This basic pastry cream recipe is the base for filling many pastries, pies, cakes, and tarts. Pastry cream can be flavored in a variety of ways, is an incredibly versatile dessert component, and is also the base for making sweet souffles!

100 grams (½ cup) granulated sugar
110 grams (6 large) egg yolks
30 grams (¼ cup) cornstarch
1 gram (¼ teaspoon) kosher salt
568 grams (2 ½ cups, 600 ml) whole milk
1 ½ teaspoons vanilla extract or vanilla paste (optional)
28 grams (2 tablespoons) unsalted butter, cut into small pieces

Steps:

  • Measure out all of the ingredients. Cut the butter into small pieces.
  • In a large mixing bowl, beat the egg yolks (110 grams, 6 large) with the sugar (100 grams, ½ cup), cornstarch (30 grams, ¼ cup), and salt (1 gram, ¼ teaspoon) with a whisk until foamy and about double in size. This will ensure a smooth pastry cream.
  • In a saucepan, heat the milk (568 grams, 2 ½ cups) until it starts to boil.
  • Temper the egg yolks by slowly pouring about half of the milk into the egg/cornstarch mixture while whisking continuously. It can be helpful to nestle the mixing bowl in a damp kitchen towel to stabilize the bowl while you whisk and pour.
  • Pour the milk/egg mixture back into the pot with the remainder of the milk and cook over low heat, whisking continuously, until the mixture thickens and starts rapidly bubbling. Do not rush this process.
  • Pour the hot pastry cream through a fine mesh sieve.
  • If you are adding any chocolate or other flavorings, they can be whisked in at this point. Add the butter (28 grams, 2 tablespoons) and vanilla (1 ½ teaspoons) and whisk in.
  • Place a piece of plastic wrap right on top of the pastry cream and refrigerate until ready to use.
  • Pastry cream can be stored in an airtight container in the refrigerator for up to 3 days.

Contrary to its name, pastry cream -- a classic custard filling for cakes, tarts, pastries, and other baked goods -- contains no cream, only milk. Be sure to bring the mixture to a full boil to activate the cornstarch and ensure proper thickening. This recipe is from " Martha Stewart's Cupcakes."

1/4 cup cornstarch

2 cups milk
1 1/4 teaspoons pure vanilla extract

Steps:

  • Whisk egg yolks until smooth in a large bowl. Combine sugar, cornstarch, and salt in a medium saucepan, and heat over medium. Stirring constantly, gradually add milk in a slow, steady stream, and cook until mixture thickens and begins to bubble, about 5 minutes.
  • Whisking constantly, slowly pour one third of the milk mixture into egg yolks (this step is called tempering, which keeps the yolks from curdling). Pour mixture into remaining milk mixture in saucepan. Cook over medium heat, whisking constantly, until mixture comes to a full boil and is thick enough to hold its shape when lifted with a spoon, 2 to 4 minutes. Remove from heat; stir in vanilla.
  • Strain mixture through a fine sieve into a heatproof bowl. Cover with parchment paper or plastic wrap, pressing it directly on surface to prevent a skin from forming. Refrigerate until chilled and firm, at least 2 hours (or up to 2 days).

Steps:

  • In a heavy saucepan, stir together the milk and 1/4 cup of sugar. Bring to a boil over medium heat.
  • In a medium bowl, whisk together the egg yolks and egg. Stir together the remaining sugar and cornstarch; then stir them into the egg until smooth. When the milk comes to a boil, drizzle it into the bowl in a thin stream while mixing so that you do not cook the eggs. Return the mixture to the saucepan, and slowly bring to a boil, stirring constantly so the eggs don' t curdle or scorch on the bottom.
  • When the mixture comes to a boil and thickens, remove from the heat. Stir in the butter and vanilla, mixing until the butter is completely blended in. Pour into a heat-proof container and place a piece of plastic wrap directly on the surface to prevent a skin from forming. Refrigerate until chilled before using.

  • Create an ice bath by placing ice and water into a large bowl with a slightly smaller bowl sitting on top of the ice. Place the ice bath aside while making the pastry cream.
  • Put the egg yolks and vanilla into the bowl of a stand mixer (or you can use a large bowl if using a hand mixer) and mix on medium-low speed for approximately 30 seconds. Reduce the speed to low and slowly sprinkle in the granulated sugar. Then, increase the speed to medium and beat for approximately 2½ minutes (or until the color changes to a pale yellow and the mixture has thickened). Scrape down the sides and bottom of the bowl with a spatula.
  • Pour the pastry cream through a fine mesh strainer and into a medium saucepan. This will catch any bits of unmixed pastry cream. Stir gently and constantly while cooking over medium heat. Make sure the whisk touches the sides, corners, and bottom of the pan while stirring to avoid scorching the pastry cream.
  • Pour the pastry cream into an airtight container, press a piece of plastic wrap against the top of the pastry cream (this will prevent a skin from forming), and then refrigerate for at least 1 hour to allow the pastry cream to set. You can keep the cream in the fridge up to 4 days. To use, remove the pastry cream from the fridge and stir until the texture is smooth. The pastry cream should be thick. This recipe makes approximately 3 cups (680g) of pastry cream.
