture, keep on whisking until it turns lighter.
  • Pour into ramekins. It took up around 8 ramekins for me, but it really depends on the size.
  • Bake for around 10 minutes. It's best to keep an eye on it just to make sure it doesn't overcook. If it does, it's just a really moist cake, good but not quite as satisfying.
  • Serve with ice cream and strawberries. Or banana. A good idea can be to chop fruit beside it and use the filling as a sort of fondue.

This my first time successfully baking something from scratch! I am 29 weeks pregnant and I was really craving lava cake. My husband said it was "too chocolatey for [his] taste" but I sure like them! My 4 year old thought they were too rich as well; We'll see what my 1 year old thinks when she tries some after dinner tonight!

6 oz bittersweet chocolate
2 oz semi-sweet mini chocloate chips
10 Tbsp butter
1/2 c all purpose flour
1 1/2 c confectioners' sugar
3 large eggs
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 425 degrees F
  • 2. Grease 6 (6-ounce) custard cups. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate mixture. Stir in the eggs and vanilla.Divide the batter evenly among the custard cups. Place in the oven and bake for about 10 minutes. The edges should be firm but the center will be runny. Run a knife around the edges to loosen and invert onto dessert plates.

There are a few molten lava cake recipes out there, but in my (and my husband's) opinion, this one is the best. It is terribly easy and I often make these on a weeknight as a special treat for my family. I originally got the recipe from watching Paula Deen but made a bit of a change to suit our family's tastebuds.
